ROASTED SWEET POTATO AND GINGER SOUP
There are some flavors that beg to be paired, and sweet potatoes and ginger are in that category. This smooth, puréed soup is rich and comforting, ideal for fall evenings.

Steps:
- Preheat the oven to 450°F. Poke the sweet potatoes with a fork, wrap in aluminum foil, and bake in the oven for 1 hour. Remove from the oven and let cool to room temperature.
- Cut the sweet potatoes in half and scrape out the flesh. Heat the oil over medium heat in a large Dutch oven or heavy soup pot.
- Add the onions and ginger, and cook over medium heat, stirring occasionally, for 5 minutes or until the onions are translucent.
- Add the jalapeño, coriander, and nutmeg and cook for 3 minutes or until fragrant.
- Add the roasted sweet potato flesh and stock to the pot. Simmer for 10 minutes. Remove from the heat and purée with a handheld immersion blender or food processor until smooth. Season with salt.
- Divide the soup among 6 serving bowls and sprinkle with the green onions.

Steps:
- Heat 2 tablespoons oil in heavy large pot over medium-high heat.
- Add sausage; cook until brown, stirring often, about 8 minutes. Transfer sausage to paper towels to drain.
- Add onions and garlic to pot and cook until translucent, stirring often, about 5 minutes.
- Add all potatoes and cook until beginning to soften, stirring often, about 12 minutes. Add broth; bring to boil, scraping up browned bits. Reduce heat to medium-low, cover, and simmer until potatoes are soft, stirring occasionally, about 20 minutes.
- Using potato masher, mash some of potatoes in pot. Add browned sausage to soup. tablespoon oil.
- Stir in spinach and simmer just until wilted, about 5 minutes.
- Turn off the heat.
- Stir in remaining 1 Tbsp of olive oil to allow the fresh flavor to come through.
- Season with salt and pepper.
- Divide among bowls and serve.
LEEK AND POTATO SOUP
This soup is related to brotchán foltchep, a classic leek and oatmeal soup (also known as brotchán roy) that combines leeks, oatmeal and milk. This version is thickened with potatoes instead of oatmeal and flavored with chicken stock instead of milk. Serve it with savory whole wheat scones or slices of brown soda bread.

- Melt butter in heavy large saucepan over medium heat. Add leeks; stir to coat with butter. Cover saucepan; cook until leeks are tender, stirring often, about 10 minutes. Add potatoes. Cover and cook until potatoes begin to soften but do not brown, stirring often, about 10 minutes. Add 4 1/2 cups stock. Bring to boil. Reduce heat, cover and simmer until vegetables are very tender, about 30 minutes.
- Puree soup in batches in processor until smooth. Return to saucepan. Thin with additional stock if soup is too thick. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.) Bring soup to simmer. Ladle into bowls. Garnish with chives and serve.

I have reservations about this dish the first time I tasted it, but boy, was I wrong! Sweet potatoes & sausage are a great combination. Don't leave out the thyme, it is essential. Great comfort food on cold winter days. This is a Sugar Buster's recipe.

- Cooked diced sausage in a soup pot with a little of the butter for about five minutes.
- Drain making sure to pour off all accumulated fat.
- In the empty pot, melt the butter and saute the onion until soft.
- Add the thyme and sweet potatoes and cook for another five minutes.
- Add the cooked sausage, syrup and broth.
- Cover and simmer over low heat for 45 minutes or until the potatoes are tender.
- Stir in the cream. Warm but do not boil.
- If you want a soup with a thicker consistency, half way through the cooking time ladle some of the soup without the sausage into a blender or hand mixer and whirl making a creamy texture. Add this back to the soup pot and continue cooking.

LEEK, POTATO, AND SAUSAGE SOUP

- In a dry heavy saucepan toast the cuminseed and the caraway seeds over moderate heat, stirring for 2 to 3 minutes, or until they are very fragrant, and transfer them to a plate. In the pan cook the leek in the butter, stirring occasionally, for 5 minutes, or until it is very soft, stir in the broth and the potato, peeled and cut into 1/2-inch dice, and bring the liquid to a boil. Simmer the mixture for 10 minutes, or until the potato is tender, stir in the toasted seeds, the kielbasa, the cream, and salt and pepper to taste, and simmer the soup for 5 minutes. Just before serving, stir in the spinach.

- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, 12 to 15 minutes. Drain and set aside.
- Heat oil in a large skillet over medium heat. Crumble sausage into skillet and cook, stirring frequently, until browned and no longer pink, about 7 minutes. Remove sausage with slotted spoon and drain on paper towels.
- Pour off all but 1 tablespoon oil from the skillet. Heat oil over medium heat and add bell peppers, onion and garlic and cook until softened, about 7 minutes.
