SPICED BOURBON-APPLE CIDER

16 ounces apple cider
2 cinnamon sticks
2 cloves
2 black peppercorns
1 star anise
8 ounces bourbon
Ground cinnamon, in a shaker, for sprinkling
4 apple slices

Steps:

  • Put the apple cider, cinnamon sticks, cloves, black peppercorns and star anise in a small saucepan and bring to a simmer. Immediately strain the mixture into 4 mugs, divided evenly. Top with the bourbon.
  • Sprinkle a small amount of cinnamon on top of each and garnish with an apple slice.

APPLE CIDER SORBET

The "apple cider" here is not the spiced stuff you find in the grocery store in fall. It's unspiced, filtered apple juice produced by companies such as Martinelli's. If you can't find it, premium apple juice is a closer substitution than spiced apple cider. Be sure to let this "ripen" for a few hours in the freezer (included in prep time); otherwise it will taste like frozen sugar water.

2 cups sugar
2 cups water
1 1/2 cups apple cider or 1 1/2 cups apple juice

Steps:

  • Combine water and sugar in a 2qt saucepan. Bring to a boil. Reduce heat to low and simmer WITHOUT STIRRING for 5 minutes or until sugar is dissolved. Allow to cool completely (this may take a couple of hours). Stir in cider.
  • Freeze in an ice cream freezer according to manufacturer's instructions. (Probably 30 minutes.).
  • Leave in freezer to ripen for at least two hours before serving.

16 cups (1 gallon) apple cider
1/4 cup light brown sugar
1 teaspoon allspice
Pinch grated nutmeg
2 teaspoons whole cloves
1 orange
Cinnamon sticks, for garnish
2 cups bourbon, optional

Steps:

  • In a large pot over medium heat, add the apple cider. Stir in the brown sugar, allspice and nutmeg until the sugar is dissolved and bring to a low boil.
  • Stick the pointy ends of the cloves into the orange so that just the buds of the cloves are visible. The entire orange should be covered with the cloves.
  • Add the orange to the cider and reduce the heat to simmer. Cover and continue cooking for 20 minutes.
  • Serve in warm mugs with a cinnamon stick garnish. For adults, add bourbon to the cider.

6 cups unpasteurized apple cider
a 3-inch cinnamon stick
1/2 cup sugar
2 teaspoons strained fresh lemon juice

Steps:

  • In a large saucepan combine the cider, the cinnamon stick, the sugar, and a pinch of salt and boil the mixture for 5 to 10 minutes, or until the liquid is reduced to about 4 cups. Stir in the lemon juice, strain the mixture through a fine sieve into a bowl, and chill it, covered, until it is cold. Freeze the mixture in an ice-cream freezer according to the manufacturer's instructions.

HOT SPICED APPLE CIDER

4 cups fresh apple cider
4 whole black peppercorns
6 or 7 (2 to 3-inch) cinnamon sticks
3 whole dried cloves
1 star anise
1 navel orange
Good bourbon, such as Maker's Mark (optional)
1 crisp red apple

Steps:

  • Place the apple cider, peppercorns, one of the cinnamon sticks, the cloves, and the star anise in a medium saucepan. Cut a large (1 by 4-inch) peel from the orange using a vegetable peeler and add it to the pan. Bring the cider mixture to a boil, lower the heat, and simmer for 5 minutes. Strain into a 4-cup glass measuring cup and discard the solids.
  • Pour the hot cider into mugs or heatproof glasses. Add 2 tablespoons of bourbon to each mug. Cut the orange in half through the stem, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each mug. Cut the apple in half through the stem, remove the core, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each glass.
  • Serve hot with a cinnamon stick in each glass for stirring.

2 lemon zest strips
1/8 teaspoon ground nutmeg
8 whole cloves
4 slices red apple, cored and cut in half

Steps:

  • In a large saucepan, combine the apple cider, cinnamon sticks, lemon zest and nutmeg. Insert a clove into each apple slice; add to cider., Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 1 minute. Discard lemon zest strip. Ladle into mugs.

1 ½ cups fresh apple cider
2/3 cups sugar
1 ts whole cloves
5 whole cloves
5 whole cinnamon sticks
1 ½ cups unsweetened applesauce
¾ cups cranberry juice (100%)
Juice of one lemon (and some zest)
2 tbs dark rum or other alcohol

Steps:

  • Stir together cider, sugar, cloves & cinnamon sticks in a saucepan. Bring to boil over med heat, stirring occ. Simmer for about 15 minutes. Remove from heat. Remove cinnamon & cloves with a slotted spoon, discard. Whisk in applesauce, cranberry, lemon juices and rum. Refrigerate overnight. Freeze in an ice cream maker until just frozen, 15-20 minutes (it will be creamer that way.) Harden in freezer at least four hours before serving. Really good!
