1 sheet refrigerated pie crust
1-2/3 cups sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground nutmeg
Pinch salt
1 cup mashed sweet potatoes
2 large eggs, room temperature
1/2 cup butter, softened
1/4 cup light corn syrup
3/4 cup evaporated milk

Steps:

  • Preheat oven to 350°. Unroll crust into a 9-in. pie plate; flute edge. In a small bowl, combine sugar, flour, nutmeg and salt. In a large bowl, beat potatoes, eggs, butter, corn syrup and flour mixture. Gradually stir in milk. Pour into crust., Bake for 55-60 minutes. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Refrigerate leftovers.

2 sweet potatoes, scrubbed
2 cups white sugar
8 ounces sweetened condensed milk
½ cup unsalted butter, softened
2 eggs
2 teaspoons all-purpose flour
1 pinch ground cinnamon, or to taste
1 pinch ground nutmeg, or to taste
1 pinch ground allspice, or to taste
1 pinch ground cloves, or to taste
2 (9 inch) pie crusts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a pot of water to a boil; add sweet potatoes and boil until soft, 20 to 30 minutes. Remove and discard skin; mash potatoes in a bowl until lumps are removed.
  • Mix 1 cup mashed sweet potatoes, sugar, condensed milk, butter, eggs, flour, cinnamon, nutmeg, allspice, and cloves together in a bowl. Divide batter evenly between the 2 pie crusts.
  • Bake in the preheated oven until firm, about 45 minutes.

2 sweet potatoes
2 cups white sugar
¾ cup evaporated milk
½ cup butter, melted
¼ cup dark corn syrup

2 sweet potatoes, peeled and cut into chunks
1 pastry for a 9-inch deep-dish pie crust
1 ½ cups milk
1 cup white sugar
2 eggs
1 tablespoon butter, melted

4 cups all purpose flour
1 3/4 cups butter flavored Crisco
3 Tablespoons white sugar
2 teaspoons salt
1 egg
1/2 cup ice water
The Sweet Potato Filling
2 cups sweet potatoes (2 medium sweet potatoes usually does it. I always have a bit extra left)
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup evaporated milk
2 eggs
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoons ginger
1 Tablespoon flour
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 Let's Make The Crust! Step 1) In a bowl add the flour and cut in the Crisco, until it resembles bread crumbs. Step 2.) Stir in the sugar & the salt. Step 3.) Mix the egg up inside the ice cold water. Pour into the crust mixture and stir until combined. Step 4.) Turn the crust mixture out onto a flour surface and gather it into a large ball. You may need to kneed it lightly just to get all of the dry crumbs to incorporate into a ball. Step 5.) Divide the ball into two pieces. (Store the other ball in the refrigerator and use it for another yummy pie in the future!) Step 6) Roll the dough out about 1/4 inch thick and then place it into a deep dish pie pan. Shape the crust into place with your hands. Step 7.) Refrigerate until ready to use. You can brush it with egg whites to get that shiny crust look if you'd like. Let's Make the Sweet Potato Pie Filling! Step 1.) Place sweet potatoes in a large pot and fill with water just until it covers them. Bring to a boil and boil for 45 -50 minutes or until they are fork tender. Step 2.) When done, let cool and then remove the skin. It should peel off very easily. Step 3.) Place peeled sweet potatoes in bowl and break it up with a fork. Step 4.) Use a mixer to mix the sweet potatoes until smooth and creamy. Step 5.) Add in butter and mix to combine. Step 6.) Add in sugars, milk, eggs, nutmeg, cinnamon, ginger, vanilla and flour. Beat until mixture is smooth. It may be a lil speckled, don't worry it won't be that way when it's done. Step 7.) Pour into prepared pie crust and back for 55- 60 minutes. (don't be alarmed if the pie puffs up while cooking. It will sink down) Let cool on the counter for about 30 minutes and then let chill in the refrigerator for at least 3 hours to fully set. 3pies

Mom always cooked a sweet potato pie during the holidays, so whenever I cook one, it always brings back fond memories. Simple yet full flavored. I don't count the process of cooking the potatoes as part of the prep time because you can bake them anytime before hand and store them for later use.

4 sweet potatoes, small to medium
1 can(s) sweetened condensed milk
1 1/2 tsp cinnamon
1 1/2 tsp pumpkin pie spices
2 tsp vanilla extract
2 eggs

1/2 c butter, softened
2 Tbsp sugar
1/2 tsp cinnamon

Steps:

  • 1. Prepare potatoes according to preference. Some cooks boil their potatoes, I prefer to bake them,I believe it draws out and enhances the potato's natural sugar giving the pie a much better flavor. Plus it easier to peel because the potato separates from the skin during baking.
  • 2. Once potatoes are cooked, peel and mash. I've found these wonderful beauties can be stringy,to elevate that, I run my hand held mixer through it a few times. The strings wrap around the blades and I rinse them down the drain. You'll have a smoother filling for sure.
  • 3. Add condensed milk, spices, extract, and eggs and mix well.
  • 4. Prepare your crust by mixing flour, butter, sugar, and cinnamon together.
  • 5. Press into 9 inch pie pan.
  • 6. Pour pie filling in and bake in preheated oven at 350' for 1 hour.

1 cup sugar
1/4 cup brown sugar
3 tablespoons butter, melted
1 tablespoon fresh lemon juice

1/2 lemon, zest of, grated

- dash of salt
1 stick(s) butter or margarine, melted
