This bread is a family favorite. It is very moist, freezes well, and makes a great addition to school lunches with peanut butter spread on a slice.

4 very ripe bananas, divided
1 cup white sugar
¾ cup butter, melted and cooled
2 large eggs
⅓ cup sour cream
1 teaspoon vanilla extract
2 cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ cup chopped walnuts
2 teaspoons white sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 5x9-inch loaf pan.
  • Mash 2 bananas in a bowl with a fork. Place remaining 2 bananas in a separate bowl with 1 cup sugar and beat the bananas and sugar with an electric mixer until creamed and fluffy, 3 minutes. Beat in melted butter, eggs, sour cream, and vanilla extract until thoroughly combined.
  • Whisk flour, baking powder, and salt together in a bowl and stir the flour mixture into banana-sugar mixture. Fold in mashed bananas and walnuts. Pour batter into prepared loaf pan and tap the pan on the counter several times to remove any air pockets. Stir 2 teaspoons sugar with cinnamon in a small bowl and sprinkle the cinnamon sugar over the top of the loaf.
  • Bake in the preheated oven until bread is golden brown on top and set in the center, 1 hour and 15 minutes; rotate bread pan in oven halfway through baking. Cool in the pan for 10 minutes before removing to finish cooling on a wire rack.

¼ cup white sugar
1 teaspoon ground cinnamon
¾ cup butter
3 cups white sugar
3 eggs
6 very ripe bananas, mashed
1 (16 ounce) container sour cream
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
½ teaspoon salt
3 teaspoons baking soda
4 ½ cups all-purpose flour
1 cup chopped walnuts

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3 inch loaf pans. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture.
  • In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in salt, baking soda and flour. Stir in nuts. Divide into prepared pans.
  • Bake for 1 hour, until a toothpick inserted in center comes out clean.

- 1/4 cup butter, softened
- 1/2 cup sugar
- 1 egg
- 1/2 cup sour cream
- 1/2 tsp. vanilla
- 1 cup flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- pinch of salt
- 1 banana, mashed
- 1/2 cup semisweet chocolate chips
- 1/2 cup chopped walnuts

Steps:

  • In the large bowl of mixer, beat together first 5 ingredients til mixture is blended. Add the flour, baking powder, baking soda, and salt all at once. Beat til blended. Don't overbeat. Stir in banana, chocolate and walnuts.
  • Divide mixture between 2 greased 6 x 4 inch loaf pans. Place pans on cookie sheet and bake at 350 for 30 to 35 minutes or til cake tester inserted in center comes out clean. Allow to cool in pan for 10 minutes, remove loaves from pan and continue cooling on rack. Brush tops lightly with sour cream glaze. Makes 2 loaves
  • Sour Cream Glaze: 1 Tbsp. sour cream 1/4 cup sifted powdered sugar 1/4 tsp. vanilla 2 Tbsp. finely chopped walnuts Stir together all ingredients til blended. The recipe for the bread can be doubled, making 4 loaves. The bread freezes well. Wrap in double thicknesses of plastic wrap and then foil. Remove wrappers while defrosting

1/2 cup salted butter, room temperature (1/4 lb.)
1/2 cup sugar
1 egg
2 large ripened bananas, mashed
1 teaspoon vanilla
1 cup flour
1 teaspoon baking soda
2 tablespoons cocoa powder
1/2 cup sour cream
1 cup mini chocolate chip (regular sized will work, also)
1/2 cup walnuts, chopped (optional)

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 9- x 5-inch loaf pan with non-stick spray.
  • In a large bowl, cream butter and sugar together until light and fluffy. Stir in egg, mashed bananas, sour cream, and vanilla until well blended. Add baking soda, cocoa, and flour. Mix everything until well incorporated (about 3 minutes in a Kitchenaid mixer). Add chocolate chips and walnuts, if used.
  • Transfer batter into loaf pan and bake for 50-60 minutes. Test by inserting a toothpick into center of loaf and checking to see if it comes out clean when you pull it out.

1 1/2 cups mashed bananas
2 3/4 cups flour, sifted
