Tasty baked tortilla chips you make at home that are much better than store bought chips. Serve with your choice of salsas and garnishes.

1 (12 ounce) package corn tortillas
1 tablespoon vegetable oil
3 tablespoons lime juice
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut each tortilla into 8 chip sized wedges and arrange the wedges in a single layer on a cookie sheet.
  • In a mister, combine the oil and lime juice. Mix well and spray each tortilla wedge until slightly moist.
  • Combine the cumin, chili powder and salt in a small bowl and sprinkle on the chips.
  • Bake for about 7 minutes. Rotate the pan and bake for another 8 minutes or until the chips are crisp, but not too brown. Serve with salsas, garnishes or guacamole.

I can not believe it took me so long to make these. There are a million recipes online, some have a little of this, or a little of that. This is my version and now I will be making these in bulk, so so so delicious and NO GUILT.

- soft corn tortillas
- non stick spray oil
- spices of your choice

Steps:

  • Cut your corn tortillas into quarters. This can be made with flour tortillas too, but the fat and sodium grams dramatically increase. I can find corn tortillas with 0 sodium and 1 gr. of fat. Spray oil will add a little more fat, but it's miniscule.
  • Lay your cut tortillas on a baking sheet, spray the top of them with spray oil, sprinkle your favorite seasonings. I used Mrs. Dash Southwest Chipotle. this created a little "zing" in the flavor, next time I will be trying the Zesty Lime from Mrs. Dash.
  • Bake 400° for 6-10 min. Cooking time in ovens vary, so check your chips after 6 min. and adjust time accordingly. The edges will start to lift up slightly when crispy.

6- to 8-inch flour tortillas
olive or vegetable oil ((savory chips) OR)
melted butter ((sweet chips))
spices and seasonings (, to taste)
Sea Salt
Italian Herbs and grated Parmigiano Reggiano ((thyme, oregano, rosemary, basil))
Za'atar Seasoning ((sumac, seasame seeds, cumin, thyme, oregano, marjoram))
Hungarian Paprika, Sea Salt, and Garlic Powder
Garlic Powder, grated Parmiggiano Reggiano, and Sea Salt
Cinnamon Sugar ((1/4 cup granulated sugar mixed with 1-1/2 to 3 teaspoons ground cinnamon, to taste))

Steps:

  • Preheat oven to 400 degrees F. Brush each side of a tortilla with about 1/2 teaspoon oil or melted butter. Sprinkle one or both sides of tortilla with seasoning of choice.* Using a sharp knife or pizza wheel, cut tortilla in half and then crosswise into 1-inch wide strips, or simply cut into 8-wedges, and place in a single layer on a parchment-lined baking sheet. Repeat with remaining tortillas.
  • Bake until light golden brown and crisp 5-12 minutes (see note below), rotating pans halfway through if baking more than one at a time. Cool to room temperature. Baked chips keep well, stored in an airtight tin, for up to a week. (I find that the flavor and texture are actually best after a day or two.)

I make these homemade tortilla chips to serve with roasted tomatillo salsa. They have a little heat from the chipotle. If you prefer plain, just sprinkle with salt after frying. -David Ross, Spokane Valley, Washington

3/4 teaspoon salt
1/2 teaspoon ground chipotle pepper
10 corn tortillas (6 inches)
Canola or corn oil for deep-fat frying

Steps:

  • In a small bowl, mix salt and chili powder. Cut each tortilla into 4 wedges. In an electric skillet, heat 1 in. of oil to 350°. Fry chips, several at a time, 2-3 minutes on each side or until golden brown. Drain on paper towels., Transfer chips to a large bowl; sprinkle with salt mixture and gently toss to coat.
