This hearty recipe is from The Border Cookbook by Cheryl and Bill Jamison. This is one of those "flexible" recipes. It serves a lot as a meal, and more as an appetizer. You can adjust the heat by reducing or eliminating the chipotles, or by substituting a milder chile. You can serve it warm, or cold. It's a great party recipe because you can partially prepare a few days before the event. You can prepare the meat in the crockpot, oven, BBQ, or pressure cooker, if you prefer. I've listed the stove top version.

3 1/2-4 lbs fully trimmed beef brisket, section (flat cut)
1 large onion, chopped
8 cups beef stock
2 bay leaves
3 cloves garlic, minced
2 canned chipotle chiles
2 teaspoons salt
1 teaspoon black peppercorns
2 tablespoons reserved beef broth, from boiled brisket
1/3 cup chipotle chile in adobo
6 tablespoons extra virgin olive oil
4 tablespoons fresh lime juice
2 tablespoons white vinegar
1 tablespoon ketchup
1 tablespoon minced onion
1 clove garlic, minced
salt
fresh coarse ground black pepper
4 small roma tomatoes, diced
2 ripe avocados, diced
1 medium red onion, diced
6 ounces monterey jack cheese, in small cubes
1/2 cup chopped fresh cilantro
radish, cut in roses for garnish (optional)

Steps:

  • Prepare brisket: In a Dutch oven or a small stockpot, combine meat with onion, stock, bay leaves, garlic, chipotles, salt and peppercorns.
  • Bring mixture to a boil over high heat, skimming off any foam.
  • Reduce heat to low, cover and simmer 3 1/2 to 4 hours or until the meat is falling-apart tender.
  • Let cool 30 minutes in cooking liquid.
  • Reserve 2 tablespoons cooking liquid for salad dressing and save remainder, refrigerated, for a Southweswtern soup or stew.
  • Pull meat apart into shreds.
  • (The dish can be made ahead to this point and refrigerated 1 or 2 days. Before proceeding, warm foil-wrapped meat in oven.) To make dressing: In a blender or food processor, combine reserved brisket liquid, chipotles, olive oil, lime juice, vinegar, ketchup, onion, garlic, salt and pepper and purée.
  • To complete salad: In a bowl, mix brisket with about 3/4 of the dressing.
  • Transfer brisket to a serving platter or bowl and toss it lightly with tomatoes, avocados, onion, cheese and cilantro.
  • Drizzle additional dressing over top, enough to make the mixture moist.
  • Garnish with radish roses if desired.
  • Serve warm with fresh hot tortillas, or chilled with tortilla chips for dipping.

  • For dressing, whisk together first 7 ingredients., Mix first 5 beef ingredients; toss with beef strips. In a large cast-iron or other heavy skillet, heat olive oil over medium-high heat; stir-fry beef mixture until browned, 2-3 minutes. Remove from pan., Combine salad ingredients; divide among 4 plates. Top with beef. Drizzle with dressing.

  • In a large sauté pan or skillet over high heat, heat the sesame oil and sauté the steak for 5 minutes per side for medium rare.
  • Sprinkle with salt and pepper.
  • Using slotted spoon, transfer the steak to a plate and let rest for 10 minutes.
  • ---To make the vinaigrette---.
  • In the same pan over high heat, heat the olive oil and sauté the lemongrass, shallot, ginger, garlic, and lime leaves for about 10 seconds, or until lightly browned.
  • Stir in the remaining ingredients.
  • Set aside.
  • ---To make the stir-fry---.
  • In a large sauté pan or skillet over high heat, heat the olive oil and sauté all of the ingredients except the noodles for 1 minute, tossing frequently.
  • Add the noodles and cook 1 minute.

