Time 1h35m

Number Of Ingredients 11

9" pie crust store-bought or homemade
4 Tablespoons butter
1-1/4 cups granulated sugar
2 Tablespoons all-purpose flour, heaping
2 Tablespoons unsweetened cocoa, heaping
1-1/4 cups milk (2-percent or whole milk)
3 egg yolks
1 teaspoon vanilla extract
4 egg whites
1/4 teaspoon cream of tartar
1/4 cup sugar

Steps:

  • Bake the pie crust until lightly golden brown.
  • In a medium-sized bowl add the sugar, flour, and unsweetened cocoa and whisk together.
  • Pour in the milk, vanilla extract, and egg yolks (save the whites in another bowl). Beat with a hand mixer until well combined.
  • Add the butter to a skillet on medium heat.
  • Next, pour the chocolate pie filling into the pan and cook until thick.
  • Pour the pie filling back into a clean (and heat-safe) bowl and beat again to get rid of any lumps.
  • Pour the filling into the cooked pie shell.
  • Grab the bowl with the whites and add one more egg white.
  • Add the cream of tartar to the bowl and beat until stiff peaks form.
  • Pour the sugar into the bowl and beat again until the meringue is shiny.
  • Spread the meringue over the pie. Bake at 350-degrees for about 10-15 minutes or until the meringue is golden brown.
  • Allow the pie to set up for at least one hour before serving.

Time 1h

Yield 8

Number Of Ingredients 10

¼ cup unsweetened cocoa powder
¼ cup all-purpose flour
3 egg yolks
1 ⅓ cups white sugar
1 (12 fluid ounce) can evaporated milk
3 tablespoons butter
1 (9 inch) pie shell, baked
3 egg whites
⅛ teaspoon cream of tartar
6 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift together the cocoa powder and the flour and pour them into a saucepan. Whisk the egg yolks and 1 1/3 cups sugar. Gradually add the evaporated milk, whisking constantly; slowly pour the milk mixture into the saucepan, whisking until combined.
  • Cook over medium heat, stirring constantly with a flat-bottomed wooden spoon or spatula, until the mixture begins to thicken and coats the back of the spoon, about 15 minutes. Remove the custard from the heat and stir in the butter until melted. Pour the filling into the baked pie crust.
  • To make the meringue topping: Combine the egg whites and cream of tartar in a clean glass or metal bowl; beat with an electric mixer until foamy. Gradually add sugar, a tablespoon at a time, continuing to beat until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks. Spread the meringue over the chocolate filling.
  • Bake in the preheated oven for 10 minutes, or until the tips of the meringue peaks are golden brown.

Time 4h50m

1 1/2 cups sugar
3 Tablespoons cornstarch
1/8 teaspoon salt
2 eggs
1 teaspoon vanilla
4 ounces semi-sweet baking chocolate
1/4 cup butter
12 ounces evaporated milk
1 deep dish, frozen pie crust
1 1/3 cups sweetened, flaked coconut
1/2 cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F.
  • Combine sugar, cornstarch and salt; add eggs and vanilla and beat until smooth. Set aside until needed.
  • In a small saucepan, melt chocolate and butter over low heat; whisk until smooth. Remove from heat.
  • Gradually whisk evaporated milk into melted chocolate.
  • Blend chocolate mixture into sugar mixture until completely incorporated.
  • Pour into pie crust. Do not over fill. If there's too much filling, see notes for remaining.
  • Combine coconut and pecans; sprinkle over chocolate filling, covering the entire pie.
  • Bake for 35 to 50 minutes or until browned and puffed up. If the center of the pie is puffed up, the pie is done. Be sure to drape the pie with foil about 20 minutes into cooking to prevent over-browning.
