A few dashes of apple pie spice and a few dollops of apple butter make this crumb-topped coffee cake the ultimate fall treat.

3/4 cup all-purpose flour
2/3 cup packed light brown sugar
1 teaspoon apple pie spice
Pinch of fine salt
5 tablespoons unsalted butter, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature, plus more for the pan
2 cups all-purpose flour (see Cook's Note)
1 teaspoon apple pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
1 cup sour cream
2/3 cup apple butter

Steps:

  • For the crumb topping: Put the flour, brown sugar, apple pie spice and salt in a small bowl and stir to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • For the cake: Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, apple pie spice, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream in 2 additions, beginning and ending with the flour. Beat until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Dollop the apple butter on top and carefully smooth with the spatula. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.
  • Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert back onto a rack to cool completely.

I was tired of finding apple butter recipes with more sugar than apples, so I adapted a few and perfected it. This recipe makes the house smell fantastic and tastes like fall. Enjoy! If you do not have an immersion blender: allow cooked apples to cool, transfer to a regular blender, and blend until smooth. Taste and adjust the flavor. If the texture is too liquidy still, return to slow cooker and allow it to reduce for about another hour more. This recipe is really about adjusting to your taste. If you like a lighter color, cook it less. If you want it highly spiced, throw on the cloves, etc. This recipe freezes well.

6 Bartlett pears, peeled and cored
3/4 cup light brown sugar
1/2 cup apple juice or cider
1/4 cup molasses
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon kosher salt
Two 3-inch cinnamon sticks

Steps:

  • Cut the fruit into large chunks. Process the apples and pears in a food processor, working in batches, until finely grated. Transfer the fruit to the slow cooker.
  • Sprinkle in the brown sugar, apple juice, molasses, allspice, cloves and salt, and add the cinnamon sticks. Cover and cook 4 to 6 hours on high heat.
  • Remove the lid and reserve the cinnamon sticks. Carefully return the fruit, in batches, to the food processor and process until smooth. Transfer the processed fruit back to the slow cooker along with the cinnamon sticks. Continue cooking on high until thick and spreadable, another 2 to 4 hours. Allow the mixture to cool before transferring to sealed airtight containers.

Steps:

  • For crust:
  • Blend flour, sugar, and salt in processor. Add butter and process, using on/off turns, until mixture resembles coarse meal. Add egg yolks and process, using on/off turns, until dough comes together in large moist clumps. Gather dough into ball; flatten into disk. Cover with plastic; chill 20 minutes.
  • Spray 10-inch-diameter springform pan with nonstick spray. Divide dough into 2 equal pieces. Roll out 1 dough piece on generously floured surface to 10 1/2-inch round. Roll dough up on rolling pin and transfer to pan. Press dough round into bottom of pan, patching any cracks. Divide second dough piece into 4 equal pieces. Roll out each piece between palms and generously floured surface to 7-inch rope. Place dough ropes end to end to form 1 continuous ring along bottom edge of pan. Press dough ring firmly up sides of pan, forming 1 3/4-inch-high sides. Press dough seams together to seal. Cover and refrigerate overnight.

  • Place pan with crust on clean baking sheet. Arrange apple wedges close together, standing on short ends, in concentric circles in crust.
  • For spiced brown butter:
  • Melt butter in heavy small saucepan over low heat. Scrape seeds from vanilla bean into butter; add bean. Add cloves, star anise and cinnamon stick. Cook over low heat until butter turns golden brown and spices flavor butter, adjusting heat if necessary to prevent burning and stirring frequently, about 25 minutes.
  • Preheat oven to 350°F. Whisk eggs, sugar, flour, and salt to blend in medium bowl. Strain spiced brown butter mixture into egg mixture; whisk to blend. Reserve vanilla bean, star anise, and cinnamon stick; discard cloves. Slowly pour egg mixture over apples in crust. Bake until egg mixture is set, puffed and light golden and apples are deep golden brown, about 1 hour 5 minutes. Cool on rack at least 30 minutes. (Can be made 8 hours ahead. Let stand at room temperature.)
  • Release pan sides. Transfer tart to platter. Garnish tart with reserved vanilla bean, star anise, and cinnamon stick, if desired. Serve tart slightly warm or at room temperature with ice cream.

