Roasted Brussels Sprouts, Butternut Squash and Bacon with Maple Soy Glaze image

Roasted Brussels Sprouts and Butternut Squash are delicious on their own, but adding bacon and a maple soy glaze makes them over-the-top delicious!

Cooking spray
1 pound butternut squash (peeled, seeded and cut into ½-inch cubes)
1 tablespoons olive oil
1/2 teaspoon Kosher salt
Freshly ground black pepper
1 pound Brussels sprouts (trimmed and quartered)
2 center cut strips of bacon (chopped)
2 tablespoons pure maple syrup
2 tablespoons reduced sodium soy sauce

Steps:

  • Preheat oven to 400 degrees F. Spray a sheet pan with cooking spray.
  • In a large bowl, combine the squash, 1/2 tablespoon oil, 1/4 teaspoon salt and pepper, to taste. Toss to coat. In another large bowl, combine the Brussels sprouts, remaining tablespoon of oil, 1/4 teaspoon of salt and pepper, to taste.
  • Spread the vegetables in an even layer on 1 sheet pan. Top with bacon. Roast for 20 minutes, with a spatula, toss veggies and roast an additional 15 minutes.
  • Meanwhile, in a small sauce pot, combine the syrup and soy sauce. Over medium low heat, simmer sauce for 5 minutes, or until it begins to thicken slightly. Set aside.
  • When vegetables are done roasting, transfer to a serving dish. Add maple soy sauce and toss to coat.

2 lbs butternut squash
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup brown sugar
1/4 teaspoon nutmeg
3 tablespoons butter, melted

Steps:

  • Peel, seed and slice the squash. Place in a pot with tight fitting cover and steam until squash is nearly tender, about 12-15 minutes. Drain well.
  • Preheat oven to 400ºF.
  • Arrange squash in one or two layers in greased shallow baking dish.
  • Mix sugar, spices and salt, and sprinkle over the squash.
  • Drizzle with melted butter. Bake until squash is tender and somewhat glazed, 15-20 minutes.
  • For deeper glaze, broil a few minutes.

1 2-pound butternut squash, peeled, halved lengthwise, seeded and sliced into 1/2-inch-thick half-moons
3 tablespoons harissa paste
3 tablespoons honey
2 tablespoons extra-virgin olive oil
1/2 lemon, sliced
2 cloves garlic, smashed
1 teaspoon ground cumin
Kosher salt
2 teaspoons red wine vinegar
Torn fresh mint, for topping

Steps:

  • Preheat the oven to 450˚ F. Put the squash in a foil-lined 9-by-13-inch baking dish and toss with the harissa, honey, olive oil, lemon, garlic, cumin and 1 teaspoon salt. Roast, tossing halfway through, until the squash is caramelized and tender, 50 to 60 minutes.
  • Drizzle the squash with the vinegar and top with mint.

2 tablespoons olive oil
2 lbs winter squash, halved lengthwise and seeded (1 medium or 2 small)
salt and pepper
3 tablespoons maple syrup
2 tablespoons soy sauce
1/2 teaspoon grated ginger
6 tablespoons unsalted butter
6 fresh sage leaves, coarsely chopped

Steps:

  • Adjust the oven rack to the lower middle position and heat the oven to 400*F.
  • Line a rimmed baking sheet with foil. Brush the oill over the foil and the cut sides of the squash.
  • Place the squash, cut side down, on the foil.
  • Roast until a skewer inserted into the squash meets no resistance, about 40-50 minutes.
  • Soy-Maple Glaze:.
  • Stir together maple syrup, soy sauce, and ginger.
  • Fifteen minutes before the squash is finished cooking, flip it cut side up and brush with the soy maple glaze. Drizzle some extra glaze into the cavity.
  • Return the squash to the oven and cook until the maple mixture begins to caramelize, about 5 minutes longer.
  • Brown Butter and Sage Variation:.
  • When the squash is almost done, melt the butter in a small skillet over medium heat. Add the chopped sage and cook until the butter is golden brown and the sage is crisp, about 5 minutes. Pour the sage butter over the squash just before serving.
