2 cups reduced-sodium chicken broth
2 cups 2% milk
1/3 cup butter, cubed
3/4 teaspoon salt
1/2 teaspoon pepper
3/4 cup uncooked old-fashioned grits
1 cup shredded cheddar cheese
SHRIMP:
8 thick-sliced bacon strips, chopped
1 pound uncooked medium shrimp, peeled and deveined
3 garlic cloves, minced
1 teaspoon Cajun or blackened seasoning
4 green onions, chopped

Steps:

  • In a large saucepan, bring the broth, milk, butter, salt and pepper to a boil. Slowly stir in grits. Reduce heat. Cover and cook for 12-14 minutes or until thickened, stirring occasionally. Stir in cheese until melted. Set aside and keep warm., In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 4 teaspoons drippings. Saute the shrimp, garlic and seasoning in drippings until shrimp turn pink. Serve with grits and sprinkle with onions.

If you're from the South you will definitely love this recipe, which includes grits, eggs, sausage, and cheese. When I cook it, I place it in the slow cooker to stay warm. There is nothing worse than cold grits.

6 cups water
2 cups uncooked grits
½ cup butter, divided
3 cups shredded Cheddar cheese, divided
1 pound ground pork sausage
12 eggs
½ cup milk
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.
  • Bring water to a boil in a large saucepan, and stir in grits. Reduce heat, cover, and simmer about 5 minutes, until liquid has been absorbed. Mix in 1/2 the butter and 2 cups cheese until melted.
  • In a skillet over medium-high heat, cook the sausage until evenly browned. Drain, and mix into the grits. Beat together the eggs and milk in a bowl, and pour into the skillet. Lightly scramble, then mix into the grits.
  • Pour the grits mixture into the prepared baking dish. Dot with remaining butter, and top with remaining cheese. Season with salt and pepper.
  • Bake 30 minutes in the preheated oven, until lightly browned.

4 cups milk
5 ½ cups water, divided
1 ½ cups stone-ground grits
½ cup butter
1 pound thick-cut bacon
½ (13 ounce) package kielbasa sausage, cut into small pieces
1 medium sweet onion, diced
1 large green bell pepper, finely diced
1 pound uncooked medium shrimp - peeled, deveined, and halved
1 teaspoon Creole seasoning, or to taste
salt and freshly ground black pepper to taste
1 cup all-purpose flour
2 dashes Worcestershire sauce, or to taste
1 drop ketchup, or to taste

Steps:

  • Bring milk and 1 1/2 cups of water to a boil in a large pot. Add grits, reduce heat to medium-low, and stir constantly to make sure they don't burn. Add butter and cover. Let simmer, stirring occasionally so they don't burn, until water is absorbed and grits have thickened, about 30 minutes.
  • Meanwhile, place bacon in a large pot and cook over medium heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on a paper towel-lined plate, leaving rendered fat in the pan.
  • Heat bacon fat in the same pan over medium-high heat. Cook kielbasa in the hot fat until browned, 5 to 7 minutes. Transfer kielbasa to the plate with bacon. Add onion to the pan and cook until tender, about 5 minutes. Add bell pepper and cook for 3 to 4 minutes.
  • Season shrimp with Creole seasoning, salt, and pepper; coat with flour and add to the pan. Cook until lightly pink, 3 to 4 minutes; the flour will absorb the fat to make a gravy. Add remaining water. Cook over medium-high heat, stirring, until thickened, 15 to 20 minutes. Add Worcestershire and ketchup and mix; it should give the gravy a darker color.
  • Reduce heat and add bacon and kielbasa to heat through, 3 to 5 minutes. Serve with grits.

4 cups water
½ teaspoon salt
1 cup regular grits, uncooked
1 egg, well beaten
1 ½ cups grated sharp Cheddar cheese, divided
½ cup milk
2 tablespoons Worcestershire sauce
2 tablespoons butter
½ teaspoon freshly ground black pepper
¼ teaspoon garlic powder
1 dash hot pepper sauce (such as Tabasco®), or more to taste
1 pinch paprika, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 2-quart casserole dish with nonstick cooking spray.
  • Bring water and salt to a boil in a pot over high heat. Add grits, reduce heat to low, and let simmer until tender, about 30 minutes.
  • Pour grits into a large mixing bowl. Add beaten egg slowly, followed by 1 1/4 cups Cheddar cheese, milk, Worcestershire sauce, butter, pepper, garlic powder, and hot sauce. CREAMY SOUTHERN SHRIMP AND CHEESE GRITS

I came up with this recipe when I couldn't find anything else that would satisfy my cravings for a gourmet shrimp and grits without spending a ton of money at restaurants. This is simple and delicious, and is made with things we mostly all have in our homes. Use chicken stock in grits, if you prefer.

