Sourdough, Wild Mushroom, and Bacon Dressing image

1 1/4 pounds sourdough bread, crusts trimmed, cut into 1/2-inch cubes (about 12 cups)
1/2 pound shiitake mushrooms, stems removed, coarsely chopped
1/2 pound oyster mushrooms, coarsely chopped
1/2 pound cremini mushrooms, thinly sliced
4 tablespoons canola oil, divided
Salt and freshly ground black pepper
3/4 pound slab bacon, cut into 1/2-inch dice
1 large Spanish onion, finely diced
5 cloves garlic, finely chopped
3 to 5 cups homemade chicken stock or low sodium canned chicken broth
2 large eggs, lightly beaten
3 tablespoons finely chopped fresh sage
2 tablespoons finely chopped fresh thyme leaves
1/2 cup chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Spread the bread onto a large baking sheet (or 2 smaller baking sheets) in an even layer and bake, stirring a few times, until lightly golden brown, about 12 minutes. Remove and let cool. Once cooled, put the cubes into a very large bowl.
  • Increase the heat to 375 degrees F. Combine the mushrooms in a large baking dish or baking sheet, toss with 3 tablespoons of the oil, and season with salt and pepper. Roast in the oven, stirring several times, until soft and golden brown, about 25 minutes.
  • While the mushrooms are roasting, heat the remaining 1 tablespoon of the canola oil in a large high-sided saute pan over medium heat. Add the bacon and cook, stirring occasionally, until golden brown and the fat has rendered, about 10 minutes. Remove the bacon with a slotted spoon to a plate lined with paper towels.
  • Remove all but 2 tablespoons of the rendered fat in the saute pan and place back on the stove over high heat. Add the onion and cook until soft, about 4 minutes. Add the garlic and cook for 1 minute. Add 3 cups of the chicken stock and the herbs, season with salt and pepper, and bring to a simmer.
  • Add the mushrooms to the bread, and then add the onion/stock mixture, egg, salt and pepper, and gently stir until combined. The dressing should be very wet, add more stock as needed. Scrape the mixture into a buttered 13 by 9 by 2-inch glass baking dish. Cover with foil and bake for 20 minutes. Remove the foil, and continue baking until the top is golden brown, about 30 to 40 minutes longer. Remove from the oven and let cool for 10 minutes before serving.

1/4 cup canola oil
Kosher salt and freshly ground pepper
3/4 pound slab bacon, cut into 1/2-inch dice

2 large Gala or Fuji apples, peeled, cored, chopped (about 3 cups)

3 tablespoons chopped fresh sage
3 large eggs, beaten to blend
1 3/4 cups (about) chicken stock or canned low-salt chicken broth

Steps:

  • Preheat oven to 350°F. Cook bread cubes in large roasting pan until crisp, about 20 minutes. Transfer to very large bowl.
  • Butter 3-quart baking dish. Melt butter in large skillet over medium heat. Add bacon; sauté until golden, about 8 minutes. Add onions and celery; sauté until crisp-tender, about 5 minutes. 1 packet green peppercorn marinade mix
1 packet zesty herb and garlic seasoning mix
7 to 8 pound pork crown roast
4 hot Italian sausages, casings removed
1 packet onion mushroom soup mix
1 (16-ounce) can fat-free, low-sodium chicken broth
1 (10-ounce) can golden mushroom soup
1 teaspoon dried thyme
1 teaspoon dried marjoram
1/3 cup fresh Italian parsley leaves, chopped
6 cups sourdough croutons
Salt and pepper

Steps:

  • Sourdough Dressing:
  • Preheat the oven to 325 degrees F.
  • Crown Roast:
  • In a shallow roasting pan, combine the Worcestershire sauce, green peppercorn marinade mix, and herb seasoning mix. Place the crown roast into pan, bone ends up. Wrap the bone ends with aluminum foil to prevent them from browning too quickly. Using a pastry brush or spoon, coat the entire meat surface with the sauce mixture. Transfer the pan to the oven and roast uncovered for 20 to 25 minutes per pound of meat, about 2 1/2 to 3 1/2 hours.
  • Sourdough Dressing:
  • In a large nonstick skillet, saute the sausages until browned, about 5 minutes. Add the onion mushroom soup mix, vegetable broth, and golden mushroom soup. Stir in the thyme, marjoram, parsley, and croutons. Season with salt and pepper.
  • Remove the roast from the oven about 45 minutes before it is done. Fill the cavity with the sourdough dressing. Return the roast to the oven and cook for the remaining 45 minutes. Transfer the crown roast to a platter and replace the foil with paper frills.