  • Prep apples as directed, combine in slow cooker with apple juice (or cider), brown sugar and spices, cook overnight and into the next day if you can, stirring occasionally - 18 hours or so is optimal. Once the apples are to more or less applesauce consistency, apply an immersion blender to puree the mixture to a velvety texture or put it through a food mill. 1/4 c vegetable oil
1 egg
1/4 c apple butter

Steps:

  • 1. Preheat oven to 400 F. Grease or line muffin cups, set aside...I used silicone cups. Combine sugar, cinnamon, nutmeg and allspice in a small bowl.
  • 2. Mix 2 tablespoon sugar mixture with pecans & set aside.
  • 3. Add the flour, baking powder and salt to the remaining sugar mixture.
  • 4. In a small bowl, combine milk, oil and egg and mix until well blended. Stir this into the flour mixture and blend just until moistened.

1 peck of apples. i used shizuka apples (similar to golden delicious)
2 1/4 c sugar
1 1/4 c light brown sugar
1 Tbsp cinnamon
1/4 tsp ground cloves
1/2 tsp ground nutmeg
1/4 tsp allspice
1/4 tsp salt
2 tsp vanilla flavoring
1 tsp butter flavoring
1 Tbsp balsamic vinegar (i used espresso balsamic)

Steps:

  • 1. Wash, peel and core apples. I used a peck, which contained about 10 pounds. I used Shizuka apples, which had a slight pear taste to them. Dice them.
  • 2. Mix the dry ingredients (sugars and seasonings) in a bowl.
  • 3. Layer the apples and seasoning in your crock pot. Fill to the top, they will cook down. (OK sorry - it all has to go here - the site will not let me add another step). Let cook for about 10 - 12 hours (depends on your crock pot). Stir occasionally. When done and a deep brown, use an immersion blender or a mixer to blend. Add in the liquid seasonings (balsamic, vanilla and butter). Let it cook about 2 to 3 hours with the lid off. (Until it reaches your desired consistency). I ladeled into half pint jars (9 total) and 1 quart jar. I hot water processed them at a low boil for about 15 minutes. All sealed perfectly. The apple butter is divine. I am going to have to make another batch. These 9 jars are going fast.

4 pounds apples (I use a variety of apples and like to keep them on the sweet side, like Gala, McIntosh and Braeburn, quartered)
1 1/2 cups orange juice
1 tablespoon whole cloves
1 tablespoon whole allspice
1 5- inch cinnamon stick
2 cups sugar (to taste)
Food mill or sieve
Crock Pot/slow cooker

Steps:

  • Wash and quarter the apples.
  • In a medium saucepan over medium heat, mix the orange juice, cloves, allspice, and cinnamon stick.
  • Add the apples, and bring to a boil. Turn heat to medium-low, cover, and allow to simmer for 30-45 minutes, until apples are softened all the way through.
  • Remove mixture from heat, and let it cool for a bit so you don't burn yourself when processing. Process the mixture through your food mill, or push it through the sieve, which will leave the leftover peels, seeds, and spices behind.
  • Pour the apple mixture into your Crock Pot. Prop the lid so that the steam can escape - this is important, because the apple butter needs to cook down. You can use knives, chopsticks, what have you to prop the lid.

4 cups peeled chopped granny smith apples
3/4 cup packed dark brown sugar
2 tablespoons balsamic vinegar
1/4 cup butter, divided
1 tablespoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cloves
1 1/2 teaspoons vanilla

Steps:

  • Combine apples, sugar, vinegar, 2 tablespoons of butter, cinnamon, salt, and cloves in the slow cooker.
  • Cover and cook LOW 8 hours.
  • Stir in remaining 2 tablespoons of butter and the vanilla.
  • Cool completely.
  • Serve with roasted meats or on toast.
  • ENJOY!

I absolutely love apple butter. I wanted to try something different and orange was the first thing that came to mind. I always love the flavor of orange this time of year. It worked so well I thought I would share it with all my foodie friends.

Number Of Ingredients 6

2 lb apples, a mixture of your favorite
1/2 can(s) undiluted frozen orange juice concentrate
2 tsp fresh ground cinnamon
1/2 tsp allspice
1 pinch ground cardamom seed
1/2 c sugar for every cup of apple mixture

Steps:

  • 1. In a dutch oven add peeled, seeded, and quartered apples with 1/2 cup water and frozen oj concentrate.
  • 2. Cool and puree in a food processor until thick. Measure back into dutch oven. Add 1/2 cup sugar for every cup of apple mixture. Then add spices and cook on low for 2 hours.
  • 3. Pour into sterilized jars and secure lid. Leave about 1/4 inch from the top.
  • 4. Process in boiling water for 10 minutes.

HERE ARE TWO RECIPES IN ONE! Sugar and pectin are added to separate pots of fresh apple juice and pulp to produce jars of BOTH apple jelly and butter.

Yield Makes 9 (1-cup) jars jelly and 11 (1-cup) jars apple butter or 320 servings, 1 Tbsp. each.

