- Preheat oven to 350°. Cream butter, cream cheese and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in bananas and vanilla. In another bowl, combine flour, baking powder, baking soda and salt; gradually add to creamed mixture. Fold in 1 cup pecans. , Transfer to 2 greased 8x4-in. loaf pans. Sprinkle with remaining pecans. Bake loaves, covering with foil if they darken too rapidly, until a toothpick inserted in each center comes out clean, 1-1-1/4 hours. Cool 10 minutes before removing to wire racks., While loaves are still slightly warm, whisk glaze ingredients. Drizzle over loaves, using a baking pan or parchment under racks to catch excess. Cool completely.

- 1. Pre-heat oven to 350 degrees. Grease and flour (2) 9 x 5 loaf pans (or 7 mini loaf pans).
- 2. In large bowl beat eggs, sugar, oil, cream cheese, and vanilla together for about 3 minutes.
- 3. In another large bowl, whisk flour, baking soda, baking powder, cinnamon, salt, and nutmeg.
- 4. On low speed, gradually beat dry ingrediants into the egg mixture.
- 5. Fold in zucchini, and walnuts.
- 6. Bake for 1 hour, or till tests done.
- 7. Cool 10 minutes, then turn out onto a wire rack to cool completely.
TED'S SPECIAL MINI LOAVES WHITE BREAD (BREAD MACHINE)
I have never tasted softer, crustier, perfect bread. He says it's the whipping cream that does it! Ted said that he often makes the dough places the four balls in the 2lb bread tin, butters the top, covers it with a cloth then places it in the fridge over night allowing 1 hour at room temperature to allow the final raising before baking. This recipe also makes wonderful buns just size them accordingly.

- Add all the wet ingredients.

- Preheat oven to 350 degrees F (175 degrees C). Spray two 9x5 inch loaf pans with non-stick cooking spray.
- Cream the shortening and sugar until light. Beat in the eggs one at a time.

- Combine all ingredients except for brown sugar and beat on medium speed for 30 seconds.
- Pour batter into greased loaf pan and generously sprinkle top with brown sugar.

SUPER-SPECIAL BANANA BREAD TWO WAYS
I wanted the ultimate banana bread recipe, so I started tinkering. For me, this is it. I add whiskey to the batter and then spices and nuts to one loaf and milk chocolate chips to the other. This bread is very dense, moist, and sweet. It has a sugary crust and I underbake it, so that there is no chance for a dry loaf. You could obviously do both loafs with the nuts (I use walnuts, but you could use pecans or any other nut you prefer) or both with the chips (again, you could sub semi sweet, white, peanut butter, butterscotch, toffee--etc). I make both because I love the walnuts and DH loves the milk chocolate :)

- Heat oven to 325°. Grease or spray 2 loaf pans. Sprinkle cinnamon sugar in one and dust as you would with flour. Sprinkle brown sugar in the other and dust.
- In a large bowl, mash bananas with a masher or by well washed hands.
- Mix next 11 ingredients (through pudding mix) by hand, first dissolving soda in buttermilk-- use a larger container as it will foam up quite a bit.
- Divide batter mixture in half. To one half add walnuts, cinnamon, and nutmeg. Pour into pan dusted with cinnamon sugar. To the other half of batter add chocolate chips. Pour into brown sugar dusted pan.
- Bake at 325° for 30 minutes. Sprinkle tops with cinnamon sugar or brown sugar.
- Bake an additional 30 minutes, or until toothpick comes out ALMOST clean. Totally clean will mean a dryer loaf.
- Let cool 15 minutes after removing from oven and remove from pans. Or, bake in tin foil pans and let cool, cover with foil, slide into freezer bags and freeze.

- Spread sunflower seeds on dry surface and roll with rolling pin just enough to break them, not crush them.
- Mix all liquid ingredients in a medium saucepan.
- Heat until warm.
- Turn off heat and add dry yeast but do not stir.
- After it has sat for 5 minutes.
- stir until mixed.
- While waiting for the liquids (5 minutes.) mix all of your dry ingredients together.
- Form a well in the middle.
- Gradually add and stir with wooden spoon.
- Keep an extra cup of warm water near.
- Add if needed.
- Dough must stay moist and sticky-not dry.
- Pour mixture onto a dry floured surface and knead for 5 minutes.
- Add flour as needed but dough must stay soft.
- Form a large ball and divide in two pieces.
- Shape into loaves and place into regular size loaf pans.
- Let rise for 1-1 1/2 hrs.
- Bake at 375 degrees F for 45 minutes.
- or until pulling away from sides.
- Do not raise the dough 2 times.
- Also do not preheat oven.
- This is a dense bread, but very moist.
- Try it fresh from the oven with spreadable honey.

- Combine 1 1/2 cups scalded milk, 2 tablespoons salt, 1/4 cup sugar and 1/2 cup shortening.

- In a large bowl or stand mixer bowl, combine the starter, eggs, butter and sugar. Mix well.
- Stir in flour, salt and water (if needed). . Knead until the dough is smooth and shiny.
- Let dough rise in a greased, covered bowl about 3 hours or until puffy.
- Gently fold to deflate. Shape the dough into a ball and place in a floured brotform or other baking pan.
- Let rise for another hour.
- Preheat oven and baking stone to 375 degrees. Slash the top of the round and slide onto the hot stone. Bake for 40 minutes or until golden brown and sounds hollow when tapped on the bottom. Move bread to a cooling rack and let cool completely.
- Serve lathered with cultured butter for a true taste treat.
