Grilled crispy caramelized spam and eggs over rice is the perfect way to bring sunshine into your morning. The spam is caramelized with soy sauce and sugar while the eggs are topped with furikake and fried garlic pieces.

7 tablespoons vegetable oil
6 large eggs (whisked)
Pinch of Salt
Pinch of White Pepper
10 garlic cloves (minced)
1 can of 12 oz Spam
2 1/2 teaspoons of soy sauce
2 tablespoons sugar
1/4 cup water
1 cup white rice
Furikake Seasoning
Sesame seeds
Green Onion

Steps:

  • Cook the rice. Make the rice using a rice cooker or over the stove.
  • Make fried garlic. Mince fresh garlic. Over a small frying pan on medium-high heat, pour in 5 tablespoons of vegetable oil. Add in the garlic and toss the garlic in the oil. Heat the garlic for about 1-2 minutes until golden brown and crispy and take off the heat. Set aside.
  • Prepare the eggs. In a mixing bowl, whisk the eggs with a pinch of salt and a pinch of white pepper.
  • Cook the eggs. Using a medium pan over medium heat, pour a tablespoon of neutral vegetable oil to grease the pan. Pour in the whisked eggs and spread the eggs over the entire pan.
  • For the softest scrambled eggs, use a rubber spatula and slowly and gently stir the eggs when the eggs are still runny until the eggs begin to come together.
  • When the eggs become soft curds stop stirring and begin to gently push the eggs together or even fold the eggs on top of each other to make them extra fluffy. This should take 2-3 minutes total. Be sure to JUST undercook them. They will continue to cook off the heat.
  • Cook the Spam. Cut the spam into cubes. Using a medium pan on medium heat, cook the spam until browned and crispy on the edges tossing every 2 minutes. Around 4-5 minutes.
  • Make sauce. Mix soy sauce and water into a small bowl. Sprinkle the sugar evenly over the spam and toss the spam to evenly coat. Then pour in the soy sauce mixture. Swirl the sauce and toss the spam to evenly distribute. Let the spam simmer until nearly dissolved around 4-5 minutes. Flip the spam cubes every 2 few minutes.
  • Serve. Serve the spam and eggs over white rice. Top with the fried garlic, furikake, sesame seeds, green onion.

SPAM eggs and rice is a simple yet popular dish in Hawaii. While traditionally served for breakfast, it's also great for lunch, dinner, or even a snack! Feel free to use Turkey SPAM if you want to lighten up the recipe.

4 cups cooked rice
1/4 cup soy sauce
2 TBS rice vinegar
1 TBS sugar
1 TBS fish sauce
1 can SPAM
8 eggs
spray oil
salt and pepper

Steps:

  • Start your rice cooking first. I get mine going in the Instant Pot.
  • Mix soy sauce, rice vinegar, sugar, and fish sauce in a bowl.
  • Cut your slices of SPAM into 1/2 inch cubes and marinate in the soy sauce mixture.
  • When rice has about 10 minutes to go, whisk your eggs.
  • Heat a non-stick skillet on medium high and spray with cooking spray. Pour the eggs in. Scramble them with a little salt and pepper, and then put onto a plate. (See how to scramble eggs). Place plate of eggs in the microwave to keep warm.
  • Using a large slotted spoon, remove SPAM from marinade and cook in same skillet until a golden brown crust forms on the cubes. (Don't dump marinade in or it will burn)
  • Scoop rice onto a plate and top with eggs and SPAM.

Steps:

  • Whisk the eggs: Whisk 3 large eggs, 1 pinch of kosher salt, 1 grind of black pepper and 3 tablespoons whole milk together until light and foamy.
  • TIP: Odds are you're going to be serving these on a plate. If so, I strongly suggest you park an ovensafe one in a low oven or in hot water while you're cooking. Cold plates suck the heat right out of food.
  • Add to the pan: Add 1 tablespoon unsalted butter to a 10-to-12-inch nonstick skillet and put it over high heat. When the butter bubbles (after about a minute), pour the eggs straight into the middle of the pan, which will force the butter to the edges, where it's needed.
  • Scramble the eggs: Stir slowly with a rubber or silicone spatula. As soon as curds (big soft lumps) of eggs begin to form, drop the heat to low and shift from stirring to folding the curds over on themselves while gently shaking the pan with the other hand.
  • Let rest: As soon as no more liquidous egg is running around the pan, kill the heat and gently transfer the scramble to the warmed plate. Let the eggs rest for 1 minute to finish cooking before serving.

This was a breakfast staple in my house growing up. My dad fries up Spam until crispy, adds some kimchi for flavor, and scrambles in a few eggs. We serve it over rice with seaweed seasoning, but salt and pepper work great too.

½ cup Spam®, diced
3 large eggs
1 tablespoon olive oil
¼ cup kimchi, diced
1 tablespoon unsalted butter
2 cups white rice, steamed
kosher salt, to taste
furikake, for garnish - optional

Steps:

  • Dice the Spam into small cubes.
  • Crack the eggs into a small bowl and beat to combine.
  • Heat the olive oil in a medium nonstick skillet over medium-high heat. Add the Spam and cook until golden brown and crispy, stirring often, 3-4 minutes.
  • Reduce the heat to medium-low, add the kimchi, and cook until fragrant, 2-3 minutes. Push mixture to one side of the pan and melt the butter in the empty side. Reduce the heat to low, add the eggs, and cook, stirring frequently, until scrambled to your desired doneness. Stir in the kimchi and spam until well combined.
  • Add the rice to 2 serving bowls and divide the scrambled egg mixture between the bowls. Top with furikake, if desired.
