Steps:
- Fry sausage and drain.
- Add onions and pepper; saute about 5 minutes.
- Combine eggs, milk and spices.
- Grease 13" X 9" pan.
- Line bottom with half of tortilla strips, then sausage, chiles, and Jack cheese.
- Repeat second layer, ending with cheese.
- Pour egg mixture over top of casserole.
- You can add 8-10 thin tomato slices on top.
- Bake in pre-heated oven at 350 degrees for 45-50 minutes.
- You can make this the night before and put in refrigerator.

We have this every Christmas or whenever companies here for breakfast. Its easy to make and great to make the day before as the flavors mingle. I even make ahead and keep in the freezer.

Steps:
- 1. Grease 9/12 pan. Layer 1/2 of the following-chilies, tortillas, sausage and cheese-repeat. Combine eggs, milk and seasonings, pour over mixture. Sprinkle with paprika, cover with plastic wrap and refrigerate til ready to bake. Bake at 350 for 45-55 minutes. Serve with sour cream and salsa.
