SPICY ROAST BEEF AND CAPICOLA SUB SANDWICH

Steps:
- Preheat the oven to 400 degrees F.
- Heat 1 1/2 teaspoons of the olive oil in a large skillet over medium-high heat. Add the beef and capicola, and cook, stirring, until just beginning to crisp on the edges, about 3 minutes; transfer to a plate with a slotted spoon. Add the remaining 1 1/2 teaspoons olive oil, onions and bell peppers and cook, stirring, until crisp-tender, about 5 minutes.
- Scoot the vegetables to the side of the pan. Add the tomato paste to the open space and toast, stirring for a minute, and then combine with the vegetables. Add the cherry pepper brine and 1/2 cup water, bring to a simmer and return the meat to the pan. Simmer just until the sauce coats the meat and vegetables, about 1 minute.
- Divide the meat and vegetables among the rolls. Top with the cherry peppers and provolone. Bake on a baking sheet until the cheese is melted and bubbly, about 2 minutes.
SPICY ITALIAN BEEF OPEN FACE SANDWICH

- 1. Trim fat from beef and discard. Cut beef to fit in 4.5 quart slow cooker, if necessary. 2. Use about 10 pepperoncini, pull off stems, discard. ADD pepperoncini, broth, beer, onion and herb blend to slow cooker, do not stir. Cover cook on LOW 8 to 10 hours. 3. Remove beef from cooker, shed with 2 forks. Return shredded beef to cooking liquid mix well. 4. Slice bread to desired thickness. Butter one side and toast butter side down in heavy pan on medium heat until crisp. 5. Preheat broiler. Place toast soft side up on oven proof plate. Top with beef, sauce, pepperoncini and cheese slices. Broil until cheese melts. Serve immediately.

- Spread mayo mixture on both sides of bread.

- If using large loaf, cut into portions, and serve.

- Preheat oven to 400°F. In a skillet over medium heat combine ① beef stock, ② chili pepper spread and ③ pepper. Stir to combine. ④ Add roast beef. Stir until beef is coated. Bring to a simmer, continue to cook for 10 minutes, stirring occasionally. Taste beef. ⑤ Add salt, if needed, a ¼ teaspoon at a time until desired flavor is reached. Meanwhile: split loaf of bread lengthwise (to make a top and bottom of the sandwich) and butter both sides. Place butter side up on a baking sheet and bake until golden brown, about 10 minutes. Pile roast beef on toasted bread, do not drain, the bread will absorb the juices and become even more delicious. Add slices of cheese and place in oven just until melted. Top with peppers. Cut bread into slices. Serve and enjoy!
