Whip up this deeply flavored main dish that's filled with grated Manchego cheese, diced green pepper, and smoked paprika. Made with ground turkey, it's a lean, flavorful meatloaf recipe.

2 teaspoons extra-virgin olive oil
1 small yellow onion, diced medium (3/4 cup)
2 garlic cloves, minced
2 small potatoes, peeled and diced medium (1 1/3 cups)
1/2 small green bell pepper, seeded and diced medium (1/2 cup)
1 3/4 teaspoons smoked paprika
1 teaspoon dried thyme
coarse salt and ground pepper
1 1/2 pounds ground pork or turkey
1 cup grated Manchego cheese (1 3/4 ounces)
1 to 2 slices white sandwich bread, diced medium (1 cup)
1 large egg

Steps:

  • Preheat oven to 350 degrees. In a medium skillet, heat oil over medium-high. Add onion, garlic, potatoes, and bell pepper and cook, stirring occasionally, until onion is soft and vegetables begin to brown, 5 minutes. Add paprika and thyme, season with salt and pepper, and cook, stirring, 1 minute.
  • In a large bowl, combine pork, cheese, bread, and egg. Add vegetable mixture and season with 2 teaspoons salt and 1/2 teaspoon pepper. Using your hands, mix until ingredients are combined. Transfer to a parchment-lined rimmed baking sheet; form into a 4-by-10-inch loaf. Bake until meatloaf is cooked through, 40 minutes, rotating sheet halfway through. Let rest 15 minutes before slicing.

Again one of my favorites!!! It has been passed on to my kids and their spouses as "My mom's meatloaf" so it is a favorite of theirs as well. I love the sweet sauce and the tangy meat flavor....great sliced cold on a sandwich too...

1 egg
1 can(s) 14 oz canned tomatoes , broken up
1 c rolled oats
1/4 c chopped onion
1 Tbsp worcestershire sauce
2 tsp salt
1/4 tsp pepper
2 lb ground beef
1/2 c ketchup
1/3 c brown sugar
1 Tbsp prepared mustard

Steps:

  • 1. In a large bowl beat egg with a spoon. Mix in next 7 ingredients. Pack into a 9x5x3 loaf pan. Mix ketchup, sugar and mustard. Spread over loaf. Bake uncovered in 350 oven for 1 1/4 to 1 1/2 hours.

As a young girl I would love making this meal for my family as it came my turn to cook. Only one problem, I never made enough. This recipe only serves 6. I always had to double my recipe. I am certain you might enjoy it too.

1 1/2 lbs ground beef (or other meat based on preference)
1 medium onion, chopped (1/2 cup)
1/4 teaspoon pepper
1 (8 ounce) can tomato sauce
1/3 cup oats (or bread Crumbs)
1 teaspoon salt
8 large olives, sliced
1 egg
1/4 cup catsup

Steps:

  • Preheat oven to 350°F
  • Mix thoroughly beef, 1/3 cup of the tomato sauce and remaining ingredients(excluding catsup).
  • Spread in ungreased pan. (I used a small cake pan rather than a loaf pan to allow for even cooking). Spread remaining tomato sauce over loaf. Pour catsup atop the sauce in a decorative manner.
  • I recommend dusting lightly with ground cinnamon for added flavor.
  • Bake in 350°F oven 1 hour and 15 minutes.

3 cups cornbread stuffing mix
3/4 cup green chile salsa
2 eggs
1/2 teaspoon dried oregano crushed
2 pounds ground beef chuck or round
3 slices Monterey Jack cheese
stuffed green olives for garnish (optional)

Steps:

  • 1. Preheat the oven to 350°F. Lightly spray a 9-x-5-inch loaf pan with nonstick cooking spray and set aside. 2. Place the stuffing mix, salsa, eggs, and oregano in a large bowl, and stir to mix. Add the ground beef and blend thoroughly. 3. Transfer the beef mixture to the prepared loaf pan, smoothing the top, and bake uncovered for 1 to 11/4 hours, or until a meat thermometer inserted in the loaf reaches at least 160°F. 4. During the last few minutes of baking, cut each cheese slice diagonally to form 2 triangles and carefully arrange overlapping slices of cheese on top of the loaf. Continue baking just until the cheese begins to melt. 5. Remove the loaf from the oven and allow to sit for 5 minutes so that the juices are reabsorbed into the meat. If desired, garnish the top of the meatloaf with stuffed olives before serving.
