4 thinly sliced scallion whites
2 minced garlic cloves
1/2 cup soy sauce
1/2 cup rice vinegar
2 tablespoons light-brown sugar
1 tablespoon fresh lime juice
1/2 teaspoon anchovy paste (or 1 minced canned anchovy)
1/2 teaspoon red-pepper flakes

Steps:

  • In a medium bowl, mix together all ingredients.

4 small Japanese eggplants or 2 medium eggplants, about 6 inches long (about 10 oz)
4 teaspoons peanut butter, chunky or smooth
4 teaspoons soy sauce
4 teaspoons rice vinegar
2 teaspoons dry sherry or 2 teaspoons mirin
1 tablespoon sesame oil
2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon garlic and red chile paste (or more, to taste)
1/2 teaspoon ginger, minced
4 tablespoons cilantro, chopped

Steps:

  • Quarter the eggplants and cut them crosswise into 3-inch sections.
  • Steam over high heat until tender, 10-15 minutes, using a bamboo steamer or steamer basket.
  • Meanwhile, combine all other ingredients for the sauce, except the cilantro, and mix well.
  • When eggplants are tender, gently mix into the sauce in a serving dish. Sprinkle with the cilantro. Serve at room temperature or chilled.

2 tablespoons rice vinegar
1 tablespoon fish sauce
2 teaspoons minced peeled fresh ginger
1 jalapeno, seeded and finely chopped
1 1/2 teaspoons sugar

Steps:

  • In a medium bowl, whisk together oil, vinegar, fish sauce, ginger, jalapeno and sugar, until sugar dissolves.

1/3 cup Creamy Peanut Butter
1/3 cup Peanut or vegetable oil
1/3 cup Seasoned rice wine vinegar
1/4 cup Light brown sugar, firmly packed
3 tablespoons Soy sauce
2 tablespoons Fresh ginger, peeled, finely grated
4 cloves Garlic, pressed
6 cups Green cabbage (1/2 head)
2 cups Red cabbage (1/4 head)
2 Red bell peppers, cut into strips
2 Large carrots, peeled and shredded
6 Green onions, thinly sliced
1/2 cup Fresh cilantro, chopped
1/2 cup Roasted peanuts, chopped

Steps:

  • To make dressing: In small bowl,whisk together peanut butter, oil, vinegar, brown sugar, soy sauce, ginger, and garlic.
  • To make salad: In large bowl combine green and red cabbage, bell peppers, carrots, green onions, and cilantro.
  • Add dressing to salad.
  • Toss to coat.
  • Season with salt, if necessary.
  • Note: Salad can be prepared several hours ahead. Cover and chill.
  • To serve: Transfer slaw to large shallow bowl. Sprinkle with peanuts.
