A good corn soup is creamy and naturally sweet; an even better corn soup is spicy, refreshing and addictive. In this recipe, it's the combination of shallots, garlic, ginger, chiles and coconut milk, rather than heavy cream or butter, that makes the soup at once cooling and rich. It's a dinner in a bowl (and a vegan one at that), but it would surely welcome a side of steamed rice or salad of leafy greens. To serve, add garnishes that are any combination of spicy (extra fresh chile or store-bought chile oil), crunchy (toasted coconut, chopped peanuts or cashews, fried shallots) or fresh (torn cilantro, chopped scallions), and it'll be even more dynamic.

5 ears yellow or bicolor corn (or 5 cups frozen corn kernels)
2 tablespoons olive oil
2 shallots, thinly sliced into rings
3 garlic cloves, minced
1 (1-inch) piece ginger, peeled and minced
1 serrano chile (or other chile), minced
2 small red potatoes (6 to 8 ounces total), cut into 1/2-inch cubes
2 1/2 cups vegetable broth (or 2 1/2 cups of hot water whisked with 1 1/2 teaspoons jarred bouillon)
1 (15-ounce) can full-fat coconut milk
1 tablespoon lime juice (from 1/2 lime)
Kosher salt, to season
Torn cilantro leaves, toasted coconut flakes, chopped roasted peanuts, crispy fried shallots, lime wedges and more sliced Serrano chiles, to serve (optional)

Steps:

  • Cut the corn kernels off the cobs and transfer to a bowl. Using the back of a butter knife, scrape the cobs so that all of the milky juices collect in the bowl and the cobs look completely dry, like wrung-out sponges. Set aside. (If using frozen kernels, skip this step.)
  • In a large stockpot over medium heat, heat olive oil. Add shallots, garlic, ginger and chile, and sauté, stirring occasionally, until soft and fragrant, 3 to 5 minutes. Add corn kernels and juices to the pot, and sauté until the corn is softer and brighter, about 3 minutes more.
  • Add potato pieces, and stir to coat, 1 to 2 minutes.
  • Now, pour in the vegetable broth and coconut milk. Bring to a boil, reduce to a simmer, cover, and cook for 8 to 10 minutes, until the potatoes are tender all the way through.
  • Use an immersion blender to roughly purée the soup, so that it's creamy with some kernels of corn, chunks of potato, and chile flecks remaining. (Alternatively, ladle about half of the soup into a blender, blend until smooth, and return to the pot.) Season with lime juice and salt, and mix to combine. Ladle soup into bowls and garnish with toppings of your choice.

3 large garlic cloves, unpeeled
vegetable oil for coating garlic
1/4 teaspoon coriander seeds
1/4 teaspoon cumin seeds
3 medium sweet onions such as Vidalia, Walla Walla, or Maui
2 tablespoons plus 1 teaspoon peanut or vegetable oil
1/2 fresh jalapeño chili
2 fresh poblano chilies,roasted and peeled
3 ears corn
6 cups chicken broth
1 cup heavy cream
12 long fresh coriander sprigs
2 to 3 tablespoons fresh lime juice, or to taste
1 red bell pepper,roasted and peeled
Garnish: 8 short fresh coriander sprigs

Steps:

  • Preheat oven to 350°F.
  • Coat garlic lightly with vegetable oil and wrap in foil. Bake garlic 30 minutes, or until soft.
  • In a dry small heavy skillet toast coriander and cumin seeds over moderately high heat, stirring, until fragrant and several shades darker. In an electric coffee/spice grinder grind seeds to powder.
  • Chop onions and in a 6-quart heavy kettle cook in 2 tablespoons oil over moderate heat, stirring, until softened. Reserve about one third onions in a small bowl. Wearing rubber gloves, slice jalapeño and chop roasted poblanos (abut 1 cup). Remove kernels from ears of corn (about 2 cups), reserving cobs. To onions in kettle add jalapeño and 1 cup corn kernels and cook over moderate heat, stirring, 2 minutes. Add ground spices, 1/2 cup poblanos, and salt and pepper to taste and cook, stirring, 2 minutes. Cut reserved corn cobs into thirds and add with broth to corn mixture. Simmer soup, uncovered, 30 minutes.
  • In a small heavy skillet sauté remaining kernels in remaining teaspoon oil over moderately high heat, stirring, just until tender.
  • Discard corn cobs from soup. Squeeze garlic pulp from skins and stir with cream into soup. Pour soup through a sieve into a bowl and in a blender purée solids with just enough liquid to make smooth.
  • Tie long coriander sprigs in a bunch with kitchen string. Transfer purée and remaining liquid to kettle with tied coriander and lime juice and cook over moderate heat, stirring occasionally, just until heated through. Chop roasted bell pepper. To soup add bell pepper, remaining poblanos, reserved onions, and sautéed corn and cook over moderate heat, stirring, until heated through. Discard tied coriander.
  • Serve soup garnished with coriander.

