These Southwestern Chicken Packets are an easy and delicious no-fuss dinner recipe you can cook with a fire (while camping), on a grill, or in an oven.

Number Of Ingredients 10

1 cup frozen corn
1 (15oz) can black beans, drained and rinsed
1 tsp taco seasoning
2 chicken breasts or 4 chicken tenders
salt and pepper to taste
1/2 cup salsa or pico de gallo
1 cup shredded pepper jack cheese
cilantro, to garnish
sour cream, optional
avocado, mashed, optional

Steps:

  • Pull off 4 sheets of heavy-duty tin foil (8-10 inches) and layer to create 2 packets. Lightly mist with cooking spray.
  • Stir together the corn, black beans, and taco seasoning. Divide between the 2 foil packets. Season the chicken with salt and pepper. Place 1 chicken breast or 2 chicken tenders in each packet. Top the chicken with salsa and shredded cheese.
  • Bring the two longer edges of the foil together above the food. Fold the edges down twice, creating the top seal. Press the side edges together and fold, creating a secure packet.
  • Cook on hot coals, a gas grill, or in a 375 degree oven for 30 to 45 minutes until chicken is cooked through. (*See notes for cooking with coals or a grill.)
  • Top with fresh cilantro, sour cream, and avocado before serving.

2 tablespoons ground cumin
2 teaspoons garlic salt
2 teaspoons ground dried chipotle pepper
2 teaspoons paprika
2 (10 ounce) cans diced tomatoes with green chile peppers
1 (15 ounce) can black beans
1 (8 ounce) can whole kernel corn
2 pounds skinless, boneless chicken breast meat - cut into cubes
1 tablespoon olive oil
1 small red onion, diced
1 cup uncooked instant rice
1 cup grated Cheddar cheese

Steps:

  • Combine cumin, salt, dried chipotle pepper, and paprika in a large, resealable plastic bag. Seal bag and shake to mix. Measure 2 teaspoons of the seasoning into a large bowl; add diced tomatoes with green chile peppers, black beans, and corn to the bowl and stir.
  • Put chicken in the bag with the remaining seasoning; shake to coat.
  • Heat olive oil in a large skillet over high heat. Turn seasoned chicken out into the skillet, add red onion, and saute in the hot oil until the chicken is browned, about 5 minutes.
  • Reduce heat to medium-high. Stir tomato mixture with the chicken; bring to a boil, add rice, and stir.
  • Reduce heat to low. Sprinkle Cheddar cheese over the chicken mixture. Place a cover on the skillet and simmer until the rice is tender and the chicken no longer pink in the middle, about 5 minutes. Remove from heat to cool for 5 minutes before serving.

1 can (15 ounces) black beans, rinsed and drained
1 jar (16 ounces) mild salsa
4 boneless skinless chicken breast halves (5 ounces each)
Optional toppings: Sweet red and yellow pepper strips, sour cream, shredded cheddar cheese and sliced green onions

Steps:

  • In a 3-qt. slow cooker, layer three-fourths each of the corn and beans and half the salsa. Arrange chicken over salsa; top with remaining corn, beans and salsa. Cover and cook on low for 4-5 hours or until chicken is tender. , Shred chicken with 2 forks and return to the slow cooker; heat through. 6 ounces cream cheese, softened
4 tablespoons butter, melted, divided
2 tablespoons minced chives
2 tablespoon whole milk
1/2 teaspoon salt

4 cups cubed cooked chicken
2 tubes (8 ounces each) refrigerated crescent rolls
1 cup crushed seasoned stuffing

Steps:

