This zucchini bread recipe is super moist and super spicy, loaded with cinnamon, nutmeg, and cloves. I tried several recipes before I asked my mom for her recipe. I go to the farmers market every Saturday and get these huge zucchinis, and this is the perfect use for them. It reminds me of my childhood. The loaves can be frozen and are great as gifts. People love them.

2 cups white sugar
1 cup vegetable oil
3 eggs
1 teaspoon vanilla extract, or more to taste
2 cups shredded zucchini
3 cups all-purpose flour
1 tablespoon ground cinnamon

Stir flour, cinnamon, salt, baking soda, nutmeg, baking powder, and cloves together in a separate bowl; gradually stir into sugar mixture until batter is mixed. Fold walnuts and raisins into the batter; pour into the prepared loaf pans.

2 cups sugar

Steps:

  • Preheat oven to 350 degrees. Grease and flour two 8x4-inch loaf pans; set aside.
  • In a medium bowl, combine flour, nuts, baking soda, cinnamon, salt, nutmeg and baking powder; set aside.

Steps:

  • Heat a skillet over moderate heat. Go 1 turn of the pan with a slow stream of extra-virgin olive oil. Add crushed garlic and red pepper flakes to the pan. Saute garlic and red pepper flakes 1 or 2 minutes. Add zucchini and season with salt, cumin and chili powder. Saute, stirring occasionally, about 3 minutes. Add chick peas, tomatoes and scallions to the pan and stir to combine. Cook over medium low heat for 10 minutes. Stir in cilantro and serve.
  • To reduce the heat level, omit the red pepper flakes from the recipe and method.

  • 1. Preheat the oven to 350° F. Coat two loaf pans with butter or grease and lightly flour the pans.
  • 2. In a medium bowl, combine the flour, cinnamon, baking powder, baking soda, cardamom, ginger and salt.
  • 3. In a large bowl, beat the eggs with the light brown sugar and granulated sugar until smooth. Add the oil in a thin stream, beating at high speed until the batter had blended well.
  • 4. Beat in the vanilla and orange zest.
  • 5. Fold in the carrots and zucchini.
  • 6. Mix in the dry ingredients in batches, mixing well between additions.
  • 7. Pour/divide the batter into the prepared pans. Bake for 50 minutes to 1 hour, or until a toothpick inserted into the center of the loaves comes out clean.

Steps:

  • Heat the oil in a large pot over medium heat. Add the onion and garlic and cook for 5 minutes. Add the zucchini and cook for 5 minutes. Stir in the cumin, turmeric, cayenne, salt and pepper. Steps:

  • Make the chutney: Combine the cilantro, mint, coconut milk, lime juice, jalapeño, garlic, sugar and 1/2 teaspoon salt in a blender; puree until smooth. Transfer to a bowl, cover with plastic wrap and refrigerate until ready to serve or up to 1 day.
  • Prepare the kebabs: Melt the butter in a small skillet over medium heat. When it foams, stir in the garlic, cumin, coriander, paprika and 1/2 teaspoon salt; cook, stirring, 4 minutes. Remove the spiced butter from the heat and let cool. (The butter can be made up to 1 day in advance.)
  • Preheat a grill to medium. If using wooden skewers, soak them in water, about 15 minutes (you'll need 4 to 6 skewers). Thread the scallops and zucchini rounds onto the skewers. Brush the grill generously with vegetable oil. Stir the spiced butter, then brush on the kebabs and season with salt. Coconut Zucchini Noodles and Spiced Meatballs image

Zucchini "noodles" keep this fragrant curry soup gluten-free. The spiced lamb meatballs are just as good in a wrap or on a salad.

