Southwestern sweet potatoes are a perfect side dish when you are craving bold flavors, yet want something effortless to prepare.

2 pounds Sweet Potatoes
2 Poblano Peppers ((chopped))
1 small Red Onion ((chopped))
1 tablespoon Cooking Oil
1/2 teaspoon Ancho Chili Powder
1/2 teaspoon Kosher Salt
1/4 teaspoon fresh Ground Pepper

Steps:

  • Chop sweet potatoes into 1/4" half rounds and place in preheated 425 degree oven for 25 minutes, or until mostly tender.
  • Alternatively, you can microwave the sweet potatoes to cook them more quickly. Microwave on high for 3-5 minutes, until mostly tender.
  • Add cooking oil to a 12" non-stick saute pan and add chopped sweet potatoes, poblanos, onion, and seasonings.
  • Saute for 5 minutes, or until onions and peppers are tender.

2 large sweet potatoes (about 24 ounces total), peeled
3 tablespoons vegetable oil
1 teaspoon ground cumin
1/2 to 1 chipotle in adobo sauce, finely chopped
1/4 cup pepitas (hulled pumpkin seeds)
Kosher salt and freshly milled black pepper

Steps:

  • 1. Coarsely grate the sweet potatoes, preferably using the grating disk of a food processor. (You should have about 5 cups.)
  • 2. Heat the oil in a large skillet over high heat until hot. Reduce the heat to medium-high; add the sweet potatoes and cumin and sauté, stirring constantly, until the potatoes are almost tender, 3 to 5 minutes. Add the chipotle, pepitas, and salt and pepper to taste. Cook for 2 minutes more or until the sweet potatoes are tender.

My friends beg for these everytime I give a party! They are so delicious and satisfying, I just never seem to fix enough no matter how many I make. I wonderful change from white oven fried potatoes which are so high in carbs. THESE ARE VERY LOW CARB. And I dare you to stop at just one serving...I found this recipe in Healthy Cooking but have modified it to my own taste.

4 sweet potatoes, unpeeled,cut into generous 1 inch chunks
3 tablespoons olive oil or 3 tablespoons canola oil
3 teaspoons ground cumin powder
2 teaspoons chili powder
1 teaspoon paprika
1 -2 teaspoon salt
1/4-1/2 teaspoon cayenne pepper

Steps:

  • Preheat your oven to 425.
  • Put sweet potato chunks into a large bowl, add oil and mix to cover well.
  • In a small bowl or cup mix all the spices and the salt together and stir until well blended.
  • Sprinkle the sweet potaoes with this mixture and mix until all the potatoes are well covered.
  • Turn onto a cookie sheet and spread out evenly.
  • Bake on the lowest rack in your oven for about 20 minutes.
  • Serve warm.
  • Which won't be a problem as they'll all be gone way before they could get cold!
