SONNY'S BBQ SAUCE

2 ounces ancho chile peppers
2 cup water
1 cup ketchup
1 cup cider vinegar
1/2 cup Worcestershire Sauce
2 tablespoon paprika
2 tablespoon dry mustard
1 teaspoon freshly ground pepper
1/2 teaspoon black peppercorns
1/2 lemon
1/4 cup butter

Steps:

  • Toast anchos in a large skillet over medium heat, turning once, until they are softened, 4 to 5 minutes.
  • Transfer anchos to a saucepan, add water, and bring to a boil. Reduce heat and simmer anchos for 5 minutes. Remove from heat, let stand 10 minutes.
  • Remove anchos, reserving water. Discard seeds and stems. Puree anchos and reserved water in a blender until smooth.
  • Transfer ancho mixture and remaining ingredients, except lemon and butter, to a saucepan.
  • Squeeze juice from lemon half into the mixture and add lemon half.
  • Bring sauce to a boil; reduce heat and gently boil for 30 minutes.
  • Remove lemon half; stir in butter.
  • Makes 4 cups.

4 medium cloves garlic
1 medium onion
2 cups ketchup
1 cup sour mash whiskey
3/4 cup honey
1/2 cup yellow mustard
1/2 cup white vinegar
1/3 cup Worcestershire sauce
1/4 cup lemon juice
1/4 cup steak sauce
1/4 cup unsulfured molasses
1 teaspoon hot sauce, such as Tabasco
1 cup packed dark brown sugar
2 tablespoons dark chile powder
1 teaspoon kosher salt
1 teaspoon ground black pepper

Steps:

  • Puree the garlic and onion in a food processor until smooth. Transfer the mixture to a stockpot, add the ketchup, whiskey, honey, mustard, vinegar, Worcestershire, lemon juice, steak sauce, molasses and hot sauce and whisk together over low heat. Add the brown sugar, chile powder, salt and pepper and bring to a boil. Boil for 5 minutes, stirring, then reduce to a simmer and simmer for 40 minutes. Let cool to room temperature.
  • The sauce will keep for about 2 weeks refrigerated.

6 ounces tomato paste ((1 standard can))
1/3 cup apple cider vinegar
1/4 cup pure maple syrup
1/4 cup molasses
2 tablespoons Worcestershire sauce
2 teaspoons smoked paprika
1 teaspoon dry mustard powder
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/8-1/4 teaspoon cayenne pepper ((optional but encouraged))

Steps:

  • In a medium saucepan, stir together all of the ingredients: tomato sauce, tomato paste, apple cider vinegar, maple syrup, molasses, Worcestershire, smoked paprika, dry mustard, garlic, salt, black pepper, and cayenne pepper. Bring to a simmer over medium heat.
  • Cover with a lid slightly ajar so that the pot is mostly covered to deter splattering, but steam can still escape and the sauce can reduce. Let cook, stirring occasionally, until the sauce thickens, about 10 to 15 minutes.
  • Taste and adjust seasonings as desired. Enjoy immediately or let cool and store for later use.

1/4 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon molasses
1-1/2 teaspoons packed brown sugar

1/4 teaspoon chipotle hot pepper sauce
1/8 teaspoon pepper
PORK CHOPS:
1-1/4 teaspoons mustard seed
1-1/4 teaspoons smoked paprika

  • In a small saucepan, mix first nine ingredients; bring to a boil over medium heat. Reduce heat; simmer, uncovered, until slightly thickened, about 10 minutes, stirring occasionally. 1/2 cup honey
1 1/2 teaspoons liquid smoke

1 teaspoon Tabasco sauce or 1 teaspoon hot sauce

Steps:

  • Whisk to combine all ingredients in a sauce pan over high heat.
