GARLIC AND OLIVE BUTTER

- Place the garlic in a food processor and process until chopped. Add the softened butter and process until smooth. Add the olives to the food processor and pulse them into the mixture until they are just barely combined. Roll garlic olive butter into logs using double layers of plastic food wrap. Store butter logs in the freezer. Cut off discs to top grilled chicken or broiled fish.
- For Garlic Olive Bread: Soften 1/4 pound of butter to make 1 loaf of garlic olive bread. Toast a split loaf of bread under hot broiler. Spread with softened garlic olive butter on each half of bread. Sprinkle bread with a little grated cheese and return bread to broiler to melt butter and cheese. Slice and serve.
SOFTENED BUTTER WITH OLIVE OIL
We use this in place of those expensive butters. I like that it softens up so quickly, and that it contains olive oil. I usually double this recipe to make a large tub. Remove from refrigerator for a few minutes prior to buttering toast or for anything really soft. You can add honey to this to make a really nice honey butter....

- 1. Soften 3 sticks of butter. Unwrap and place in food processor with blade in place. Pulse until mixed.
- 2. Pour in 1/2 cup olive oil into butter, and blend until well mixed.
- 3. Pour into container. Refrigerate. It will be almost liquid form until it has a chance to refrigerate.
- 4. If desired, stir in honey to make honey butter, fruit spreads to make fruit butter, garlic or spices to make flavored butters.
SOFT SPREAD BUTTER
This is a homemade margarine or soft spread 'butter'. While it is not lower in calorie, it has a higher ratio of unsaturated to saturated fat than butter, and unlike margarine, it contains no trans fat. Create a flavored butter by adding garlic or cinnamon, or anything you chose!

- In a lidded, plastic storage container stir butter until it has a smooth, frosting-like consistency.
- Slowly, one tablespoon at a time, stir in the first 1/2 cup of oil; mix until smooth. Stir in the remaining oil a little more quickly, mixing well.
- Refrigerate for 3 hours, or until set.
- Store in refrigerator. If the 'butter' melts after being left out, refrigerate to restore solidified quality.