3 ½ cups water
1 cup quick-cooking grits
3 ounces farmers cheese
2 ounces goat cheese
1 slice American cheese
2 tablespoons butter
2 teaspoons vegetable oil
1 large tomato, diced
2 green onions, sliced
1 clove garlic, minced
1 teaspoon bacon drippings, or to taste
1 pound fresh shrimp - peeled, deveined, and tails removed
salt and ground black pepper to taste
¼ cup half-and-half, or more to taste
1 tablespoon dry sherry
1 green onion (green tops only), sliced

Steps:

  • Bring water to a boil in a large saucepan and slowly whisk in grits; reduce heat to medium-low and simmer until thickened and tender, 5 to 7 minutes, stirring occasionally. Stir farmers cheese, goat cheese, and American cheese into grits until cheese has melted. Set grits aside and keep warm.
  • Melt butter with vegetable oil in a large skillet over medium heat. Cook and stir tomato, 2 green onions, and garlic in the hot skillet until the vegetables are tender, 5 to 7 minutes. Stir in bacon drippings until combined. Cook and stir shrimp with vegetables until bright pink, about 5 minutes; season to taste with salt and black pepper.
  • Mix grits into shrimp mixture and stir in half-and-half until smooth. Simmer the mixture to blend flavors, about 5 minutes, and add sherry. Simmer 3 more minutes before adjusting salt and black pepper. Garnish with sliced green tops of 1 green onion before serving.

8 split and flattened quail (4 ounces each), thawed

1 cup uncooked old-fashioned grits
4 ounces cream cheese, softened
1/2 cup heavy whipping cream

Steps:

  • In a large resealable plastic bag, combine the buttermilk, 1/2 teaspoon each salt and pepper. Add the quail; seal bag and turn to coat. Refrigerate for 1 hour. Drain and discard marinade., In a shallow bowl, combine the flour, onion powder, garlic powder, cayenne and remaining salt and pepper. Coat quail with flour mixture., In a large skillet, cook quail in oil in batches over medium heat for 4-6 minutes on each side or until a thermometer reads 165°. Drain on paper towels. Remove to a serving platter and keep warm., For gravy, stir flour into pan drippings until blended; cook and stir for 4 minutes or until golden brown. Gradually add the cream, broth, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened., Meanwhile, prepare grits according to package directions. Add the cream cheese, cream, salt and pepper. Cook and stir until cream cheese is melted and grits are heated through. Serve with quail and gravy; sprinkle with bacon and green onions if desired.

  • In a small pot, bring water, milk, and salt to a boil.
  • Slowly stir grits into boiling mixture.
  • Stir continuously and thoroughly until grits are well mixed.
  • Let the pot return to a boil, cover pot with a lid, lower the temperature, and cook for approximately 30 minutes stirring frequently.
  • Add more water if necessary.

1/2 pound firm green tomatoes (about 1 large), cored and cut into 1/4- to 1/2-inch dice
1/4 cup light brown sugar
1/4 cup cider vinegar
1/2 teaspoon madras curry powder
1/2 teaspoon mustard seeds
1/4 teaspoon fennel pollen
1/8 teaspoon ground allspice
One 1-inch piece fresh ginger, grated
1/2 green apple, grated
1/2 red onion, cut into 1/4-inch dice
Chicken stock, as needed
1 tablespoon olive oil
5 thick slices bacon (about 1/4 pound), cut into 1/4-inch batons
2 cloves garlic, grated
1 shallot, minced
1 bunch red chard, leaves stripped (stems saved for another use)
1 bunch beet greens, leaves stripped (stems saved for another use)
1/3 cup cider vinegar
2 teaspoons sugar
Pinch nutmeg
Salt and pepper
Hot sauce, such as Frank's RedHot
4 cups chicken stock, plus more as needed

1 cup stone-ground grits
1 cup whole milk
12 quail eggs, cooked over easy

Steps:

  • For the chutney: Combine the green tomatoes, brown sugar, cider vinegar, curry powder, mustard seeds, fennel pollen, allspice, ginger, apple and red onion in a medium heavy-bottomed pot. Bring to a boil, then reduce to a simmer. Cook, stirring occasionally, for about 30 minutes. Taste and thin with chicken stock as desired. Adjust the seasonings to taste.
  • For the greens and bacon: Heat the olive oil in a large skillet over medium-high heat. Add the bacon and cook, stirring occasionally, until crisp; remove to a paper-towel-lined plate. Lower the heat to medium, add the garlic and shallot, and cook, stirring occasionally, for 3 to 5 minutes. Add in the chard and beet greens and let wilt for a few minutes. Deglaze the pan with vinegar, then add the sugar, nutmeg, salt and pepper to taste, and a dash of hot sauce. Add some of the bacon back to the pan, and combine. Use the remaining bacon as garnish.
  • For the butter grits: In a medium saucepan, bring the chicken stock, 1 teaspoon salt and 1 tablespoon of the butter to a boil. Add the grits and bring to a simmer. Stir, then partially cover, and cook, whisking occasionally, until the liquid is absorbed, about 15 minutes.
  • Add in 1/2 cup milk, whisk and partially cover. Cook, whisking occasionally, for another 15 minutes.
  • Add in the remaining 1/2 cup milk and cook partially covered, whisking occasionally, another 15 minutes.
  • Add the remaining tablespoon butter and season to taste with salt. Use additional stock to adjust the consistency as needed. Serve the grits with the quail eggs.

