Steps:
- Combine apple juice and apples in a medium saucepan; cook over high heat about 20 minutes or until reduced and the consistency of syrup, stirring occasionally.
- Remove saucepan from heat; slowly beat in small amounts of butter until all has been incorporated.
- Beat in cinnamon.
- This mixture is sensitive to heat -- avoid excessive cold or hot temperatures.

- Preheat oven to 350°F and place pastry into pie pans.
- Beat butter in a small bowl until fluffy; add dry ingredients and mix gently until well combined.
- Peel, core and slice apples into 1/4" slices (about 6 cups total).
- Sprinkle with lemon juice and vanilla; mix well.
- Add dry ingredients to apples, toss well and spoon evenly into pie shells.
- Sprinkle each with half of streusel topping.
- Bake 40 to 45 minutes or until topping is deep golden brown.
- Cut each pie into six pieces and serve on individual plates.
CINNAMON APPLE CRANBERRY SAUCE

Steps:
- In a medium saucepan, add the cranberry juice, cranberries, cinnamon and sugar.
- Bring to a boil over medium heat and cook for 5 minutes.
- Add the apples and continue cooking, stirring occassionaly until the cranberries have softened and apples are tender (5 minutes).
- Remove 8 ounces of the liquid to a small bowl and whisk in the cornstarch (to make slurry).
- Slowly add the slurry to the cranberry mixture. Continue cooking, stirring constantly for an additional 5 minutes.
- Remove from heat and pour into serving bowl.
- Refrigerate until thickened (30 minutes).
- Remove cinnamon sticks and serve.

Steps:
- Place sugar and hot water in a heavy saucpan and stir with a wooden spoon to mix.
- Cover and place on high heat and bring to a boil.
- Boil until clear, about 1 minute. Using a natural bristle pastry brush (dipped in cold water) wash any sugar crystals down from the side of the pan.
- Uncover saucepan and let cook until thick and deep golden brown, about 5-8 minutes. Do not stir while cooking. Shake pan gently if needed to cook sugar evenly.
- Remove pan from heat and add cream and cinnamon. Stand back- it will bubble and hiss. Return pan to heat and simmer until thick and creamy, about 3 minutes, stirring with a wooden spoon.
- Cool to room temperature before serving.
- Refridgerate, covered, for up to 3 weeks. Warm up to room temperature before serving.
