1 medium sweet red or green pepper, diced
1 cup sliced fresh mushrooms
1 tablespoon olive oil
2 garlic cloves, minced
2 cups cooked brown rice
1 can (16 ounces) kidney beans, rinsed and drained
1 cup frozen corn, thawed
1/4 cup chopped green onions
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon salt
6 flour tortillas (8 inches), room temperature
1/2 cup shredded reduced-fat cheddar cheese
3/4 cup salsa

Steps:

  • In a large cast-iron or other heavy skillet, saute red pepper and mushrooms in oil until tender. Add garlic; cook 1 minute. Add the rice, beans, corn, green onions, cumin, pepper and salt. Cook and stir until heated through, 4-6 minutes. , Spoon 3/4 cup onto each tortilla. Sprinkle with cheese; drizzle with salsa. Fold sides of tortilla over filling; serve immediately.

1/2 cup chopped green pepper
1/2 cup chopped celery
1/2 cup chopped red onion
2 cups cooked long-grain rice
1/2 teaspoon cumin
1/4 teaspoon turmeric
1/2 cup chopped tomato
1 cup grated monterey jack cheese
4 (10 inch) flour tortillas

Steps:

  • In medium bowl, combine green pepper, celery, onion, and rice and mix gently to combine.
  • In small bowl, combine cumin, turmeric and tomatoes and mix well.
  • Add to rice mixture and stir to blend.
  • Place filling on tortillas and top with grated cheese.
  • Roll up and wrap in plastic wrap.
  • Refrigerate 1-2 hours to blend flavors before serving.

1 (6.8-ounce) package RICE-A-RONI® Spanish Rice
2 tablespoons margarine or butter
16 ounces salsa**
12 ounces boneless, skinless chicken breasts, cut into thin strips
1 cup canned black or red kidney beans, drained and rinsed
1 cup frozen or canned corn, drained
8 (6-inch) flour tortillas, warmed
Shredded Cheddar cheese and sour cream, (optional)
Or, use 2 cups chopped fresh tomatoes or 1 (14-1/2-ounce) can tomatoes, undrained and chopped, if desired.

Steps:

  • 1. In large skillet over medium-high heat, sauté rice-vermicelli mix with margarine until vermicelli is golden brown. 2. Slowly stir in 2 cups water, salsa, chicken and Special Seasonings; bring to a boil. Reduce heat to low. Cover; simmer 15 to 20 minutes or until rice is tender and chicken is no longer pink inside. 3. Stir in beans and corn; let stand 5 minutes before serving. Serve in tortillas with cheese and sour cream, if desired. Tip To warm tortillas, wrap them in aluminum foil and bake in a 350°F oven for about 5 minutes. Turn off the heat and keep them in the oven until ready to serve.

2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
1/4 teaspoon pepper
1 tablespoon chopped green onion
1 tablespoon chopped roasted sweet red pepper
1-1/2 teaspoons olive oil
2 sun-dried tomato tortillas (10 inches), warmed
1/4 cup tapenade or ripe olive bruschetta topping
TOPPING:
1-1/2 teaspoons minced fresh parsley
1-1/2 teaspoons lemon juice
1-1/2 teaspoons olive oil
1 garlic clove, minced
1/2 teaspoon capers, drained

Steps:

  • In a small bowl, whisk the eggs, cheese, oregano and pepper; set aside., In a small skillet over medium heat, cook onion and red pepper in oil until tender. 50g rice vermicelli noodles
1 carrot , peeled
1 avocado , peeled and destoned
¼ cucumber
8 rice paper wraps
8 king prawns , peeled and cooked
8 mint leaves
½ cooked chicken breast, shredded
sweet chilli sauce , to serve

Steps:

  • Put the noodles in a pan of water and bring to the boil, simmer for 3 mins, then cool under running water. Drain thoroughly.
  • Cut the carrot into matchsticks using a knife or a mandoline. Cut the avocado into strips and the cucumber into thin sticks. Soak 2 of the rice paper wraps in cold water for 1-2 mins until floppy.
  • Lift 1 sheet of rice paper out of the water, shake gently, then lay it carefully on a board. Place 2 prawns in the centre, with a mint leaf between them. Add a strip of avocado, pile some noodles on top, then add a layer of carrot and cucumber. Fold the bottom half of the rice paper over, then fold the sides in and tightly roll it up. Repeat using the second wrapper and soak 2 more to make 2 more rolls.
  • Make the rest of the rolls up using the remaining 4 wraps and the shredded chicken instead of prawns. Serve the rolls with the sweet chilli sauce for dipping.
