Butter beans the way Mamaw used to make them! Lots of butter, cream, and bacon make these beans true southern comfort food.

1 (16 ounce) package dried lima beans
5 slices bacon, chopped
1 cup heavy whipping cream
½ cup butter
salt and ground black pepper to taste

Steps:

  • Cover lima beans with water in a large pot and soak overnight. Drain and return lima beans to the pot; cover beans with fresh water.
  • Heat a large skillet over medium-high heat; cook and stir bacon until crisp, about 5 minutes. Reserve about 2 teaspoons bacon drippings and drain bacon on paper towels.
  • Bring lima beans, bacon, and reserved bacon drippings to a boil. Reduce heat to medium-low and simmer until beans are just tender, 40 to 60 minutes. Stir heavy cream and butter into bean mixture and cook until thickened, about 15 minutes more. Season with salt and pepper.

1 lb dry butter beans (the big white ones)
2-3 slice smoked bacon
1/2 onion,diced (or 1 small one)
water, 3 inches above beans
1 tsp salt
1/8 tsp black pepper

Steps:

  • 1. Sort beans; remove bad ones,rocks or other foreign materials.
  • 2. Put in colander and wash under running water. Set aside.
  • 3. Dice half an onion and set aside.
  • 4. Dice raw bacon. Fry in large pot til crispy. Remove from pot and set aside. Leave drippings in pot. (You can save bacon bits for a salad or put back in pot after you bring to second boil.)
  • 5. Add diced onion to pot and saute til translucent.
  • 6. Add some water to deglaze pot then add beans and cover with water. (about 3-4 inches ABOVE beans.)Add salt and pepper. Bring to a boil then cover and turn heat OFF for 45 minutes. Return to a boil,(add the fried bacon bits if desired) reduce heat to med. low and cook for 1 1/2 to 2 hours or until beans are tender.Keep a check on beans as you may need to add more water.Stir now and then.(taste a bean after 1 hour of cooking. You do not want to over cook). Taste and add more salt and pepper if needed.

I love fresh butter beans but wanted easy of prep (no watching the pot in case the beans boiled dry) and found this recipe online and made a slight change to suit my personal preference.

4 cups fresh butter beans
2 tablespoons butter
1 1/2 tablespoons ham soup base (Better than Bouillon) or 1 1/2 tablespoons chicken bouillon
1 1/2 teaspoons salt
water

Steps:

  • Place washed butter beans in slow cooker (I use a 1.5 qt size).
  • Add butter, bouillon, and salt.
  • Add water to cover and stir to mix ingredients.
  • Cook on HIGH for 1.5 hours, then cook on LOW for 2-3 hours or til butter beans are tender.

How to make Southern Butter Beans with Bacon

6 slices bacon, coarsely chopped
1 small onion, chopped
1 (28-ounce) bag frozen butter beans (about 5 cups)
4 cups (32-ounces) College Inn® Chicken Broth
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • In a large Dutch oven over medium heat, cook the bacon until crispy. Drain away all but about 2 tablespoons of the bacon grease, then return the pan to the heat. Add the chopped onion, and cook in the bacon grease until the onion is translucent, about 7 to 8 minutes. Add the beans, broth, salt, and pepper. Bring the broth to a boil, and then reduce the heat to a simmer and cook about 45 to 60 minutes or until tender.

These are so delicious you will DANCE AROUND THE TABLE!!! A good southern vegetable dish that goes well with chicken, pork or beef. My family always had a big garden and grew butter beans. We would sit on the back porch and shell beans to put into the freezer. We tried to pick the tinest beans because of their flavor. Now, with a busy life a purchased bag of these beans not only bring back memories, but are popular in our every day meals. Purchase the bag that states "tiny" or "baby" lima beans. They make a pretty dish when having guests. The ham and bacon drippings will provide some saltiness; therefore, use the small amount of salt and give it a taste test.

1 cup ham, chopped
1 teaspoon bacon drippings
4 cups water
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Bring water to boil and add beans, ham bits, bacon drippings, salt and black pepper.
  • Cook on a low simmer heat for 1 1/2 hours. Some water will evaporate, but let at least 2 cups remain. Check frequently to not let water completely boil out.