A fabulous summer meal, marinade the meat and make the dressing the night before then throw dinner together FAST. Excellent for casual dinner parties and dieters. I've had this mouth-watering salad at a couple of different Thai restaurants, I was unable to find a recipe so I combined several to make my own. This salad is very spicy yet the bursts of freshness from the lime and mint make it a celebration for the taste buds. It's extremely addictive and very healthy, no oil!

1 lb beef sirloin steaks or 1 lb beef tenderloin (good quality)
2 teaspoons white pepper
2 tablespoons fish sauce
4 tablespoons fresh lime juice
2 tablespoons palm sugar
8 cloves garlic, minced
2 tablespoons sugar
1/2 cup fresh lime juice
3 -4 tablespoons fish sauce (to taste)
4 -6 shallots, minced
4 -6 serrano peppers, chilis very finely minced or ground to paste
2 stalks lemongrass, remove outer stalk and slice very thin or grind
3 tablespoons toasted rice powder (ground fine)
1 lb fresh tender salad greens (I use the bagged spring mix) or 1 lb bibb lettuce
1 large red onion, thinly slivered
1 bunch scallions or 1 bunch green onion, cut to ½ inch
1 cucumber, peeled & seeded cut in half lengthwise and thinly sliced
grape tomatoes or wedges tomatoes
1 lemon, cut in half lengthwise and very thinly sliced (toss into salad for garnish/flavor)
1 cup fresh mint leaf, roughly chopped
sticky rice

Steps:

  • prepare a batch of thai sticky rice (aka thai sweet rice) to serve with this salad.
  • note: if you're in a hurry or on a budget, you can leave out the scallions, cuke, tomatoes,& lemon and this salad will retain it's signature flavor.
  • Marinade: Mix ingredients in a ziploc and let meat marinade from 2-24 hours in liquid.
  • Char grill or broil meat to med rare, about 3-4 minutes per side.
  • Let rest at least 10 minutes then slice VERY thin (1/4" or less) against the grain.
  • *Usevery good quality meat for this dish, you want it to be fork-tender and melt-in-your-mouth!
  • Dressing: Mix all dressing ingredients together 1+ hours before serving salad.
  • (Be sure to taste and make any necessary adjustments…dressing should be SPICY, Sour, Salty and a just a wee bit Sweet in that order) You may want to make extra dressing to spoon over the sticky rice.
  • Salad: Pour half of dressing over the red onions, lemon and cuke in a LARGE salad bowl and let them absorb the flavor, 15+ minutes.
  • Add lettuce, tomatoes, scallions and MINT along with the rest of the dressing.
  • Toss the salad until all ingredients are very well coated and mixed.
  • Dish Salad onto plates and top with slices of cooked beef, make sure plenty of dressing is included in each serving.
  • Add a serving of sticky rice to each plate.
  • Serving Suggestion: Very pretty to serve this salad on a bed of Purple Cabbage Leaves.
  • Perfect Sticky Rice: Soak 1-2 pounds of Thai Sweet Rice in lukewarm water in a large bowl for 3 hours- drain& reserve water to use in steaming.
  • Line bottom of bamboo steamer (the stackable sort used for veggies and such) with parchment paper (or cheesecloth sprayed with Pam).
  • Fill steamer with soaked rice and cover.
  • Pour rice soaking water into wok or dutch oven, add some fresh water until approx 3" depth.
  • Place steamer over water in pan, bring water to boil then reduce to strong simmer-- don't let water cook away.
  • Steam rice for approx 25 minutes, let sit an additional 5 minutes with lid on.
  • To Make Toasted Rice Powder: Toast raw sweet rice in a saute pan on top of stove just as you would sesame seeds-- until very light golden brown.
  • Use a coffee grinder, blender or food processor to grind to a fine consistency- I like mine fine as white sugar but any testure from cous cous, cornmeal, flour, etc is just fine.
  • Adds an interesting, nutty and essential flavor to the dressing.

