Southwest Mac & Cheese with Optional Chicken image

A south-of-the-border twist on classic mac and cheese. Black beans, corn, mild green chilies (or hot, depending on your preference), chili powder, and optional chunks of chicken for the meat-eaters join up with an uber-creamy, cheesy pasta topped with a sprinkle of crushed tortilla chips. And then baked to perfection.

Number Of Ingredients 18

8 oz. 1/2 pound or about 1 3/4 cups macaroni or other medium tubular pasta (like pennette or penne)
2 cups shredded cheddar cheese
1 1/2 cups shredded monterey jack cheese
1/4 cup shredded Parmesan cheese
3 tablespoons butter
1/4 cup flour
3/4 teaspoon kosher salt (or 1/2 teaspoon table salt)
2 teaspoons chili powder
1/2 teaspoon dry mustard
1/4 teaspoon black pepper
1/8 teaspoon smoked paprika (plus more for sprinkling on top)
2 1/2 cups milk (I like 2% milk best, but whole works too)
1 cup frozen corn kernels
1 4- ounce can mild green chilies
1 15- ounce can black beans (drained and rinsed (or 2 cups cooked black beans))
1/3 cup crushed tortilla chips (about 3/4 cup whole)
1/2 pound boneless (skinless chicken breast, cooked and diced*)
1 pound boneless (skinless chicken breast, cooked and diced*)

Steps:

  • Boil the pasta until al dente, according to package directions. Drain and rinse with cool water to stop the cooking, and return to the pan you boiled it in. Set aside.
  • Preheat the oven to 375 degrees Fahrenheit. Set out six individual, oven-safe ramekins or gratin dishes for individual servings, two 5"x8" baking dishes if you're cooking up one dish with meat and one without, or an 8"x8"/two-quart baking dish if cooking it all in one big batch.
  • In a medium bowl, toss together the cheddar, monterey jack, and Parmesan cheeses. Set aside.
  • Over medium heat, melt the butter. Add the flour, salt, dry mustard, chili powder, pepper, and 1/8 teaspoon smoked paprika. Stir constantly over medium heat for about three minutes.
  • Slowly whisk in the milk. Continuing over medium heat, whisk frequently for about 10 minutes, until the sauce thickens (as the sauce gets thicker, I recommend going from frequent stirs to constant stirs to help avoid burning).
  • Remove from heat, and stir in 2 cups of the cheese. Continue stirring until cheese is melted, then add the green chilies and corn. Stir until combined. Select your version from the options below to continue.

1 cup water
2 cups elbow macaroni, uncooked
1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes

Steps:

  • Brown meat in large skillet; drain.
  • Stir in tomatoes and water. Bring to boil. Stir in macaroni. Reduce heat to medium-low; cover. Simmer 8 to 10 min. or until macaroni is tender, stirring occasionally.
  • Add VELVEETA; cook until completely melted, stirring frequently.

1 (14 ounce) box macaroni shells and cheese
1/2 lb ground beef
1 -2 tablespoon taco seasoning
1 teaspoon minced garlic
1/2 teaspoon cumin
1 -2 tablespoon TABASCO® brand Chipotle Pepper Sauce (optional)
1/4 cup water
1 (10 ounce) can Rotel tomatoes & chilies
1 (14 ounce) can black beans (drained and rinsed)
1 cup frozen corn kernels, thawed or 1 cup canned corn

Steps:

  • boil pasta shells according to package directions.
  • brown ground beef in large saucepan or skillet with minced garlic and cumin.
  • Drain fat.
  • mix taco seasoning and water and pour over meat, stir well over medium/low.
  • add rotel, beans, corn and Tabasco to pan and continue to cook over medium until all ingredients heated through.
  • add pasta shells to pan and stir.
  • pour cheese sauce from package over all and stir over medium until heated through.
  • Serve with additional Tabasco to taste.

1 (8 ounce) package spicy sausage
1 (16 ounce) box velveeta macaroni shells and cheese
1 (8 ounce) can Rotel Tomatoes
1 zucchini

Steps:

  • Brown and strain the sausage.
  • Start the shells and cheese cooking as the box directs only use a cup more water.
  • Dice up the zucchini. I slice it thick with the skin on then quarter each slice.
  • When the water starts to boil add the shells and zucchini.
  • When the shells are tender drain the pot.
  • Open and drain the can of rotel.
  • Add all ingredients in to the pot adding the cheese package. ( I add a handful of my fav shredded cheese and 1/3 cup milk in addition to the packet.
  • Salt and pepper to taste :).

