Steps:
- Stir together pimiento, mayonnaise, Worcestershire, onion, and cayenne in a large bowl.
- Stir cheeses into pimiento mixture until well combined. Store covered in the refrigerator up to 1 week.
SPICY PIMENTO CHEESE SPREAD
Steps:
- Combine the cream cheese, mayonnaise, garlic powder, onion powder and celery seed. Mix in the pickled jalapenos, piquillo peppers and grated Cheddar. Add the Sriracha and combine. Taste and add more mayonnaise and Sriracha, if necessary. Chill before serving.
SPANISH PIMENTO CHEESE SPREAD
Ken Oringer, a chef and owner of Toro, serves this spread with chicken-skin "crackers" for little sandwiches he calls bocadillas.

- Mash the cheeses together until smooth. Work in the paprikas, hot sauce, lemon zest and juice and Worcestershire sauce. Fold in piquillo peppers and scallions. Season with salt and pepper.
- Store in refrigerator until ready to use. Spread will keep up to two days.

- Puree 1/3 cup sliced pimientos (drained) in a blender or food processor until smooth. Transfer to a large bowl. Add 3 cups finely grated sharp cheddar and beat with a mixer until combined. Beat in 1/4 cup mayonnaise.