2 large Japanese cucumbers, peeled, halved and sliced into thin crescents
1 tablespoon thinly sliced lemon grass
1 1/2 tablespoons roasted rice powder, optional
5 cloves very fresh garlic, thinly sliced
1/2 cup thinly sliced shallots
1/2 cup chopped fresh mint leaves
1/4 cup fresh lime juice
3 to 4 tablespoons fish sauce
1/2 cup chopped cilantro
2 to 3 Thai chiles, or serranos, thinly sliced with seeds
2 teaspoons sugar
1 head romaine, inner leaves only
3 green onions, sliced diagonally

Steps:

  • Prepare grill and cook beef strips 4 to 6 minutes for medium rare, or to desired doneness, turning once. (Or simply use leftover grilled steak, cut into thin strips.) Place in a large bowl and toss with cucumber slices.
  • In another bowl, combine dressing ingredients and mix well. Add to beef and cucumbers and toss to coat. Arrange romaine leaves on a serving platter and spoon beef salad on top. Sprinkle green onions over the salad and serve room temperature or cold.

Steps:

  • Heat olive oil over medium heat in a frying pan.
  • Add onions, chillies and mushrooms to frying pan and cook about 5 minutes.
  • Remove from heat and add beef, stirring to cover beef with mushroom mixture.
  • Stir together scallions, garlic, lime juice, fish and oyster sauce, brown sugar, chili saucecilantro and sesame seeds.

To Finish The Salad:
1 head lettuce, Boston or Bibb, separated into leaves, rinsed and spun dry
1 cucumber, peeled and thinly sliced
1 sweet onion, small, such as Maui or Vidalla, very thinly sliced
12 cherry tomatoes, cut in half
12 mint leaves, fresh
1/4 cup cilantro leaves, fresh
1/4 cup peanut, dry-roasted, coarsely chopped

Steps:

  • 1. Lightly score the flank steak in a crosshatch pattern, making the cuts 1/4 inch deep. Place the meat in a glass baking dish. Combine the soy sauce, fish sauce, sugar, garlic, and ginger in a mixing bowl and whisk until the sugar dissolves. Pour this mixture over the steak and let marinate, covered, in the refrigerator for at least 2 hours or as long as 8, turning several times.2. Preheat the grill to high.3. Prepare the dressing. Grind the garlic, chiles, and sugar to a paste in a mortar with a pestle. Work in the fish sauce and lemon juice. Alternatively, the dressing ingredients can be puréed in a blender.4. Prepare the salad. Line a platter with the lettuce leaves and arrange the cucumber slices, onion, cherry tomatoes, and mint leaves (if using) on top.5. When ready to cook, drain the steak. Oil the grill grate, then place the steak on the hot grate and grill until cooked to taste (4 to 6 minutes per side for medium-rare), using tongs to turn. Transfer the steak to a cutting board and let cool slightly or completely. The salad can be served warm or at room temperature. Thinly slice the steak across the grain on the diagonal. Spoon the dressing over the salad and arrange the beef slices on top. Sprinkle with the cilantro and roasted peanuts and serve.Serves 4

Steps:

  • Combine beef, oil, garlic and ginger in medium bowl; toss to coat evenly. Season with salt and pepper, to taste. 1 red onion, finely chopped
3 cloves garlic, finely chopped
1 cup Myer's dark rum
3 cups chicken stock
2 tablespoons ancho puree
1/4 cup molasses

4 filet mignon steaks, 8 ounces each
Salt, to taste

Steps:

  • Melt butter in medium saucepan over medium heat and sweat onions and garlic. Add rum, bring to a boil and reduce to 1/4 cup. Add stock, bring to a boil and reduce heat. Whisk in ancho puree, molasses and pepper and simmer until reduced to 1 cup. Preheat grill. Season steaks on both sides with salt. Cook for 2-3 minutes on each side until medium-rare.