You can increase the amounts of chipotle peppers, but beware, they are HOT! My family loves this soup, if you love spicy foods then I urge you to give this a try. Serve this with crusty rolls and butter. Canned chipotle chilies or sometimes called adobo, can be found in any Latin-American markets, or specialty food stores and major grocery food stores in the Mexican section. You might want to double ingredients, this soup is so good!

1 stalk celery, chopped
1 grated orange, juice and zest of

2 lbs ripe plum tomatoes, chopped
8 ounces chorizo sausage, sliced
1 (13 ounce) can creamed corn
4 ounces corn chips

Steps:

  • Heat oil in sauce pan.
  • Add onion and cook, stirring until soft.
  • Stir in garlic and celery and cook, stirring, until celery is soft.

4 ears corn, kernels scraped from the cob or 3 cups corn kernels (fresh, frozen, or canned)
1 tablespoon olive oil
1 yellow onion, diced
1 tablespoon garlic, finely chopped
1 tablespoon dried dried chipotle powder (see note)
1 teaspoon salt
1/2 teaspoon ground black pepper
6 cups chicken stock
1 red bell pepper, roasted,peeled,seeded and diced
1 1/2 cups heavy cream

Steps:

  • Prepare the corn by cutting the kernels from the cob.
  • You should have approximately 3 cups of corn kernels from 4 cobs of corn.
  • Save the corn cobs and set aside.
  • The cobs will add additional corn flavor to the soup.
  • In a medium-sized saucepan over medium-high heat, add the olive oil, then the onions.
  • Saute for 3 to 4 minutes until they are translucent, stirring occasionally.
  • Add the garlic and chipotle chili powder and saute for 1 more minute.
  • Add the corn kernels and saute for another 3 minutes, stirring constantly.
  • Add the salt, black pepper, and chicken stock and bring to a boil.
  • (If you have cut your corn fresh from the cob, place the reserved cobs into the saucepan at this time).
  • Once the mixture has boiled, reduce the heat and simmer for 30 minutes.
  • Stir occasionally to prevent the corn kernels from burning or sticking to the bottom of the pan.
  • While the corn soup is simmering, roast the red bell pepper.
  • Char the skin of the pepper until it is black over an open flame or on a grill.
  • When the skin is blistered and blackened, remove the pepper from the flame and place in a paper or plastic bag and seal.
  • Let steam for 15 minutes.
  • When the pepper is cool enough to handle, peel, seed, and dice it.
  • Place the diced bell pepper into a blender with 1/2 cup of the heavy cream and blend thoroughly for 1 minute.
  • Pour through a fine sieve and discard the contents of the sieve.
  • Pour the red bell pepper sauce into a plastic squirt bottle and set aside.
  • Remove the corn soup mixture from the heat, discard the corn cobs and set aside.
  • Place the corn soup mixture in a blender and puree for 3 minutes.
  • Pour the mixture through a sieve and discard the contents of the sieve.
  • Return the mixture to a saucepan, add the remaining 1 cup of heavy cream, and heat, over medium heat for 15 minutes, stirring occasionally to prevent burning.
  • Pour into bowls, garnish with some of the red pepper sauce and serve immediately.
  • *Note:Jalapenos that have been dried and then smoked are referred to as chipotles.
  • Dried chipotle chiles can be ground into a powder and used for seasonings.
  • This medium-size, thick fleshed chile is smoky and sweet and has a subtle, deep, rounded heat.

  • Heat oil in a large pot over medium heat. Add garlic; sauté until fragrant, about 1 minute. Add jalapeno and onions; sauté until soft, about 5 minutes. Add celery, cumin and turmeric; cook for about 1 or 2 minutes more.
  • Add broth, water and cobs; bring to a boil. Reduce heat to low and simmer for about 15 minutes; remove and discard cobs. Add corn (except for cup of reserved kernels), salt and pepper to soup; simmer for 15 minutes more.
  • Puree soup until smooth in pot using an immersion blender (or in a food processor or in batches in a blender-but be careful not to splatter hot liquid). Garnish with red pepper, cilantro, scallion and reserved cup of corn; serve hot or at room temperature. Yields about 1 cup per serving.

It has been raining here,"thank God" where I live, we have been in severe drought, for the second year. The cool days and nights evidently remind me of fall and cold winter nights. This is soooo good and very quick and easy. Picture eating this sitting next to a cozy fire. Hope everyone likes this as much as I do. Enjoy!!

