CAVEMAN'S SPICY SWAI FISH FILLETS



Caveman's Spicy Swai Fish Fillets image

DIRECTIONS 1. Preheat oven to 375 degrees F. Spray a shallow pan or baking sheet with cooking spray. Place fish fillets into the prepared pan. 2. Heat margarine in a saucepan over medium heat. Mix lemon juice, cayenne pepper, garlic, ginger powder, salt, and black pepper into the melted margarine; simmer sauce for 2 minutes. Generously spoon sauce over fish fillets. Apply seasoned butter mix over filletts and ake in the preheated oven until fish flakes easily with a fork, about 12 to 15 minutes. This fish goes great with rice or flavored cousous. I suggest using Side Mates Pearl Couscous. A delicious combination. 3. ENJOY!!!

1 teaspoon salt (to taste)

It goes well with all fish recipes and is a great substitute for expensive fish. This recipe was so good my family wanted it again the very next day! Its sweet and tangy and just down right delicious.

¼ cup honey
3 tablespoons mayonnaise
2 tablespoons olive oil
2 tablespoons whole-grain Dijon mustard
1 tablespoon lemon juice
4 (4 ounce) fillets swai fish

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix honey, mayonnaise, olive oil, mustard, and lemon juice together in a bowl.
  • Place each fish fillet on separate pieces of aluminum foil. Drizzle honey sauce over each fish fillet. Gently wrap the aluminum foil around each coated fish fillet, crimping the foil together over the top to seal into a packet.
  • Bake fillets in the preheated oven until fish flakes easily with a fork, about 13 minutes. Place one fish fillet on each serving plate and top with leftover sauce from foil packet.

My husband loves fish. Since I am allergic, I don't partake. Swai was on sale at the grocery so we picked some up. Since he has never tried it before, I decided to cook it in a familiar way for him. He devoured it. I served this with honeyed carrots and fried yellow squash.

2 teaspoons red pepper flakes
1 teaspoon seafood seasoning (such as Old Bay®)
1 teaspoon garlic powder
salt and ground black pepper to taste
1 cup cornmeal
4 (4 ounce) fillets swai fish
2 tablespoons canola oil
¼ cup water

Steps:

  • Combine red pepper flakes, seafood seasoning, garlic powder, salt, and pepper in a bowl. Spread corn meal into a shallow bowl. Season swai fish with red pepper flake mixture and press each fillet into cornmeal to coat. Wrap coated fillets in plastic wrap and refrigerate for 30 minutes.
  • Heat oil in a skillet over medium heat. Unwrap fish and place in the hot oil; cook until browned, about 5 minutes per side. Add water, bring to a simmer, cover, and cook, flipping occasionally, until fish flakes easily with a fork, about 10 minutes.
