Autumn flavors are at their best in this deliciously simple cocktail. Apple-flavored and butterscotch-flavored schnapps mingle together over a layer of fresh-cooked caramel.

6 tablespoons packed brown sugar
1 1/2 teaspoons butter
2 tablespoons water
2 green apple slices
1 tablespoon chopped peanuts
2 oz (1/4 cup) sour apple-flavored schnapps
2 oz (1/4 cup) butterscotch-flavored schnapps
2 oz (1/4 cup) apple- or vanilla-flavored vodka
2 cups ice

Steps:

  • In small microwavable bowl, microwave Caramel ingredients on High 40 to 60 seconds or just until it begins to boil. Dip each apple slice into caramel; sprinkle each with 1/2 tablespoon peanuts. Set aside. Cool remaining caramel slightly.
  • Spoon cooled caramel into each of 2 martini glasses. Place glasses in freezer while making martinis.
  • In martini shaker, place schnapps, liqueur and vodka; shake well. Strain into chilled martini glasses. Garnish with caramel-dipped apple slices.

8 cups apple cider
6 tablespoons caramel ice cream topping, divided
1 tablespoon turbinado sugar
1 teaspoon kosher salt
⅛ teaspoon apple pie spice
1 ½ cups spiced rum
8 cinnamon sticks

Steps:

  • Stir together apple cider and 4 tablespoons caramel ice cream topping in a 3 1/2- or 4-qt. slow cooker until smooth. Cover and cook on Low for 3 to 4 hours or on High for 1 1/2 to 2 hours.
  • Mix together sugar, salt, and apple pie spice in a small shallow bowl. Pour remaining 2 tablespoons caramel topping into a small saucer.
  • Dip the rims of 8 mugs or heatproof glasses into caramel topping, evenly coating the rim; then dip into spice mixture. Ladle hot cider into mugs. Add 1 1/2 fluid ounces (3 tablespoons) spiced rum to each mug and garnish with a cinnamon stick.