1 pkg - (10 oz) frozen sweet corn, thawed and drained
1 - clove garlic, minced
1tbs - butter
3/4 lb - (12 oz) velveeta, cubed
1 can - (4 oz) chopped green chilies
3/4 cup - chicken broth
3/4 cup - milk
2 tbs - chopped cilantro

Steps:

  • Cook and stir corn and garlic in butter in large saucepan till tender. Stir in rest of ingredients. Stir till velveeta is melted and soup is heated. Top with crushed tortilla chips.

2 cups fat-free (skim) milk
4 poblano chiles (about 1 lb), seeded, chopped
1 cup refrigerated prechopped onion (from 8-oz container)
1 tablespoon water
3/4 teaspoon salt
1/2 cup shredded reduced-fat sharp Cheddar cheese (2 oz)

Steps:

  • In 3-quart saucepan, stir 1 cup of the corn and 1 1/2 cups of the milk. Heat to boiling over medium heat.
  • In medium microwavable bowl, mix chiles, onion and water. Cover; microwave on High 4 minutes.
  • Meanwhile, in blender, place remaining 2 cups corn and 1/2 cup milk. Cover; blend on high speed until smooth. Add pureed mixture to corn mixture in saucepan. Stir in chile mixture and salt. Cook 6 minutes over medium heat, stirring occasionally, until hot.
  • Ladle about 1 1/3 cups soup into each of 4 bowls. Top each serving with 2 tablespoons cheese.

1 (28 ounce) can sweet corn
1 tablespoon butter (or vegetable spread)
1 tomatoes
1/2 jalapeno (or any kind of hot chile that's handy)
1/2 onion
1/2 garlic clove
1 1/2 cups milk (or less if you like it thick)
1/4 cup cheddar cheese

Steps:

  • Finely chop all vegetables.
  • In a saucepan, heat the butter and cook the onions until soft. Add the garlic, tomato, half the tin of corn and half the amount of jalapeno. Cook for about 2 minutes, until tomato is almost dissolved. Remove saucepan from heat.
  • Put veggies in blender and puree until smooth (add a little milk if you have difficulty blending them). Return blended veggies to saucepan and add milk. Mix well and add remaining corn and jalapeno, do not let it boil.
  • Serve immediately and top bowls with cheddar cheese Serve with hot flour tortillas or corn bread.

1 cup minced white onion
2 cloves minced garlic
1 1/2 jalapeño diced (if you like a milder taste, seed the jalapeno)
1/2 Tbsp. ground cumin
4 1/2 cups fresh corn (cut off the cob)
1/8 cup chopped cilantro leaves
1 1/2 qt. vegetable stock or water
12 young fingerling potatoes for boiling diced
1 cup shredded rotisserie chicken/cooked chicken breast or turkey
3/4 cup heavy cream
Juice of half a lime
Salt and pepper to taste
Garnishes
1/4 lime, cut into 8 wedges
Cilantro leaves
Fresh corn kernels
Diced red radishes
Finely diced jalapeño chiles

Steps:

  • 1.In a large heavy-bottomed soup pot, melt the butter over medium heat and sweat the onion, garlic, jalapeño, and cumin until tender and translucent. 2 Add the corn and cilantro and continue cooking until tender. 3 Add the vegetable stock or water as well as the potato and chicken. Simmer for approximately 20 minutes. 4. Remove from heat and add the cream and then the lime juice to the soup and season with salt and pepper to taste. 5. Garnish each cup or bowl of soup with a squeeze of lime juice, a cilantro leaf, a teaspoon of corn kernels, and a pinch each of diced red radish and jalapeño.

1/2 lb ground chicken breast
1/2 c chopped onion
1/4 c chopped red pepper
1/4 c chopped jalapeno pepper
2 stalk(s) celery, chopped
2 clove minced garlic
1 pkg taco seasoning mix (taco bell)
1/2 tsp dried red pepper flakes
1 tsp dried cilantro
1 tsp cumin
1 can(s) cream of chicken soup
4 c chicken broth or bouillon, lower sodium
1 14.5 oz can(s) creamed corn
8 oz frozen white and yellow corn
1 c milk
4 Tbsp instant potato flakes, to thicken

Steps:

  • 1. Brown ground chicken breast in pan with onions, peppers, celery and garlic.
  • 2. Add taco mix and seasonings and mix well. Stir in cream of chicken soup and chicken broth. Simmer for 10 - 15 minutes.
  • 3. Add creamed corn and frozen corn. Return to simmer and simmer another 15 minutes.
  • 4. Stir in the milk and reheat to simmer. Stir in potato flakes and let sit for 5 minutes before serving.
  • 5. Top with crushed tortilla chips.