Steps:

  • Bring 3 cups water to a boil in a medium saucepan. Add the grits, reduce the heat to medium and cook, stirring occasionally, until thickened, about 5 minutes. Remove from the heat. Stir in the cheese and season with salt and black pepper; cover to keep warm.

Creamy grits, recipe follows
Barbecue Sauce, recipe follows
Lemon wedges
2 tablespoons sweet paprika
4 teaspoons salt
2 teaspoons granulated garlic
2 teaspoons onion powder
2 teaspoons cayenne pepper
1 1/2 teaspoons ground white pepper
1 1/2 teaspoons ground black pepper
1 teaspoon dried oregano leaves
1 teaspoon dried thyme leaves
2 cups heavy cream
3 cups water
1/4 pound salted butter
Salt and pepper
2 cups quick grits
1/4 pound bacon, diced
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/2 cup minced red onion
3 tablespoons Southern Comfort
1/2 cup brown sugar
14 ounces ketchup
Salt and pepper

Steps:

  • Heat a cast iron skillet over high heat for about 10 minutes. Melt butter in the skillet and then pour onto a plate. Dip each fillet in butter so that each side is coated. Sprinkle 1 side of each fillet with blackening seasoning. Place in hot skillet, seasoned side down, and then sprinkle other side generously with blackening seasoning. Cook about 2 minutes or until the underside looks charred. Turn and cook about 2 more minutes or until done.
  • Spread creamy grits on 4 plates. Squeeze barbecue sauce in diagonal lines over grits. Place fish on top. Garnish with lemon wedges.
  • Combine all spices and mix well.
  • Bring heavy cream and water to a boil in a medium saucepan. Add butter, and salt and pepper. Slowly stir in grits and reduce heat. Cook approximately 20 minutes on low heat, stirring frequently. Set aside.
  • Cook bacon to 3/4 done. Add peppers and onion and saute until tender. Carefully flame with Southern Comfort. Add remaining ingredients and simmer for 10 minutes. Let cool and transfer to squeeze bottle.

3 tablespoons lemon juice
2 teaspoons hot sauce (Tabasco)
2 lbs raw shrimp, peeled
3 slices bacon, chopped
1 cup onion, diced
1/4 cup green pepper, diced
3 garlic cloves, minced
1/2 cup chicken broth
1/2 cup green onion, sliced and divided
5 cups water
1 1/2 cups quick-cooking grits
1 tablespoon butter
1 teaspoon salt
1 cup shredded sharp cheddar cheese

Steps:

  • Combine lemon juice, hot sauce and raw shrimp. Set aside.
  • Cook bacon in a large nonstick skillet over medium heat until crisp. (While bacon is cooking bring 5 cups water to a boil in a separate saucepan for grits.) To the skillet add onion, bell pepper, and garlic to dripping and bacon pieces; cook 5 minutes or until tender, stirring occasionally.
  • Stir in shrimp mixture, broth and 1/4 cup green onions. Cook 5 minutes or until shrimp are done, stirring frequently.
  • While shrimp are cooking, add quick cooking grits to boiling water, stirring constantly. Reduce heat to low, simmer, covered for 5 minutes or until thick, stirring occasionally. Stir in butter, salt and 3/4 cup of the cheese.
  • To serve, pour grits in shallow bowl. Heap shrimp on top of your serving of grits with remaining cheese and green onions.

1 1/2 teaspoons salt
1/4 teaspoon black pepper
4 tablespoons butter (or margarine)
1 1/2 cups sharp cheddar cheese (or medium cheddar)
1/2 cup half-and-half cream (or evaporated milk)
2 teaspoons garlic, minced
1/4 cup onion, FINELY chopped
4 -5 dashes Tabasco sauce (or red pepper sauce)
1 (4 ounce) can green chilies (optional)
2 eggs, well beaten

Steps:

  • Preheat oven to 350 degrees.
  • Butter or oil spray a 1-1/4 quart baking dish.
  • Prepare quick or instant grits to yield 4 cups cooked grits.
  • Remove pan from heat. Add salt,pepper, butter, cheese and milk and stir until cheese and butter have melted.
  • Add garlic, onion, hot sauce and optional green chilies and stir until mixed.
  • Fold in beaten eggs.
  • Pour into baking dish and bake 40-45 mins or until top has set and lightly puffed.
  • Let stand 5 minutes before serving.

