PATRIOTIC TACO SALAD

One year, my daughter decided to celebrate her July birthday with a patriotic theme. This colorful and refreshing salad was the main dish on the menu. The kids gobbled it up! -Glenda Jarboe, Oroville, California

Number Of Ingredients 10

1 pound ground beef
1 medium onion, chopped
1-1/2 cups water
1 can (6 ounces) tomato paste
1 envelope taco seasoning
6 cups tortilla or corn chips
4 to 5 cups shredded lettuce
9 to 10 pitted large olives, sliced lengthwise
2 cups shredded cheddar cheese
2 cups cherry tomatoes, halved

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the water, tomato paste and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes., Place chips in an ungreased 13x9-in. dish. Spread beef mixture evenly over the top. Cover with lettuce. For each star, arrange five olive slices together in the upper left corner. To form stripes, add cheese and tomatoes in alternating rows. Serve immediately.

Using quinoa is a great way to boost the protein in this simple salad.

Number Of Ingredients 17

1/4 c uncooked quinoa
1/2 c water
1 pinch salt
1 lb ground beef
1-1/2 tsp chili powder
1-1/2 tsp cumin
1 tsp garlic salt
1/2 tsp black pepper
1 head iceberg lettuce
1-1/2 c chopped red onion
1-1/2 c chopped green bell pepper
2 c chopped tomato
1 can(s) black beans (15 oz.), drained & rinsed
1 can(s) kidney beans (15 oz.), drained & rinsed
1 c sliced black olives
3 c shredded 4-cheese mexican blend cheese
1 small bag tortilla chips, coarsely crushed

Steps:

  • 1. To prepare quinoa: Put quinoa in a fine mesh strainer & rinse thoroughly to remove any bitter residue.
  • 2. Put rinsed, drained quinoa in a small saucepan with a drizzle of olive oil. Toast over med.-high heat, stirring frequently for 3 minutes.
  • 3. Add 1/2 cup water & pinch of salt to saucepan. Bring to a boil. Cover pan & reduce heat to lowest setting. Cook for 15 minutes. Remove lid and fluff with a fork. Set aside.
  • 4. While quinoa is cooking, prepare ground beef: In a small skillet, brown ground beef until no longer pink; drain off fat. Add chili powder, cumin, garlic salt, and black pepper. Stir to mix in spices. Add cooked quinoa, mixing until combined. Set aside and let cool before adding to salad.
  • 5. In a large bowl, combine remaining salad ingredients, except tortilla chips. Add in cooled ground beef mixture. Stir to combine.

I got this recipe from a friend more than 20 years ago and it remains a family favorite espcially on hot summer days. I cook the beef early in the morning. Sometimes even chop all of the ingredients then, too, so all I have to do is throw everything together when it is time for dinner. Teenagers especially love this. That is a bonus! Have yet to find anyone who doesn't love this super easy salad for dinner.

1 lb ground beef
1 (1 1/4 ounce) envelope taco seasoning (I use Taco Seasoning Mix)
1 head iceberg lettuce, chopped
2 -3 roma tomatoes, diced
6 green onions, chopped (I like more)
1 (15 ounce) can red kidney beans or 1 (15 ounce) can black beans, drained
1 (15 ounce) can large black olives, sliced
1 cup cheddar cheese, shredded
1 (16 ounce) bottle Catalina dressing (I use Kraft)
1 (14 1/2 ounce) bag plain Doritos, crumbled into big chunks

Steps:

  • Brown ground beef, drain grease, adding taco seasoning and following directions on package. Chill.
  • When ground beef is cold, place in a large bowl and add all remaining ingredients.
  • Mix well and serve.