2 T. minced garlic
2 C. chicken broth (fat-free)
2 jars marinated artichoke hearts, drained
1/2 C. grated parmesan cheese
1 1/2 t. poultry seasoning
1 1/2 T. minced fresh rosemary leaves
Salt and pepper
1 large egg

Steps:

  • Spread bread cubes in a single layer in 2 pans, bake in 350 degree oven about 25 min or until golden. Turn cubes over, switch pan positions, etc. Trim and discard discolored mushroom ends, slice mushrooms. Over high heat in 10-12" fry pan, combine butter, mushrooms, onions, celery and garlic. Stir often until lightly browned, about 15 mins. Pour into large bowl. Add a little broth to pan and stir/scrape bits free and add. Pour 2 C. broth into bowl and add toasted bread, art hearts, cheese, seasoning and rosemary; mix well. Add salt and pepper to taste. Make a well in dressing, add egg, beat w/fork to blend then mix egg w/dressing. Spoon into a shallow 3-Qt (9x13) casserole. For moist dressing cover w/foil. 5 celery ribs, finely chopped

10 slices bacon, cooked and crumbled

I grew up calling any side dish of seasoned, moistened, and baked bread cubes "stuffing," but I've been corrected enough times to have changed my ways: If it goes inside the turkey or chicken, it's stuffing. If it's cooked in a dish of its very own, it's officially dressing. As it so happens, I like to serve this side with more than just poultry, and I especially love the browned crust, so dressing it is! Two other key factors in delivering dynamic texture are to toast the cubes of tangy sourdough bread first and to use a combination of thinly sliced and coarsely chopped mushrooms. Roasting the mushrooms before mixing with the other ingredients heightens their deep earthy flavor while cooking off any excess liquid. Studded with salty bits of bacon and fresh herbs, this side dish is destined to become a favorite of your Thanksgiving-or any dinner-table.

  • Raise the oven temperature to 375°F.
  • Combine the mushrooms in a large baking dish or rimmed baking sheet, toss with 3 tablespoons of the oil, and season with salt and pepper. Roast in the oven, stirring several times, until soft and golden brown, about 30 minutes.
  • While the mushrooms are roasting, heat the remaining 1 tablespoon oil in a large deep sauté pan over medium heat. Add the bacon and cook, stirring occasionally, until golden brown and the fat has rendered, about 10 minutes. Transfer the bacon with a slotted spoon to a plate lined with paper towels.
  • Pour off all but 2 tablespoons of the rendered fat in the sauté pan and return to the stove over high heat. Add the onion and cook until soft, about 4 minutes. Add the garlic and cook for 1 minute. Add 3 cups of the chicken stock, the sage, thyme, and parsley and season with salt and pepper. Bring to a simmer.
  • Add the mushrooms to the bread. Whisk the eggs in a small bowl and then whisk in a few tablespoons of the warm stock mixture. Add the eggs and the rest of the stock mixture to the bread, season with salt and pepper, and stir to combine. The dressing should be very wet; add more stock as needed. Scrape the mixture into the prepared baking dish. Cover with foil and bake for 25 minutes. Remove the foil and continue baking until the top is golden brown, 25 to 30 minutes longer. Remove from the oven and let cool for 10 minutes before serving.

Radicchio Salad with Sourdough Dressing image

Number Of Ingredients 10

3 ounce sourdough bread, crust removed, torn into small pieces (about 1 cup), divided
1 tablespoon plus 1/3 cup olive oil
Kosher salt
freshly ground pepper
1 small garlic clove
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon sugar
1 head radicchio, leaves separated, torn if large
2 scallions, thinly sliced

Steps:

  • Preheat oven to 425°. Toss half of bread with 1 tablespoon oil on a rimmed baking sheet; season with salt and pepper. Bake, tossing once, until golden brown, 8-10 minutes.
  • Pulse garlic, vinegar, mustard, sugar, remaining bread, and 2 tablespoons water in a blender to combine; let sit 5 minutes to soften bread. With motor running, gradually add remaining 1/3 cup oil; blend until smooth (bread will blend into dressing, thickening and flavoring it, while retaining some texture), about 2 minutes; season with salt and pepper.
  • Toss radicchio, scallions, croutons, and dressing in a large bowl; season with salt and pepper.
