SPAGHETTI PORK CHOPS
This succulent pork supper was sent in by Ellen Gallavan, Midland, Michigan. The moist chops simmer to perfection in a tangy sauce, then are served over pasta. "This was one of my mother's most-loved recipes," she shares.

- In a 5-qt. slow cooker, combine the tomato sauce, soup, onion, bay leaf, celery seed and Italian seasoning. , In a large skillet, brown pork chops in oil. Add to the slow cooker. Cover and cook on low until meat is tender, 6-8 hours. Discard bay leaf. , Cook spaghetti according to package directions; drain. Serve chops and sauce over spaghetti.

- Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
- Remove the outer skin from onions, keeping them whole. Cut onions from the top almost to the bottom (without cutting all the way through), making 8 equal wedges. Place onions on baking sheet, spray with cooking spray and season with salt and pepper. Arrange spaghetti squash on the same baking sheet, flesh side up. Spray squash with cooking spray and season with salt and pepper. Roast squash and onions for 25 to 30 minutes, until both are tender and onions are golden brown.
- Meanwhile, heat oil in a large skillet over medium heat. Season both sides of pork with salt and pepper. Add pork to hot skillet and cook 2 minutes per side, until golden brown. Remove pork from pan and set aside. To the same skillet add mushrooms and garlic and saute 5 minutes, until mushrooms soften and release juice. Add chicken broth and bring to a simmer. Return pork to pan and simmer 5 minutes, until cooked through. Add heavy cream and simmer 1 minute. Using a fork, pull squash from the skin in shreds, making spaghetti-like strands. Arrange squash on a platter or plate and top with pork and cream sauce. Top with hazelnuts and parsley. Serve 2 roasted onions alongside, with ranch dip, reserving remaining onions for another meal.

- Melt butter with olive oil in a large heavy skillet. Add garlic, pepper, and red pepper. Rub rosemary into the pork chops then brown slowly in skillet. Add tomatoes, parsley, and salt. Cover and cook slowly for 20 minutes. Uncover and cook an additional 20 minutes or until tender. Cook the spaghetti, drain and toss with butter and Parmesan. Add 1/2 cup sauce to the spaghetti on a hot platter, arrange the chops on the spaghetti and pour sauce over all. Suggest you serve with Caesar salad.

From my Granny's cookbook, "Prize Winning Recipes from Around the World." This is a lot like a recipe I used to adore from a local italian restaurant. They would let the sauce simmer a long time and it was sooooo succulent, the pork chops would just fall apart. MMMmm.

- Put first 10 ingredients in a large saucepan. Bring to a boil and simmer, uncovered, for 1 hour, stirring occasionally.
- Trim meat from chops, leaving in large pieces. Brown on all sides in a skillet. Add meat and drippings to sauce and simmer for 1 hour longer.
- Cook and drain spaghetti. Serve sauce over spaghetti.

BILLY'S PORK CHOPS AND SPAGHETTI
Steps:
- Preheat oven to 375 degrees. Heat pot of salted water for spaghetti. Make the Tomato Sauce In medium sauce pan sautee one yellow onion in olive oil. Add garlic and sautee until fragrant (1 min). Add crushed tomatoes and fresh basil and simmer. Sautee the Chops Brush chops in olive oil and season with salt and pepper. Add to heated cast iron skillet and brown on both sides (10-15 mins). Remove chops. Add olive oil to pan and sautee onions, peppers, garlic (3-4 cloves), fennel seed, and tomato paste for 5 mins. Add white wine and chicken stock and sautee until tender, about 10 mins. Bake the Chops Add pork chops to skillet and cover with pepper/onion mixture. Place skillet in oven and cook until pork reaches 135-140 degrees. Make the Spaghetti Cook spaghetti until 1 minute before al dente and drain. Add spaghetti to sauce and cook 1 minute. Transfer to a bowl and sprinkle with grated cheese. Serve with chops and peppers
