Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Spread the almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, about 10 minutes. Watch the nuts carefully as they bake: they burn quickly.
- Stir together the sugar, salt, and cayenne pepper in a mixing bowl; set aside.
- Stir together the water, honey, and olive oil in a large skillet over medium heat. Once the mixture begins to bubble, stir in the toasted almonds until evenly moistened. Pour the almonds into the sugar and spice mixture, and toss until evenly coated. Spread onto baking sheets in a single layer, and cool to room temperature.

- Preheat oven to 325°. In a small bowl, combine the first 7 ingredients. In another small bowl, whisk egg white until foamy. Add almonds; toss to coat. Sprinkle with spice mixture; toss to coat. - Preheat oven to 350 degrees.
- In a large bowl, toss the almonds with the olive oil.
- Spread almonds out on a sheet pan in a single layer. (Keep the mixing bowl handy - you will need it again.)
- While oven heats, mix the spices, salt, and sugar in a small bowl; set aside.
- Bake almonds for 10 minutes.
- Remove pan from oven and carefully pour the hot almonds back into the mixing bowl.
- Sprinkle spices over the nuts and toss well with a spoon.
- Pour the seasoned almonds back onto the sheet pan and return to the oven for 5 minutes.
- Remove from oven and let nuts cool completely on pan.
- Store cooled nuts in a covered container.
SPICY SUGARED ALMONDS

- In a small bowl, stir together the cinnamon, cayenne pepper and 1 tablespoon of the sugar; set aside.
- In a 4-quart saucepan, combine 1/2 cup plus 2 tablespoons water and the remaining 1 1/2 cups sugar. Stir over medium-high heat until the sugar dissolves and the mixture boils.
- Add the almonds and stir constantly over medium-high heat until the water evaporates and the sugar starts to dry and turn gray. (The sugar mixture will start to foam and then start to dry and look like sand. This takes 5 to 6 minutes.) Continue stirring constantly until the sugar starts to melt and caramelize, coating about half of the almonds in a reddish-brown sugar mixture and the rest in a glossy sugar mixture, 2 to 3 minutes.
- Sprinkle the cinnamon mixture over the almonds, stirring constantly, and immediately transfer to a baking sheet lined with parchment paper, spreading the almonds to separate. Cool completely, then break apart. Store the almonds in an airtight container for up to 2 weeks.
SWEET SPICY SMOKEY ROASTED ALMONDS

- Preheat the oven to 300 degrees F. Line a baking sheet with aluminum foil.
- In a large skillet, cook the bacon over medium heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. When cool enough to handle, chop the bacon into small pieces. Set aside.
- Meanwhile, pour off most of the bacon fat from the hot skillet and add the butter. Add the sugar, five-spice powder, cayenne and salt and stir until the sugar dissolves and everything is combined. Add the almonds and stir to coat.
- Spread the nuts on the prepared baking sheet and bake until golden brown, about 30 minutes. Stir in the bacon and serve warm or at room temperature.

- Melt the butter in a medium-size saucepan.
- Add worcestershire sauce, cumin, sugar, garlic powder and cayenne pepper.
- Cook over low heat for 2 - 3 minutes.

- Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15-inch jelly roll pan.
- Combine egg white and vanilla in large bowl; beat until frothy. Add almonds and toss to coat. Pour almonds into a mesh strainer to drain excess liquid, 5 to 10 minutes. Return strained almonds to the bowl.

SPICY COCOA ROASTED ALMONDS

- Preheat the oven to 275°F. Line a baking sheet with a silicon baking mat or with parchment paper. Set aside. Whisk together the egg white, vanilla bean paste, and a few drops of water in a mixing bowl. Beat mixture until it is light and frothy. Add the almonds and toss to evenly coat with the egg white mixture. In a separate bowl, combine the sugars, cocoa powder, cinnamon, cayenne, and salt. Whisk together to remove any lumps. Add the almonds, and toss to coat. Spread the coated almonds out on the prepared baking sheet. Roast for 30 - 40 minutes, stirring every 10-15 minutes. Everyone loves these almonds and they're very easy to make. I always use less cayenne and Tabasco than called for but if you like heat use the full amounts. Store in a freezer bag in the freezer. Great for hostess gifts!

The combination of spices makes this a delicious savory and sweet snack. In humid weather, it's best to store the nuts in the refrigerator so they won't stick together.

- Preheat oven to 300°. Line a large rimmed baking sheet with heavy duty foil. Spray with cooking spray to coat. Set aside., Using a large non-stick skillet, melt the butter on medium heat. Add brown sugar and water. Cook and stir until sugar dissolves. Add spicy chocolate cinnamon sugar and salt; stir until blended. Mix in almonds with a heat-proof silicone spatula. Bring the mixture to a boil, stirring often. Cook and stir for 5-8 minutes until slightly thickened., Spread the nuts onto the prepared baking sheet in a single layer. Bake until the nuts turn deep golden brown, about 30-35 minutes. Remove from oven and cool slightly. (If extra spice is desired sprinkle with black and cayenne pepper, to taste.)
