3 pounds red potatoes, scrubbed
6 slices bacon
2 tablespoons all-purpose flour
6 cups milk
1 teaspoon salt, or more to taste
½ teaspoon ground black pepper
1 ¼ cups shredded Cheddar cheese, divided
1 ⅓ cups sour cream
4 green onions, chopped

Steps:

  • Set aside 4 potatoes; peel and cube the remaining potatoes.
  • Place cubed and whole potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until soft, about 20 minutes. Drain. Set the 4 whole potatoes aside; mash the rest.
  • At the same time, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble and set aside. Cut reserved whole potatoes into small cubes and set aside with bacon.
  • Heat flour in a large saucepan or pot over medium heat; slowly add milk, whisking until well blended. Add salt and pepper. Bring to a boil, stirring frequently, and cook for 8 to 10 minutes. Add mashed potatoes and stir well to combined. Remove soup from heat. Stir in 1 cup Cheddar cheese and mix until it melts completely. Stir in sour cream. Taste and adjust salt.
  • Serve warm topped with bacon, cubed potatoes, remaining Cheddar cheese, and green onions.

2 cups water
2 chicken bouillon cubes
3 cups cubed peeled potatoes
1/2 cup chopped onion
1/2 cup thinly sliced celery
3/4 teaspoon salt
1/2 teaspoon pepper
2 cups milk, divided
2 tablespoons all-purpose flour
1 cup sour cream
2 tablespoons chopped fresh parsley
1 tablespoon chopped chives

Steps:

  • In a 3-qt. saucepan over medium heat, combine water, bouillon, potatoes, onion, celery, salt and pepper; bring to a boil. Reduce heat cover and simmer for 15-20 minutes or until potatoes are tender. Add 1-3/4 cups milk. Combine flour with remaining milk; stir to form a smooth paste. Add to soup, stirring constantly. Bring to a boil; boil and stir for 2 minutes or until thickened and bubbly. Add a small amount of hot liquid to sour cream; stir to mix. Gradually add to soup, stirring constantly; heat through but do not boil. Add parsley and chives just before serving.

6 strips bacon
1 large onion, chopped
3 large cloves garlic, chopped
3 pounds unpeeled russet or baking potatoes, cut into 1-inch chunks
6 cups vegetable or chicken broth
Kosher salt
Black pepper, freshly ground
1/2 cup sour cream
1/2 cup cheddar cheese, shredded
1/4 cup chives, chopped

Steps:

  • In a large pot, cook bacon over medium-low heat until crisp, about 3 minutes per side. Remove bacon to a paper-towel-lined plate, break into small pieces and set aside. Drain from the pot all but 2 tablespoons fat. Add onion and increase heat to medium. Cook until golden, about 12 minutes. Add garlic; cook 1 more minute. Add potatoes and broth and bring to a boil over high heat. Reduce heat and simmer until potatoes are tender, about 25 minutes. With an immersion blender, purée soup until chunky-smooth (or purée in batches in a food processor fitted with knife blade). Season to taste with salt and pepper. Serve hot, in bowls, topped with bacon bits, sour cream, cheddar cheese, and chives.

⅓ cup light sour cream
1 tablespoon chopped fresh chives
1 tablespoon lemon juice
salt and white pepper to taste
1 tablespoon olive oil
1 tablespoon butter
1 pound fresh asparagus, trimmed and coarsely chopped
½ onion, chopped
1 clove garlic, minced
½ teaspoon dried thyme
2 tablespoons all-purpose flour
6 cups chicken stock
2 Yukon Gold potatoes, cubed
salt and white pepper to taste
4 ounces lump crabmeat

Steps:

  • In a small bowl, stir together the sour cream, chives and lemon juice. Season with salt and white pepper. Cover and refrigerate until needed to blend the flavors.
  • Heat the olive oil and butter in a soup pot over medium heat. Add the asparagus and onion; cook and stir until onion is soft, about 5 minutes. Add the garlic and thyme, and cook just until fragrant, about 1 minute. Stir in the flour until smooth, then gradually whisk in the chicken stock to avoid causing lumps. Add the potatoes and bring to a simmer. Simmer over medium heat until potatoes are tender, about 20 minutes.
  • Puree the soup in a food processor or blender, or use a stick blender in the pot. Return to the pot and bring to a gentle simmer. Season with salt and white pepper.

This is one of our favorite comfort foods around here. It's perfect for those who want a rich creamy soup without cheese. The sour cream adds an amazing richness. Look for long leggy broccoli since you use more stem than top in this recipe. I often find I don't have a full pound of stems, but it seems to work out fine anyway.

