I get so many rave reviews for this banana bread, courtesy of Southern living. My father-in-law will request this every couple of weeks and I can happily oblige due to the over ripe bananas we have in our home. The cream cheese keeps the bread nice and moist and the pecans are a nice added texture. :) I hope you enjoy it as much as we do. One thing to point out I prefer to use Nucoa Margarine, it doesn't burn, it doesn't contain milk or whey either) In the end..it makes a prettier loaf of bread)

3/4 cup butter, softened
8 ounces cream cheese, softened
2 cups sugar
2 large eggs
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups mashed bananas (1 1/4 pounds unpeeled bananas, about 4 medium)
1 cup chopped pecans
1/2 teaspoon vanilla extract

Steps:

  • Beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition.
  • Combine flour and next 3 ingredients; gradually add to butter mixture, beating at low speed just until blended. Stir in bananas, pecans, and vanilla. Spoon batter into 2 greased and floured 8- x 4-inch loafpans.
  • Bake at 350° for 1 hour or until a long wooden pick inserted in center comes out clean and sides pull away from pan, shielding with aluminum foil last 15 minutes to prevent browning, if necessary. Cool bread in pans on wire racks 10 minutes. Remove from pans, and cool 30 minutes on wire racks before slicing.

One day I had two ripe bananas and decided to make banana bread. I found this recipe in an old church recipe book. It really is good with pecans in the bread and in the topping, which makes it unique.

1/2 cup butter-flavored shortening
1-1/2 cups sugar
2 eggs
1 cup mashed ripe bananas (about 2 medium)
1 teaspoon vanilla extract
2 cups self-rising flour
1/2 cup buttermilk
3/4 cup chopped pecans
TOPPING:
1/4 to 1/3 cup mashed ripe bananas
1-1/4 cups confectioners' sugar
1 teaspoon lemon juice
Additional chopped pecans

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs. Blend in bananas and vanilla. Add flour alternately with buttermilk, beating well after each addition. Fold in pecans. , Pour into two greased 8x4-in. loaf pans. Bake at 350° for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes before removing to a wire rack; cool completely. , For topping, combine the banana, confectioners' sugar and lemon juice; spread over loaves. Sprinkle with pecans.

This version cuts down some of the fat intake and still remains pretty good. Make sure you bake this in TWO 8X4 loaf pans. If you put this in one 10X4 loaf pan it wil be too much batter and will not bake through properly.

3 c all purpose flour (sifted & measured
2 c sugar
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp each ginger, cloves, nutmeg
3 eggs
1 c canola oil
2 tsp vanilla extract
1 can(s) (15 1/4 oz.) can pineapple and juice
2 c chopped ripe firm bananas
1 c walnuts (chopped)

Steps:

  • 1. Mix dry ingredients in a large bowl.
  • 2. In a small bowl beat eggs until foamy.
  • 3. Add oil, vanilla, and blend. Pour oil and vanilla mixture into dry ingredients.
  • 4. Stir with a mixing spoon, do not use electric mixer, until moistened.
  • 5. Stir in pineapple and nuts, then stir in bananas - mix well but do not beat.
  • 6. Spoon into well greased 10 inch tube pan or can also be baked in 2 loaf pans.
  • 7. Preheat oven to 350 degrees. Bake tube pan 1 hour and 20 minutes or small loaf pans, check in 35 minutes.
  • 8. Frost with cream cheese icing if you like. Good plain!

This is an adaptation of a recipe I saw on a cooking show, tweaked to perfection. The recipe doesn't contain nuts, but they can be added to taste. The original recipe called for a caramel sauce and meringue, but I find that the tweaked recipe is delicious without them. I generally use a little less than 2 cups of flour when making this bread for density.

  • Preheat the oven to 180C.
  • Peel & mash the bananas (I use a potato masher - you'll see that they have a surprising amount of liquid in them!)
  • Chop the walnuts (I like to chop half of them finely, the other half quite "chunky").
  • Cream together butter and sugar. Add eggs, 1 at a time, beating after each addition.
  • Sift all the dry ingredients together; add to creamed mixture.
  • Stir in the mashed bananas and chopped nuts.
  • Pour the dough into 2 well-greased loaf pans (or how about 1 loaf and 12 muffins?); for about 1 hour 15min (fan assisted) or 1 hour 45min (non fan-assisted), until a toothpick inserted in centre comes out clean.

Banana Bread
2 cups flour
1 tsp baking soda
1 tsp salt
3 very ripe bananas (1 cup)
2 eggs
1 tsp vanilla extract (can substitute rum extract)
1/2 cup buttermilk
1 cup sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 cup chopped pecans or walnuts
Brown Butter Icing:
1/2 cup butter
3 cups sifted powdered sugar
1 tsp vanilla extract
tablespoons 3 to 4 water

Steps:

  • Banana Bread:
  • Sift the flour, baking soda and salt into a medium bowl and set aside. In a separate bowl mash the peeled bananas with a fork. Combine the eggs, vanilla, buttermilk, sugar, cinnamon, nutmeg and mashed bananas with a whisk or electric mixer at medium speed. Do not over-mix. The mixture should be lumpy.
  • With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter in to a buttered loaf pan.
  • Bake 45 minutes at 400 degrees F or until a toothpick inserted into the center of the bread comes out clean. Cool completely on a wire rack.
  • Brown Butter Icing:
  • In a small saucepan heat the butter over medium heat until golden brown, stirring occasionally. Remove saucepan from heat; stir in 3 cups sifted powdered and 1 teaspoon vanilla. Stir in enough water to make the icing the right consistency to drizzle. Drizzle on banana nut bread.
