This is a dairy-free alternative to traditional hot chocolate. The use of non-dairy creamer adds a thickness and a richness that I associate with hot chocolate from my childhood.

- Pour chocolate soy milk into a microwave-safe mug.
- Microwave the soy milk for about 90 seconds.
- Add non-dairy creamer to taste (I like to use the french-vanilla flavored kind).

- In a medium saucepan, combine soy milk, peanut butter and cinnamon. Cook over low to medium heat, whisking frequently, until mixture is smooth and peanut butter is melted, about 5 minutes. Serve in mug. Top with whipped cream and sprinkle with cocoa powder, if desired.;
