Number Of Ingredients 18

1 pound ground beef
2 cups chopped sweet yellow, red and/or green peppers
1 small onion, chopped
3 garlic cloves, minced
2 small potatoes, peeled and cut into 3/4-inch cubes
2 medium tomatoes, chopped
1 can (8 ounces) tomato sauce
2/3 cup chopped pitted green olives
1/2 cup sliced fresh mushrooms
1/2 cup dry red wine or beef broth
1 tablespoon Louisiana-style hot sauce
1 tablespoon Worcestershire sauce
1-1/2 teaspoons reduced-sodium soy sauce
1 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon Cajun seasoning
Hot cooked rice

Steps:

  • In a Dutch oven, cook the beef, peppers, onion and garlic over medium heat until meat is no longer pink; drain. Add the potatoes, tomatoes, tomato sauce, olives, mushrooms, red wine and seasonings., Bring to a boil. Reduce heat; simmer, uncovered, for 30-35 minutes or until potatoes are tender. Serve with rice., Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

Number Of Ingredients 9

1 lb lean ground beef or turkey
1 box (6 oz. size) spanish rice mix
1/2 c chopped onion
14 oz can petite cut tomatoes, undrained
1 1/4 c beef broth
8 oz can whole kernel corn, undrained
1/2 c green bell pepper, diced
1/2 c cheddar cheese, shredded (or 3 slices of american cheese)
1 c crushed corn chips, optional

Steps:

  • 1. In a large skillet with 1 Tablespoon of vegetable oil, cook and scramble beef until no longer pink. Drain any grease. Stir in the rice mix,chopped onion,tomatoes, beef broth, corn and bell pepper and the seasoning packet from the rice; cook and bring mixture to a boil.
  • 2. Pour mixture into a sprayed or greased casserole dish, cover with foil and bake at 350^ for 25 minutes; until rice is tender. Remove foil and sprinkle top with cheese and crushed corn chips, bake for 10 minutes more ,uncovered or until cheese melts. (American cheese slices may be used instead of shredded cheese ,if desired.

Number Of Ingredients 18

1 lb very lean ground beef (90/10 works great)
1 each green, yellow, and red bell pepper, chopped
1 onion, chopped
3 clove garlic, minced or pressed
2 small potatoes, chopped into about 1/2 inch cubes
2 medium tomatoes, chopped
8 oz can tomato sauce
2/3 c chopped spanish olives
1 can(s) mushrooms
1/2 c beef broth
1 Tbsp hot sauce, i use old bay hot sauce
1 Tbsp worcestershire sauce
1 Tbsp soy sauce
1 tsp black pepper
1/2 tsp seasoning salt
1 tsp oregano, dried
1/2 tsp cajun seasoning
2 c hot cooked rice

Steps:

  • 1. In a large stock pot or Dutch oven, over medium-high heat, cook ground beef, peppers, onion, and garlic until beef is cooked through. Stir occasionally to help break up the beef.
  • 2. Add the rest of the ingredients, except rice, to pot. Stir well. Bring to a boil. Reduce heat and simmer for 30 minutes or until potatoes are tender. Stir well occasionally.
  • 3. Serve with rice.