Oh this took mac-n-cheese to a new level! It was wonderfully creamy. Then you would get a bite of the chorizo and the the crunchy topping. This recipe is a little spicy but not enough to overpower the flavors.

6 slice sourdough bread
1 1/2 c shredded pepper jack cheese
1 c shredded chipotle gouda
1 1/2 c shredded mexican blend cheese
1 Tbsp canola oil
1/2 c chopped sweet onions
4 oz spanish chorizo, chopped into small pieces
6 Tbsp butter, unsalted-divided use
3 Tbsp all purpose flour
2 3/4 tsp kosher salt-divided use
1/4 tsp ground black pepper
1/2 tsp garlic powder
4 c whole milk
10 oz uncooked dry, medium shell pasta
1 tsp chili powder
3 Tbsp finely chopped cilantro
1/2 c crushed nacho chips

Steps:

  • 1. Heat oven to 250 degrees F. Trim and discard crust from bread then cut bread into 1/4 inch cubes. Line 10 by 15-inch baking sheet with foil. Place cubes on baking sheet and bake for 10 to 12 minutes or until dry. Remove from oven and put in a medium mixing bowl, set aside.
  • 2. Place all the shredded cheeses in a gallon plastic storage bag, seal and shake bag to combine.
  • 3. Heat oven to 375 degrees. Spray a 3-quart baking dish with non-stick cooking spray, set aside.
  • 4. Heat oil in a 8-inch non-stick skillet on medium heat. Add chopped onions to skillet, sauté for 3 minutes, add chorizo, sauté for 3 minutes. Remove from skillet with a slotted spoon to paper towels.
  • 5. In a 2-quart sauce pan melt butter, remove 3 tablespoons of the melted butter and sprinkle over bread cubes. Stir flour, 1 1/4 teaspoons salt, pepper and garlic powder into saucepan with melted butter. Gradually stir in milk, bring to a boil, stir constantly. Reduce heat, simmer for 1 minute then remove from heat.
  • 6. In 4 or 5 quart pot bring 2-quarts of water with 1 1/2 teaspoon salt to a boil. Add pasta, return to a boil cook for 6 minutes, pasta should be slightly under cooked, pour into colander, drain. Return pasta to cooking pot, sprinkle with chili powder, add white sauce and stir to gently to combine. Add cooked onion and chorizo and 3 1/2 cup of the cheese mixture, stir to blend all ingredients, cheese does not have to melt.
  • 7. Add crushed nacho chips, cilantro, and remainder of the cheese to bread cubes and toss to combine.
  • 8. Pour pasta into prepared baking dish. Sprinkle bread mixture over top and bake for 30 to 35 minutes or until heated through and bubbly. Remove from oven and allow to stand for 5 minutes before serving.

Steps:

  • Cook the pasta according to the package directions (boil 7-10 minutes, or until al dente), then drain in a colander. While waiting for the pasta water to boil and the pasta to cook, dice the onion and mince the garlic. Sauté both in a large pot with the olive oil over medium heat until they are soft and transparent (about 5 minutes). Drain the diced tomatoes, then add them to the pot with the frozen corn and chili powder. Continue to sauté until the corn has heated through (about 3 minutes). Turn the heat off and add the drained pasta and Greek yogurt. Stir until the pasta is coated in the creamy sauce. Add the cheese and stir until the residual heat has melted it into the sauce. If you pasta has cooled too much to melt the cheese, keep the burner on low as you stir the cheese into the sauce. Serve hot sprinkled with the sliced green onions. Notes *Diced tomatoes with green chiles like Rotel brand. **Chili powder is a mild blend of red chile peppers and other spices. It is not the same as cayenne pepper, which is very spicy.

4 c cooked macaroni
1/2 finely diced red onion
1/2 c diced red bell pepper
1 finely diced jalapeno
1 can(s) 4 oz can chopped green chilies
2 1/2 c frozen corn
3 clove cloves garlic, chopped
1 c cream
1 c generous cup grated pepper jack cheese (i used half pepperjack and half mexican blend)
2 Tbsp butter or margarine
salt and pepper to taste

Steps:

  • 1. Boil pasta until al dente. In a large skillet, add olive oil and saute garlic and vegetables over medium heat for a couple of minutes. Add in canned chilies and stir around, then turn off heat. Drain pasta and add it to skillet. Pour on cream, add cheese, then add salt and pepper to taste and stir gently. Can be topped with seasoned bread crumbs.
