This takes 5 minutes in a pan. You want to barely cook these as noted to keep the lightly crunchy natural sweetness of this seasonal delicacy! Wash and trim the tips and pull larger strings off the snow peas.

1 ½ teaspoons butter
1 clove garlic, minced
½ teaspoon Italian seasoning
½ pound fresh snow peas, trimmed
1 tablespoon water, or more as needed
1 tablespoon extra-virgin olive oil
1 teaspoon fresh lemon juice
kosher salt and ground black pepper to taste

Steps:

  • Melt butter in a skillet over medium heat; cook and stir garlic until fragrant, about 30 seconds. Stir in Italian seasoning and snow peas. Add water; cook and stir until peas are bright green and tender, about 2 minutes. Stir in olive oil and lemon juice. Season with salt and black pepper.

Sugar Snap Peas with Onions and Bacon image

3 slices bacon, cut into 1/2-inch pieces
1 small yellow skinned onion, peeled and chopped
1 pound sugar snap peas
1/2 cup water
Salt and pepper

Steps:

  • In a medium skillet over medium high heat, brown chopped bacon. Using a slotted spoon, remove bacon to a paper towel lined plate. Add onion to the pan. Saute chopped onions 3 minutes or so, until they are just tender. Add peas and water to the pan. Cover and cook peas 5 minutes. Uncover and allow the liquid to cook almost out of the pan. Add bacon back to the skillet and remove pan from heat. Transfer to a serving dish and enjoy!

DUMPLING SOUP WITH BACON AND SNOW PEAS



Dumpling Soup With Bacon and Snow Peas image

4 slices thick-cut bacon, cut into 1/2-inch pieces
2 tablespoons minced peeled ginger
1 bunch scallions, chopped
Kosher salt
1 teaspoon sugar
4 cups low-sodium chicken broth
2 tablespoons cornstarch
2 tablespoons sesame oil
Freshly ground pepper
4 ounces snow peas, trimmed and cut into 1-inch pieces
2 plum tomatoes, cut into 1-inch pieces
1 bunch watercress, tough stems trimmed, cut into 2-inch pieces
1 pound frozen Asian-style dumplings or pot stickers

Steps:

  • Cook the bacon in a Dutch oven or large pot over medium-high heat until browned around the edges, about 5 minutes. Add the ginger, half of the scallions, 1 teaspoon salt and the sugar; stir-fry 30 seconds. Add the broth and 1 cup water; cover and bring to a boil. Meanwhile, combine the cornstarch and 3 tablespoons water in a small bowl. Add the sesame oil and 1 teaspoon pepper and stir to combine.
  • Add the snow peas, tomatoes, watercress and dumplings to the boiling broth mixture. Stir the cornstarch mixture again and add to the soup. Cook, stirring occasionally, until the dumplings are tender and the broth thickens slightly, 3 to 5 minutes. Stir in the remaining scallions and season with pepper.

I got this from an Atkins friendly cookbook. It's now my favorite way to cook peas. Also works very well with green beans.

1 1/2 lbs snow pea pods
5 -8 slices bacon, cut into bite sized pices. (depending on taste)
1/4 cup hazelnuts, chopped

Steps:

  • Cook bacon in a large skillet until done.
  • Meanwhile in a small skillet, roast chopped hazelnuts for aobut 5 minutes on medium-low heat.
  • When bacon is done, add pea pods and cook for 3 mintues.
  • Add roasted hazelnuts.
  • Stir together and cook 2 more minutes.
  • Serve.