1 pound ground pasture-raised lamb
1 tablespoon freshly grated ginger
2 scallions, sliced paper-thin
1 teaspoon ground turmeric
1 tablespoon wheat-free tamari
1 tablespoon fish sauce (Red Boat is a Clean-approved brand)
1 tablespoon lime juice
For the noodles:
2 to 3 tablespoons coconut oil
1/2 cup sliced onions
2 garlic cloves
2 tablespoons minced lemongrass
1 red chile pepper, minced (optional)
1 (13.5-ounce) can unsweetened coconut milk
1/4 cup water
1 broccoli crown, cut into small florets (about 2 cups)
3/4 to 1 pound zucchini, ends removed and sliced lengthwise with a peeler or mandoline into long pappardelle-like "noodles"
Sea salt to taste
1/2 cup roughly chopped fresh cilantro
1 lime, cut into wedges

Steps:

  • First, prepare the meatballs. In a large bowl, combine all the ingredients for the meatballs and mix them thoroughly with your hands or a wooden spoon. Wet your hands, then form even-size balls. I usually go for about the size of a golf ball.
  • Heat a 4-quart Dutch oven over medium-high heat. Melt the coconut oil, and once it's nice and hot, add the meatballs. Cook them for 30 to 45 seconds on each side, until they are all nicely browned. When they are about halfway done browning, make some space in the center of the pan and add the onions, garlic, lemongrass, and optional red chile. Continue to cook the mixture for 1 to 2 minutes, then move the meatballs back into the center of the pan and add the coconut milk and water. Cover the pan and simmer for about 5 more minutes before adding the broccoli. Within a few minutes the broccoli should be tender and the coconut milk reduced and starting to thicken. Carefully fold in the zucchini noodles and allow them to cook in the liquid. Cook them just until the zucchini is tender. Salt to taste.
  • Serve with a garnish of cilantro and a squeeze of lime.

3 eggs
1/2 cup oil
1 cup sugar
1/2 cup sour cream
1 1/2 cups zucchini, grated
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons cinnamon (use fresh if possible)
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1 cup dried fruit (raisins, cranberries, cherries) (optional)
1/2 cup walnuts, chopped (optional)

Steps:

  • Preheat the oven to 350F.
  • Grease and paper muffin tins.
  • Mix the eggs, oil, sugar, sour cream, and zucchini together in a large bowl.
  • Do not overmix.
  • Add the two flours, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, fruit and walnuts, if using.
  • (it's best if you sift the dry ingredients together before adding) Do not overmix, but make sure that all the batter is mixed together.
  • Pour into muffins tins and bake approximately 20 minutes.

1 ½ cups white sugar
1 cup vegetable oil
3 large eggs
1 tablespoon vanilla extract
2 cups peeled and grated zucchini
2 ½ cups all-purpose flour
3 tablespoons unsweetened cocoa powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon ground nutmeg
½ teaspoon salt
¼ teaspoon baking powder
1 pinch ground allspice
1 (12 ounce) bag chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
  • Blend sugar and oil together in a mixing bowl. Beat in eggs and vanilla; add grated zucchini. Stir in flour, cocoa powder, cinnamon, baking soda, nutmeg, salt, baking powder, and allspice. Hand mix in chocolate chips and nuts. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out mostly clean, about 50 minutes.

1/2 c chopped red onion
3 garlic cloves, minced
1 celery rib, sliced
2 Tbsp canola oil
1/2 tsp tumeric
1/2 tsp cumin powder
3 c zucchini, cubed
2 1/2 c tomato sauce
1 c frozen peas
1/4 tsp cayenne pepper

Steps:

  • 1. Saute onions, garlic and celery in oil for 2 minutes.
  • 2. Add turmeric, cumin and zucchini.
  • 3. Cook over medium heat for 5 minutes.
  • 4. Add tomato sauce, peas and cayenne pepper and cook until zucchini is tender, about 15 minutes.
  • 5. HINT: Use chopped fresh or canned tomatoes instead of tomato sauce.

1 1/2 pounds (about 3 medium) zucchini, cut into 1/2-inch-thick rounds

Steps:

  • In a 12-inch skillet, heat oil over medium-high. Add cumin seeds; cook, stirring constantly, until fragrant and sizzling, about 30 seconds.
  • Add zucchini; reduce heat to medium. Cook, stirring occasionally, until lightly browned and tender, 6 to 7 minutes. Season with salt and pepper. Serve.