  • Preheat oven to 350°. Beat cream cheese, 2 tablespoons butter, chives, milk, salt and pepper until blended. Stir in chicken., Unroll crescent roll dough and separate into eight rectangles; press perforations together. Spoon about 1/2 cup chicken mixture in the center of each rectangle. Bring edges up to the center and pinch to seal. Brush with remaining butter. Sprinkle with crushed stuffing, lightly pressing down., Transfer to ungreased baking sheets. 2 cups water
2 tablespoons olive oil, divided
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup uncooked long grain rice
1 tablespoon taco seasoning
4 boneless skinless chicken breast halves (4 ounces each)
1 cup canned black beans or pinto beans, rinsed and drained
1/4 cup chopped fresh cilantro
1 teaspoon grated lime zest
2 tablespoons lime juice
Pico de gallo, shredded Mexican cheese blend, sour cream, avocado, shredded lettuce or lime wedges, optional

Steps:

  • In a large saucepan, combine water, 1 tablespoon oil, salt and pepper; bring to a boil. Stir in rice. Reduce heat; simmer, covered, 15-17 minutes or until liquid is absorbed and rice is tender., Meanwhile, sprinkle taco seasoning over both sides of chicken. In a large skillet, heat remaining oil over medium heat. Add chicken; cook 4-5 minutes on each side or until a thermometer reads 165°., In a microwave, heat beans until warmed. 6 boneless skinless chicken breasts, frozen
3 ounces monterey jack pepper cheese, grated
3 ounces cream cheese, softened
12 slices bacon
salt and pepper, to taste
1/3 cup ranch dressing, room temperature
1/3 cup mild salsa, room temperature

Steps:

  • Remove protective ice glaze from breasts by holding under lukewarm running water for 1 minute Pat dry.
  • Place each breast between 2 pieces of plastic wrap.
  • Working from center to edges, pound lightly with flat side of meat mallet to 1/4 inch thick.
  • Remove wrap.
  • Season with salt and pepper.
  • Wash hands.
  • Combine cheeses.
  • Divide into 6 equal portions and roll into balls.
  • Fold one chicken breast around cheese ball to form a bundle.
  • Lay 2 pieces of bacon in the form of an X.
  • Place bundle in the center of the cross and bring ends up to meet on top and secure with toothpicks.
  • (You are wrapping the chicken in the bacon) Repeat with remaining chicken and bacon.
  • Place bundles in 9x13 inch baking dish.
  • Bake uncovered in a 350 degree oven about 30 minutes or until tender and no longer pink.
  • Turn oven to broil.
  • Broil bundles 3 to 5 minutes or until bacon is browned.
  • Remove bundles from oven and remove toothpicks.
  • Mix ranch and salsa.
  • Pour mixture in center of a serving plate and place chicken on the plate for serving.

2 pounds chicken breast tenders
1 red bell pepper, cut into 1/4-inch strips
1 yellow bell pepper, cut into 1/4-inch strips

2 jalapeno peppers, cut into 1/4-inch rings
2 ears sweet corn, removed from cob
Salt and pepper to taste

Steps:

  • Combine 1/3 cup olive oil, lime juice, chili powder, brown sugar, cumin, paprika, and garlic powder in a large resealable plastic bag. Mix thoroughly to combine. Add chicken tenders and fully coat. Transfer to refrigerator and marinate for 2 hours.
  • Preheat grill to 425 degrees F. Combine red pepper, yellow pepper, onion, jalapenos, and corn in a large bowl. Drizzle with remaining olive oil and toss to coat. Season with salt and pepper.

4 boneless skinless chicken breasts
1 (5 1/4 ounce) can whole green chilies, drained
4 (1 ounce) monterey jack pepper cheese, sliced
1 large egg
2 tablespoons water
1 cup tortilla chips, crushed
salsa
lime wedge

Steps:

  • Place chicken between 2 sheets of heavy-duty plastic wrap. Flatten to 1/8 inch thickness.
  • Top each chicken breast with 1 green chile and 1 cheese slice. Roll up and secure with a toothpick.
  • Whisk together egg and 2 tablespoons water in a shallow bowl.
  • Dip chicken rolls in egg mixture and dredge in the crushed chips.
  • Place the rolls in a lightly greased oven pan.
  • Bake at 375 degrees for 30 to 35 minutes.
  • Let stand for 5 minutes before slicing.
  • Serve with salsa and garnish with a lime wedge.