4 cups water
1 lb broccoli stem
4 lbs potatoes, peeled and diced into 1 inch cubes
1 large onion
1 large garlic clove
2 teaspoons dill
4 tablespoons butter
1 1/3 cups sour cream
2 tablespoons fresh parsley
1 cup broccoli floret
salt

Steps:

  • Combine all ingredients except sour cream, parsley and broccoli florets in a large stock pot. Resist the urge to add more water -- it doesn't seem like enough, but it is, and if you add more, the consistency of the soup will be thin and watery.
  • Bring to a boil and simmer until potatoes and broccoli are tender.
  • Meanwhile, steam the broccoli florets and mash them with a potato masher or fork.
  • Remove about three or four cups of the soup mixture and mash that as well.
  • Add the mashed mixture and mashed florets to the pot and stir. The mixture should be thick like stew. If it's still runny, mash some more.
  • Remove from heat, stir in sour cream, salt to taste and serve.

1/4 lb bacon, Diced
1 medium onion, Diced
2 celery ribs, Diced
1 tablespoon flour
1 cup water
2 cups chicken broth
4 large potatoes, Cubed
1 1/2 cups sour cream

Steps:

  • Cook the bacon in a heavy soup pot until they start to brown.
  • Add the onion and celery, cook until soft.
  • Sprinkle in the flour and cook for three minutes, add water and broth.
  • Add potatoes and slowly bring to a boil. Reduce heat and simmer until the potatoes are soft (30-40 minutes).
  • In a separate bowl ladle in 2 cups of the soup broth. Whisk sour cream into broth until blended.
  • Whisk mixture back in to the soup. Heat 3 minutes longer, adjust seasonings with Salt & Pepper to taste, ENJOY!

•3 large garlic cloves, pressed
•3 cups 1/2-inch cubes peeled Yukon Gold potatoes (about 1 1/4 pounds)
•1 2 x 2-inch piece Parmesan cheese rind (optional)
•1 Turkish bay leaf
•6 cups vegetable broth or water
•2 tablespoons chopped fresh chives (for garnish)

Steps:

  • Whisk sour cream, lemon juice, and lemon peel in small bowl to blend. Cover and chill. DO AHEAD: Can be made 4 hours ahead. Keep chilled. Melt 1 tablespoon butter with 1 tablespoon olive oil in heavy large pot over medium-high heat. Add cabbage; sprinkle lightly with salt and freshly ground black pepper and sauté until cabbage is almost tender but not brown, 6 to 8 minutes. Using slotted spoon, transfer 1 cup cabbage to small bowl and reserve for garnish. Add 1 tablespoon butter to pot with cabbage; add leeks, celery, carrots, turnips, and garlic. 2 pounds reddish brown-skinned sweet potatoes peeled, and cut into 1" pieces
1 small butternut squash - (abt 1 1/4 lbs) halved, seeded, peeled, and cut into 1" pieces
1 onion quartered
1 tablespoon finely-chopped fresh thyme
1 tablespoon finely-chopped fresh sage
1 1/2 tablespoons olive oil
5 cups chicken stock
1 pinch freshly-grated nutmeg
Salt to taste
Freshly-ground white pepper to taste
1/2 cup sour cream
1 teaspoon finely-chopped fresh thyme
1 teaspoon finely-chopped fresh sage

Freshly-ground white pepper to taste
Finely-chopped fresh thyme for garnish

Steps:

  • Preheat an oven to 425 degrees. In a large bowl, combine the sweet potatoes, squash, onion, thyme, and sage. Add the olive oil and toss to coat all the vegetables evenly with the oil. Spoon the mixture onto a large baking sheet, spreading out the vegetables in a single layer. Roast the vegetables, stirring twice, for 35 to 40 minutes, or until caramelized. Use long oven mitts to protect your hands when stirring. Remove from the oven and place half of the vegetables in a food processor fitted with the metal blade. Add 2 cups of the chicken stock and process until smooth. Place in a large saucepan and repeat with remaining vegetables and 2 cups of the stock. Add the remaining 1 cup stock, the nutmeg, salt, and pepper to the soup, and bring to a sinuner over medium heat. Taste for seasoning. Meanwhile, prepare the Herbed Sour Cream: In a small bowl, stir together all the ingredients. Taste for seasoning. To serve, ladle the soup into bowls. Swirl a spoonful of the Herbed Sour Cream into each bowl and sprinkle with the thyme. Serve immediately. Advance Preparation: Can be prepared up to 1 day ahead, covered, and refrigerated. Reheat gently. This soup also freezes well for up to 1 month. Adjust the seasonings when you reheat the frozen soup. This recipe yields 6 servings.

2 teaspoons olive oil
Salt and freshly ground black pepper
1 bay leaf
6 thyme sprigs

½ cup sour cream
2 tablespoons minced chives

  • 1. Heat oven to 375 degrees. Toss potatoes in oil and ½ teaspoon salt. Spread on a rimmed baking sheet and bake uncovered until tender, about 35 minutes. Transfer to a pot with a tight-fitting lid. Pour 1 cup boiling water into baking sheet and swirl to deglaze, then pour into pot with potatoes. Add bay leaf, thyme and 5 cups boiling water, cover tightly, and set aside for 1 hour. Remove bay leaf and thyme sprigs.