  • Create marinade by mixing together soy sauce, oyster sauce and vegetable oil in a bowl. Marinade beef. While beef is marinading, create spicy sauce. In a large bowl mix all ingredients from corriander root to palm sugar paste. Stir until combined. Grill the beef until medium rare. Slice into thin strips. In a large mixing bowl placed sliced beef, spicy sauce and all vegetables (tomato through lemongrass). Mix well. Garnish with a corriander leaf. Garnish with corriander leaves.

1 1/2 c 1/2 thick steak fillet
1 c green onions, chopped
1 c red onions
1/2 medium cucumber, diced
1 pt cherry (grape) tomato
1 c cilantro, chopped
1 large lemon grass, chopped
1 c fresh mint, chopped
1 c fresh lime juice
1/3 c fish sauce
1/4 tsp white sugar
1 Tbsp sweet chili sauce
1 medium head lelluce (rinsed, dried and torn into bite size pieces
OPTIONAL
1 pinch fresh lime zest
2-3 small red hot chili peppers, minced

Steps:

  • 1. In a large bowl, stir together the green onions, red onions, lemon grass, cilantro, mint leaves, lime juice, fish sauce, chili sauce and sugar until well combined and the sugar is dissolved. Adjust the flavor, if desired, by adding more sugar and/or fish sauce. Set aside.
  • 2. Cook the steak over high heat on a preheated grill for approximately 4-6 minutes on each side, until it is cooked medium. Do not overcook the meat! Remove from heat and slice into thin strips.
  • 3. Add the meat and its juices to the sauce and refrigerate, tightly covered, for at least 30min.
  • 4. Tear the lettuce into bite size pieces and place in a salad bowl. Arrange the cucumber on top of the lettuce, and then pour the meat and sauce over.
  • 5. Top with the cherry tomatoes and garnish with fresh cilantro leaves. (Optional) Sprinkle chopped red hot peppers and lime zest on top.

Steps:

  • Wash and dry mint leaves and watercress in a salad spinner.

1 tablespoon mirin
2 tablespoons chili sauce
8 ounces sirloin steak, seasoned to taste with salt and pepper
1/4 cup fresh basil leaves, preferably purple, coarsely chopped
1 stalk lemon grass (use the tender purple part) or 1 tablespoon lemon thyme leaves
1/8 cup onion, thinly sliced
1 cucumber, thinly sliced
1/2 head of iceberg lettuce, shredded
1/4 cup bean sprouts
Unsalted roasted peanuts to garnish (about 1/2 cup)

Steps:

  • Combine the soy sauce, vinegar, mirin and chili sauce. Set the mixture aside.
  • In a saute pan or wok, sear the steak on both sides until rare or medium rare. Remove from heat and slice thinly. Toss with the basil leaves, lemon grass and onion. Set aside.
  • In a separate bowl, toss together the cucumber, lettuce and bean sprouts. Put greens evenly divided on two plates. Top with sliced sirloin mixture. Pour the sauce on top, and then sprinkle with the roasted peanuts.

1 tablespoon vegetable oil
1 pound ground beef (preferable chuck)
1 tablespoon Worcestershire sauce
1/4 cup fresh lime juice
1/4 teaspoon cayenne
1 tablespoon sugar
1 tablespoon soy sauce
1 garlic clove, minced and mashed to a paste with 1/2 teaspoon salt
1/3 cup finely chopped scallion
1/2 cup chopped fresh coriander or fresh mint leaves
soft lettuce leaves for lining the plates
lime wedges for garnish

Steps:

  • In a large skillet heat the oil over moderately high heat until it is hot but not smoking, in it stir-fry the beef for 1 minute, or just until it is no longer pink, and drain the beef in a sieve. In a bowl whisk together the Worcestershire sauce, the lime juice, the cayenne, the sugar, the soy sauce, and the garlic paste, add the beef, and stir it to combine it well with the dressing. Stir in the scallion and the coriander, divide the mixture between 2 plates, lined with the lettuce leaves, and garnish the salads with lime wedges.
