I absolutely love apple butter. I wanted to try something different and orange was the first thing that came to mind. I always love the flavor of orange this time of year. It worked so well I thought I would share it with all my foodie friends.

Number Of Ingredients 6

2 lb apples, a mixture of your favorite
1/2 can(s) undiluted frozen orange juice concentrate
2 tsp fresh ground cinnamon
1/2 tsp allspice
1 pinch ground cardamom seed
1/2 c sugar for every cup of apple mixture

Steps:

  • 1. In a dutch oven add peeled, seeded, and quartered apples with 1/2 cup water and frozen oj concentrate.
  • 2. Cool and puree in a food processor until thick. Measure back into dutch oven. Add 1/2 cup sugar for every cup of apple mixture. Then add spices and cook on low for 2 hours.
  • 3. Pour into sterilized jars and secure lid. Leave about 1/4 inch from the top.
  • 4. Process in boiling water for 10 minutes.

If spice cake and carrot cake got together and had a baby...it would be this cake! I couldn't decide whether to make a spice cake or a carrot cake...they are both two of my favorites. So I decided to make a cake with the best of both worlds - and it was out of this world!

1/4 cup(s) butter, room temperature
1/2 cup(s) brown sugar
1 - egg
1/2 cup(s) raisins
1 cup(s) shredded carrot
1/2 cup(s) chopped pecans
1/4 cup(s) pineapple, finely diced
1 cup(s) flour
1/4 teaspoon(s) salt
1/2 teaspoon(s) baking soda
1/4 teaspoon(s) allspice
1/2 teaspoon(s) cinnamon
1/4 teaspoon(s) nutmeg

Steps:

  • Preheat oven to 350 degrees. Oil and flour an 8 inch cake pan.
  • In your mixing bowl cream butter and sugar until fluffy. Add egg and mix until well combined. Stir in orange spiced apple butter.
  • In a separate bowl combine flour, salt, baking soda, and spices. Stir until combined.
  • Add dry mixture to butter and sugar mixture. Mix until combined. Stir in raisins, carrot, pecans, and pineapple.
  • Pour into prepared baking sheet and bake until done about 25 minutes.

SWEET SPICED APPLE BUTTER



Sweet Spiced Apple Butter image

A delicious and easy Crock Pot apple butter recipe with a flavor profile reminiscent of the mulled drinks we go crazy for in the fall.

4 pounds apples (I use a variety of apples and like to keep them on the sweet side, like Gala, McIntosh and Braeburn, quartered)
1 1/2 cups orange juice
1 tablespoon whole cloves
1 tablespoon whole allspice
1 5- inch cinnamon stick
2 cups sugar (to taste)
Food mill or sieve
Crock Pot/slow cooker

Steps:

  • Wash and quarter the apples.
  • In a medium saucepan over medium heat, mix the orange juice, cloves, allspice, and cinnamon stick.
  • Add the apples, and bring to a boil. Turn heat to medium-low, cover, and allow to simmer for 30-45 minutes, until apples are softened all the way through.
  • Remove mixture from heat, and let it cool for a bit so you don't burn yourself when processing. Process the mixture through your food mill, or push it through the sieve, which will leave the leftover peels, seeds, and spices behind.
  • Pour the apple mixture into your Crock Pot. Prop the lid so that the steam can escape - this is important, because the apple butter needs to cook down. You can use knives, chopsticks, what have you to prop the lid.

  • Heat on high for an hour, then reduce the heat to low, and cook on low for 8-10 hours, stirring occasionally (but it shouldn't be the end of the world if you don't, unless your Crock Pot runs really hot - you just don't want it to burn on the bottom).
  • The Apple Butter will cook down to a nice, smooth consistency and take on a delicious brown color.

I do this in a slow cooker and let it go for a long, long time. Gets a nice, carmelly flavor this way.

6 lbs apples, tart, cored sliced and peeled
2 cups unsweetened apple juice
3/4 cup brown sugar
3 teaspoons cinnamon
1/4 teaspoon clove
1/4 teaspoon nutmeg, fresh ground

Steps:

  • Prep apples as directed, combine in slow cooker with apple juice (or cider), brown sugar and spices, cook overnight and into the next day if you can, stirring occasionally - 18 hours or so is optimal. You want the mixture to reduce down significantly. Once the apples are to more or less applesauce consistency, apply an immersion blender to puree the mixture to a velvety texture or put it through a food mill. Once the liquid no longer separates quickly after it's stirred, it's ready to jar up and process. Pour into sterilized jars, process in hot water bath for 10-15 minutes.
