Chipotle Pepper Spanish Rice image

This is a spicier variation of Recipe #15073 I posted a couple of years ago. I did not have any onions or frozen peas and got creative with what I had available in my pantry. Great with just about any Mexican meal or eggs. Enjoy!

Number Of Ingredients 7

2 cups rice (white, brown, whatever)
4 tablespoons oil
3 garlic cloves, minced
3 bouillon cubes
3 cups water
1 chipotle chile, diced
3 tablespoons adobo sauce

Steps:

  • Heat oil in pan.
  • Add garlic and rice.
  • Brown garlic and rice for a couple of minutes on high.
  • Add bouillon cubes and water.
  • Let boil for a minute or two.
  • Add chipotle chili and adobo sauce.
  • Stir everything.
  • Cover pan with foil or pan lid.
  • Turn burner to low.
  • Let simmer for at least 20 minutes.
  • You should not need to add anymore water, but if the rice has soaked up the previous water you can add more if it makes you feel better.

This flavorful chipotle-flavored chili is quick and easy to make. A packet of Knorr rice makes it really filling and economical.

1 pound lean ground beef
1 small onion, (chopped)
2 cloves garlic, (minced)
1 to 1 1/2 teaspoons chipotle chili powder, (depending on how spicy you want it)
1 (28-ounce) can pureed tomatoes
1 (14.5-ounce) can beef broth
1 pouch Knorr® Fiesta Sides™- Mexican Rice
1 (11-ounce) can corn, (drained)

Steps:

  • Place ground beef, onion, and garlic in a lightly greased Dutch oven. Cook over medium heat until ground beef is browned, breaking it apart with a wooden spoon as it cooks.
  • Add chili powder, tomatoes, and beef broth and simmer for 10 minutes.
  • Add Knorr® Rice and corn and cook another 5 to 7 minutes.

Chipotle Seasoned Rice is a delicious nicely seasoned rice that's perfect as a side dish for any meal, including taco night. It's also great inside of tacos and burritos.

2 ¼ cup vegetable broth
1 teaspoon paprika
½ teaspoon chipotle powder
1 teaspoon garlic powder
1/4 teaspoon cumin
1/2 teaspoon salt
1 tablespoon olive oil (or light tasting oil of your choice)

Steps:

  • Combine all ingredients in a medium pot, and place over high heat. Cover, bring to a boil, and reduce heat to low, simmering for twenty minutes. Top with chives or cilantro if desired.

1 cup uncooked regular long-grain rice
1 cup frozen corn
1 can (15 oz) spicy chili beans in sauce, undrained
1 can (14 oz) vegetable broth
1 can (14.5 oz) diced tomatoes with green chiles, undrained
1 chipotle chile in adobo sauce (from 7-oz can), chopped
1 cup chili cheese-flavored corn chips
1 cup shredded Monterey Jack cheese (4 oz)

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole or 8-inch square (2-quart) glass baking dish with cooking spray. In baking dish, mix rice, corn, beans, broth, tomatoes and chile.
  • Cover with lid or foil; bake 1 hour. Uncover; stir well. Sprinkle with chips and cheese. Bake uncovered 10 to 15 minutes longer or until bubbly and rice is tender.
