Strawberry-Sauced Crunchy Fruit Salad image

This salad is beautiful, healthy, and delicious! The fruits can be chopped to use as a salad or sliced thinly and layered in a trifle bowl for a truly stunning presentation.

2 ½ cups crispy rice cereal
1 ½ cups chopped hazelnuts
¾ cup packed brown sugar
½ cup margarine, melted
1 pound fresh or frozen sliced strawberries
⅓ cup orange juice
2 tablespoons confectioners' sugar
1 tablespoon vanilla sugar
2 Red Delicious apples, cored and diced
2 Golden Delicious apples, cored and diced
2 Granny Smith apples, cored and diced
4 seedless oranges, peeled and diced
1 (20 ounce) can crushed pineapple, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place the rice cereal and nuts into a baking pan. Stir in the brown sugar and margarine. Bake for 10 to 15 minutes, until toasty. Stir occasionally. Set aside to cool.
  • In the container of a blender or large food processor, combine the strawberries, orange juice, confectioners' sugar and vanilla sugar. Puree into a smooth sauce. Set aside.
  • To make the salad, toss the red, green and yellow apples with oranges and pineapple in a large serving bowl. Sprinkle with the nut crunch and spoon strawberry sauce over the top. Or you can serve the toppings on the side.

2 teaspoons strawberry jam
1 tablespoon balsamic vinegar
3 tablespoons extra-virgin olive oil, eyeball it
Salt and pepper, to taste
1 pint strawberries, sliced
4 to 5 cups chopped romaine or mixed greens of any kind

Steps:

  • Place jam in a medium bowl and whisk in vinegar then extra-virgin olive oil. Season the dressing with salt and pepper. Add the strawberries and greens to bowl and toss to coat evenly in dressing.

My mom's cousin had a catering business many years ago, and this was one of her most requested dishes. It is called Snow Salad because of its pure white and fluffy appearance, but it is not a traditional salad. I have served it at many parties and get-togethers and am always asked for the recipe. Give it a try--I think you'll love it as much as we do!

1 (1/4 ounce) package unflavored gelatin, such as knox
1/4 cup cold water
1 cup boiling water
2/3 cup sugar
1 teaspoon vanilla extract
16 ounces sour cream
1 (8 ounce) container Cool Whip
1 (4 3/4 ounce) package salada strawberry-flavor danish dessert mix
1 (10 ounce) carton frozen strawberries or 1 cup sliced fresh strawberries

Steps:

  • Dissolve gelatin in cold water.
  • Add boiling water and stir well to dissolve.
  • Add sugar and vanilla.
  • Stir to dissolve.
  • Whisk in sour cream until mixture is smooth.
  • Blend in Cool Whip with whisk.
  • Pour mixture into large (6 cup) ring mold.
  • Let set in refrigerator a few hours or overnight.
  • For sauce, follow directions on Salada Danish Dessert package for making sauce.
  • Add strawberries; mix well.
  • To serve, unmold salad and serve with sauce in bowl in center.
  • Slice salad and ladle sauce over each piece.
  • Can also be poured into pecan or graham cracker crust and served as dessert.
  • Can also use pie filling in place of sauce.

I was asked to take a salad to a backyard get-together and didn't want to just take the same old thing, so I came up with this recipe, which combines features of several different salads I've had in the past. Look for my recipes for balsamic vinaigrette and creamy orange soy dressings on this site. Both are excellent with this salad.

1 pint strawberries, quartered
1 (10 ounce) bag iceberg salad
1 (5 ounce) bag baby spinach
1 (4 ounce) container crumbled feta cheese
1 small red onion, thinly sliced into rings
freshly ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread walnuts on a baking sheet.
  • Toast in preheated oven until walnuts start to turn golden brown and become fragrant, 5 to 7 minutes. Let cool, about 5 minutes.
