Growing up in the South, we had a neighbor that I adored, Cris Juneau, French Louisianian from New Orleans' way. She made the BEST smothered steak. Reconnecting when I was adult, she cooked her infamous dish from memory, but I watched and recreated to paper. Serve with Recipe # 27361. Simply pure southern comfort food!

1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon onion powder
4 pieces cube steaks (butcher tenderized)
1 cup flour
1/2 cup oil
2 cups water
1 beef bouillon cube
1 large yellow onion, sliced rings

Steps:

  • In small bowl mix 4 seasonings.
  • Place flour in a flat surfaced dish (save unused flour for smothering).
  • Sprinkle front and back side of each steak piece and rub deep into groves of steak.
  • Heat oil to medium high in skillet (cast iron is best).
  • Dredge each piece in flour, press in with finger tips. Re-dredge in flour again and place carefully in hot oil for 1 minute and then turn back heat to medium.
  • Fry steak 4-5 minutes on each side. Remove, drain on a separate plate.
  • Remove all but 2-3 Tbs of oil, over medium high heat, sprinkle with 3 Tbs flour, whisking until well mixed and roux browns.
  • Add water, bouillon cube and remaining seasoning. Mix until gravy begins to thicken slightly. Test taste for spice as this is the time to adjust (salt or water).
  • Replace steak back in gravy and spread onion rings over the tops.
  • Cover and simmer 30-40 minutes.

2 lbs ground beef
1 (10 1/2 ounce) can condensed French onion soup
3/4 cup breadcrumbs
1 egg
1 teaspoon garlic powder
2 tablespoons flour
1 medium onion, chopped (optional)
1/4 teaspoon salt (to taste)
1/8 teaspoon pepper (to taste)
1 (7/8 ounce) package beef gravy (I use McCormick) or 1 (7/8 ounce) package mushroom gravy (I use McCormick)
3/4 cup water (for the gravy)
1 tablespoon flour (for the gravy)

Steps:

  • Mix the ground beef with 1/2 cup french onion soup, bread crumbs, egg, garlic powder, salt and pepper.
  • Shape beef into meatballs, chunks, or patties.
  • In a skillet on med high heat, sear the ground beef until the meat has a nice char.
  • Add the onions to the pan (if using).
  • Turn the heat to low and cover so that the beef can cook all the way through (about 5-10 minutes depending on thick the meat is).
  • While the meat is cooking mix the gravy packet with the water.
  • Remove the meat from the pan and set aside.
  • Remove all drippings except for about 2-3 tablespoons left in the pan.
  • On medium heat, add the flour and cook until flour turns a light brown color (roux).
  • Add the rest of the french onion soup and the gravy and water mixture into pan. Mix rapidly but carefully, the liquid will start to thicken quickly.
  • You can add more water until the gravy reaches your desired consistency.
  • Add the beef back to the gravy and mix well.
  • Season the gravy with additional salt and pepper to taste.
  • Serve hot with mashed potatoes, rice, and some nice veggies.

1 egg
1/4 cup milk
1/4 cup dry breadcrumbs
1 (1 1/4 ounce) envelope brown gravy mix, divided
1 teaspoon dried onion flakes
1/2 lb lean ground beef
1/2 cup water
1 tablespoon prepared mustard

Steps:

  • In a bowl, whisk the egg and milk.
  • Add bread crumbs, 1 tablespoon gravy mix and onion.
  • Crumble beef over mixture and mix well.
  • Shape into two patties, about 3/4 inches thick.
  • Broil 3-4 inches from the heat for 6-7 minutes on each side or until meat is no longer pink and a meat thermometer reads 160°.
  • Place the remaining gravy mix in a small saucepan; stir in the water and mustard. Bring to a boil; cook and stir until thickened. Serve over patties.

I like the old fashioned comfort food taste of this dish. It came from a magazine I had and I revamped it to my personal taste.

1 1/2 lbs extra lean ground beef
1 (6 ounce) package seasoned stuffing mix (seasoned, Stove Top works great)
1 1/4 cups water
3/4 cup onion, chopped
2 (8 ounce) cans beef gravy

Steps:

  • Preheat oven to 375.
  • Mix together ground beef, stuffing mix, water and onions until well combined.
  • Shape mixture into 6 1/2-inch patties. Place into 15x10x1 baking pan.
  • Bake for 25 minutes or until cooked through.
  • Meanwhile heat up brown gravy.
  • Serve over patties.