My family's favorite with seafood, especially with shrimp or crabcakes. It's great for brunch or a casual dinner party! Growing up, I never had grits, but I've grown to love them. :) Prep time does not include the 20 minutes needed to cook the grits.

2 cups cooked grits, hot (I use yellow grits)
2/3 cup skim milk
1/2 cup butter
1 1/2 cups egg substitute or 2 whole eggs
4 ounces shredded sharp cheddar cheese (1 cup)
1/2 cup crisp bacon, crumbled (I use Oscar Meyer or Hormel real bacon bits)
salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • Spray 9x12x2-inch pan with non-stick cooking spray.
  • Place hot grits in large bowl.
  • Add butter and stir to mix and let butter melt.
  • Add liquid ingredients and stir to mix well.
  • Pour into casserole.
  • Place casserole in oven; place pan of water on shelf below casserole.
  • This helps keep carrerole from drying out.
  • Bake 50 minutes.
  • Remove from oven and sprinkle casserole with cheese and then bacon.
  • Return to oven for an additional 10 minutes until just set in the middle.
  • Serve hot.

1 c stone ground hominy grits or quick grits (i used the quick grits)
1 1/2 c water
1 c whole milk
1 tsp salt
4 Tbsp butter
1/2 c shredded cheddar cheese (i used 3/4 cup)
6 large eggs
pepper to taste
1/4 c chopped parsley
1 large ham steak

Steps:

  • 1. Heat oven to 350^' Butter a cast iron skillet,or a 9x13-inch baking dish. Set aside. In a 3 quart heavy bottomed saucepan, bring water, milk and salt to a boil. Gradually stir in grits and reduce heat. Simmer for 20 minutes or until thick and smooth and not watery. Whisk to prevent lumps. Stir in butter and cheese Pour grits into skillet or baking pan. Make 6 depressions in grits mixture about 2 inches apart with the back of a spoon sprayed with oil spray. Carefully break one eggs into each depression. Sprinkle with fresh ground black pepper. Bake uncovered for 10-15 minutes or until eggs are at desired doneness. Garnish with the chopped parsley. Serve hot with grilled ham steak to share.

2 cups whole milk
1 cup water
2 tablespoons butter, unsalted
1/2 teaspoon salt
3/4 cup quick-cooking grits
1/4 cup sharp white cheddar or Manchego cheese, grated
SHRIMP:
1-pound wild-caught or sustainably raised shrimp, 16 to 30 count in size, shelled and de-veined
3 tablespoons extra-virgin olive oil
Kosher salt to taste
freshly ground black pepper to taste
juice of 1/2 lemon

Steps:

  • To make grits, combine milk, water, butter, and salt in a large saucepan over medium-high heat. Bring to a roaring boil and slowly whisk in the grits. Decrease the heat to medium low. Continue whisking until no lumps remain, about 12 minutes. Decrease the heat to low. Cover the pan and let the grits simmer while preparing shrimp. To prepare shrimp, heat a medium pan over medium-high heat.Toss shrimp with oil in a small bowl and season lightly with salt and pepper. Add shrimp to hot pan and cook, stirring, until just pink throughout, 2 to 4 minutes, depending on size of shrimp. Turn off heat and squeeze lemon over the top to release all the good bits from the pan to make a light, flavorful sauce. To serve, remove grits from heat and stir in grated cheese. Divide among 4 shallow bowls and top with shrimp and pan sauce. Serve hot.

24 large shrimp, peeled and deveined
1/3 c olive oil, extra virgin
3 Tbsp blackened seasoning
1 Tbsp coarse sea salt
1 Tbsp cracked peppercorn
1/8 tsp red pepper flakes
1/8 tsp cayenne pepper
2 sprig(s) fresh oregano
1/8 tsp paprika, hot
2 c quick cooking grits (plus ingredients per package)
4 Tbsp butter
2 c water
8 large eggs

Steps:

  • 1. Peel and devein your shrimp. Place them in a large Ziploc bag. Drizzle the olive oil into the bag. Add the salt, peppercorns, blackened spice, cayenne pepper, red pepper flakes, paprika, and salt. Place in the refrigerator to mariade for 10 minutes.
  • 2. Prepare your grits according to the package directions.
  • 3. In a large skillet, add the butter. Turn heat to medium-high and cook your shrimp 1-2 minutes per side.
  • 4. Do not overcook the shrimp.
  • 5. While the shrimp are cooking, add water to another saucepan. Over medium-high heat, bring the water to a gentle boil and poach the eggs.
  • 6. Remove the eggs from the saucepan and place on a plate until ready to serve.
  • 7. To serve, place your grits in the bottom of the bowl. Top the with 6 blackened shrimp, 2 poached eggs, and the sauce from the shrimp.