Number Of Ingredients 7

5 cups prepared juice and 5 cups prepared fruit (buy about 4 lb. fully ripe apples or crab apples)
6-1/2 cups water
15 cups (6-1/2 lb.) sugar, divided, measured into separate bowls
1 tsp. butter or margarine, divided
2 pouches CERTO Fruit Pectin, divided
1 tsp. ground cinnamon
1/2 tsp. ground allspice

Steps:

  • Remove stems and blossom ends from apples. (Do not peel or core apples.) Cut apples into small pieces; place in saucepan. Add water. Bring to boil on medium-high heat. Reduce heat to low; cover and simmer 10 min. Crush fruit with a hand masher; cover. Simmer an additional 5 min., stirring occasionally. Place two layers of damp cheesecloth or jelly bag in large bowl. Pour prepared fruit into cheesecloth. Tie cheesecloth closed; hang and let drip into bowl until dripping stops. Press gently. Measure exactly 5 cups juice into 6- or 8-qt. saucepot. Set juice aside for Apple Jelly.
  • Press pulp through sieve. Measure exactly 5 cups prepared pulp into another 6- or 8-qt. saucepot. Set pulp aside for Spiced Apple Butter.
  • Apple Jelly
  • Mix 7-1/2 cups of the sugar into juice in saucepot. Add 1/2 tsp. of the butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in 1 pouch of the pectin. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle imeediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 5 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)
  • Spiced Apple Butter
  • Mix remaining 7-1/2 cups sugar and the spices into fruit pulp in saucepot. Add remaining 1/2 tsp. butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in remaining pouch of pectin. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.

A delicious way to serve pancakes. The slices of apple in the pancakes makes the dish quite pretty. The recipe is designed to make about 10 small pancakes about 3" across. From the magazine 'Australian Good Taste'.

1 cup self raising flour
1 1/2 cups buttermilk
1 egg, lightly beaten
2 tablespoons butter
1 medium apple, peeled,cored and thinly sliced (use an apple that is sweet rather than tart)
100 g butter, softened
2 teaspoons mixed spice
2 teaspoons finely grated fresh lemon rind
fresh strawberries or other berries (optional)

Steps:

  • FOR THE PANCAKES.
  • Sift the flour into a large bowl and make a well in the centre.
  • Whisk the buttermilk and egg together in a jug.
  • Gradually pour the buttermilk mixture into the flour whisking well to make a smooth batter.
  • Grease a non-stick pan with some of the butter and heat until the butter is foaming.
  • Gently pour 1/3 cup of batter into the pan and top batter with apple slices.
  • Depending on the size of your pan you can cook two or three at a time.
  • Cook pancakes for about 1 minute, bubbles will appear on the top and the bottom should be golden.
  • Turn the pancake and cook for a further minute or two until the second side is golden.
  • Repeat with remaining batter and apple slices, greasing pan before each batch.
  • FOR THE SPICED LEMON BUTTER.
  • Combine all the ingrediants in a small bowl and mix together well.
  • TO SERVE.
  • Arrange 2 or 3 warm pancakes in a stack, top with the flavoured butter and fresh berries.

1/4 cup(s) butter at room temp.
2 - eggs at room temp
2 cup(s) flour
1 1/2 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1 teaspoon(s) cinnamon
1/4 teaspoon(s) nutmeg
1/4 teaspoon(s) cloves
1/4 teaspoon(s) ginger
1/4 cup(s) shortening
1 1/2 cup(s) sugar
1/2 teaspoon(s) vanilla
1/4 cup(s) buttermilk
cup(s) applebutter

Steps:

  • Allow butter and eggs to stand at room temp. for 30 minutes. Meanwhile grease 2 8x1 1/2 inch round cake pans. In a medium bowl stir together flour, baking powder, baking soda, cinnamon, cloves, nutmeg, ginger; set aside.
  • Preheat oven to 350. In a large mixing bowl beat butter and shortening. Add sugar and vanilla, beat until well combined. Add eggs one at a time beating well after each addition. Alternately add flour mixture and buttermilk to butter mixture beating well after each addition. Add apple butter mix well. Spread into prepared pans. Bake 30-35 minutes or until toothpick comes out clean. Cool cake layers on wire rack. Frost with spice frosting.
  • Spice Frosting: 1 Cup shortening, 1/2 jar marshmallow cream, 4 cups powder sugar, 1 teaspoon cinnamon, 1/4 teaspoon cloves, 1/4 teaspoons, ginger, 1/4 teaspoons nutmeg, 3-4 tablespoons milk. Mix until well blended and smooth.
