Sausage, onions, peppers and mushrooms turn frozen pierogies into a delicious treat. This simple meal takes only 45 minutes to prepare. This recipe is so versatile. Try experimenting with different sausages, vegetables and cheeses.

½ pound bulk Italian sausage
1 tablespoon olive oil
1 onion, sliced
1 small green bell pepper, sliced
1 small red bell pepper, sliced
2 cloves garlic, minced
1 (4 ounce) can sliced mushrooms, drained
2 teaspoons dried parsley
½ teaspoon garlic powder
⅛ teaspoon dried oregano
⅛ teaspoon dried basil
1 pinch crushed red pepper flakes
salt and black pepper to taste
1 tablespoon olive oil
20 ounces frozen pierogies
1 (8 ounce) package shredded mozzarella cheese
¼ cup grated Romano cheese

Steps:

  • Heat a large skillet over medium-high heat and stir in the Italian sausage. Cook and stir until crumbly, evenly browned, and no longer pink. Drain and discard any excess grease, then remove the sausage from the skillet and place into a bowl.
  • Heat 1 tablespoon of olive oil in the skillet. Stir in the onion, green bell pepper, and red bell pepper; cook and stir until the onion is golden, and the peppers are tender, about 8 minutes. Stir in the garlic and mushrooms; cook for 1 minute more. Season with parsley, garlic powder, oregano, basil, and red pepper flakes. Season to taste with salt and pepper. Stir to combine, then scrape the vegetables into the bowl with the sausage.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Place the pierogies into the hot oil, and cook until golden brown on each side and hot in the center, about 5 minutes. Spoon the sausage and vegetable mixture over the pierogies. Sprinkle with mozzarella cheese and Romano cheese. Cover, and cook until the cheese has melted.

1 dozen mrs. t's frozen potatoe pierogies (or any brand you like)
1 can(s) cream of chicken soup (i use lowfat)
1 can(s) sliced mushrooms drained (can leave out)
2 c cooked cubed or shredded chicken
1 c frozen peas

Steps:

  • 1. Heat oven to 350. Spray a 2 qt casserole with cooking spray. Thaw pierogies in boiling water for 5 mins. Drain and place in casserole dish. In large saucepan, combine soup, mushrooms, peas and chicken. Cook stirring about 5 mins just until heated. pur over pierogies and bake for 15 mins.

1 can (4 ounce size) sliced mushrooms
1 cup frozen peas
2 cups cubed or shredded cooked chicken

Steps:

  • Preheat oven to 350 degrees. Spray a 2-quart casserole with cooking spray. Thaw pierogies in boiling water for 5 minutes, drain, and place in casserole dish. In a large saucepan, combine soup, mushrooms, peas and chicken. Cook, stirring, about 5 minutes or until heated through. Pour over pierogies. Bake 15 minutes.
