SAUTEED RED CABBAGE

1 small head red cabbage (about 1 1/2 pounds)
1 tablespoon olive oil
3 tablespoons red-wine vinegar
coarse salt and ground pepper
2 tablespoons light-brown sugar

Steps:

  • Halve, core, and thinly slice red cabbage.
  • Heat olive oil in a large skillet over medium heat. Add cabbage and red-wine vinegar; season with coarse salt and ground pepper. Cook, tossing frequently, until cabbage is crisp-tender, about 15 minutes (add a splash of water if pan becomes dry).
  • Add light-brown sugar; toss until dissolved, about 30 seconds. Season again with salt and pepper, as desired.

SWEET AND SOUR RED CABBAGE WITH CRANBERRIES



Sweet and Sour Red Cabbage with Cranberries image

1 small red cabbage
2 tablespoons canola oil
Sea salt and freshly ground pepper
1/4 teaspoon ground mace
2 tablespoons balsamic vinegar
1 1/2 ounces brown sugar
3 tablespoons red wine
2 bay leaves
1/3 cup dried cranberries

Steps:

  • Discard the outer leaves of the cabbage, quarter it, remove the hard core and finely slice the leaves.
  • Heat the oil in a saucepan and sweat the cabbage with the salt and pepper and mace until it gives off a nutty aroma and is glossy and relaxed. Add the balsamic vinegar and the sugar and cook to evaporate it. Add the red wine and bay leaves, cover the pan, turn the heat down low and braise for 17 minutes, stirring halfway through.
  • Add the cranberries, cover the pan, and cook for another 10 minutes, stirring halfway through.

2 tablespoons extra-virgin olive oil
1 small onion, sliced
1/2 red cabbage, shredded
1/3 cup white or apple cider vinegar, eyeball it
2 rounded tablespoons sugar
1 teaspoon mustard seed
Salt and pepper

Steps:

  • Heat a skillet over medium high heat. Add oil and onion and saute 2 minutes. Add cabbage and turn in pan, sauteing it until it wilts, 3 to 5 minutes. Add vinegar to the pan and turn the cabbage in it. Sprinkle sugar over the cabbage and turn again. Season with mustard seed, salt and pepper and reduce heat a bit. Let cabbage continue to cook 10 minutes or until ready to serve, stirring occasionally.

1 tablespoon olive oil
1 onion, peeled, halved and thinly sliced into half-moons
Scant tablespoon Maldon salt (available at specialty food stores), or more as desired
1 red cabbage, finely shredded (about 10 cups, loosely packed)
3 tablespoons light brown sugar
1 1/2 cups red wine
1/2 cup freshly squeezed orange juice
1/4 teaspoon allspice, or more as desired
2 apples

Steps:

  • Place a large heavy-bottom saucepan or casserole over medium-low heat, and add oil. When oil is hot, add onion and salt. Sauté gently until onion is softened but not colored.
  • Add cabbage to pan on top of onion. Sprinkle sugar over cabbage; add wine, orange juice and allspice. Peel, core and finely chop apples, and add to pan. Cover, and let mixture steam until cabbage is wilted, about 10 minutes.
  • Gently stir to mix all ingredients; cover and reduce heat to its lowest possible setting. Cook about 2 hours, and adjust salt and allspice as desired. Serve hot, or allow to cool to room temperature and refrigerate overnight. (The flavors improve with reheating.)

SPICED BRAISED RED CABBAGE

Spice up your Christmas day trimmings with this red cabbage and Bramley apple side, with cinnamon, cardamom and star anise

1 star anise
1 cinnamon stick
5 cardamom pods
1 small red cabbage (about 900g)
1 garlic clove
2 large onions , chopped
1 Bramley apple , peeled, cored and finely chopped
3 tbsp brown sugar
3 tbsp red wine vinegar
25g butter

Steps:

  • Heat oven to 150C/130C fan/gas 2. Put the star anise, cinnamon stick and cardamom pods in the centre of a small square of muslin, and tie the ends together to make a bag. Put the spice bag in a medium flameproof casserole dish.
  • Remove any wilted or tough outer leaves from the cabbage. Cut it into quarters, then remove and discard the core. Shred the cabbage finely and layer up in the dish with the garlic, onions, apple and brown sugar.
  • Spoon over the vinegar and dot the top with the butter. Cover with a lid and cook for 21/2-3 hrs, stirring twice during cooking - the cabbage should be tender but not mushy. Remove the spice bag and serve.

¾ cup water
1 small head red cabbage, finely shredded
3 apples - peeled, cored and chopped
¼ cup packed brown sugar
1 cup distilled white vinegar
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
¼ teaspoon ground cloves
2 tablespoons butter, divided

Steps:

  • Place water in a large saucepan, and stir in cabbage, apples, brown sugar, vinegar, cinnamon, allspice, cloves, and 1 tablespoon butter. Bring to a boil. Reduce heat, and cover. Simmer 45 minutes, stirring occasionally, until cabbage is tender. Stir in remaining butter before serving.
