Nonstick vegetable oil spray
1 1/4 pounds russet potatoes, peeled, sliced into 1/4-inch rounds
1 tablespoon olive oil
1 cup chopped onion
1 cup chopped red bell pepper
1/2 teaspoon dried thyme
1 cup diced Canadian bacon
8 large eggs
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 ounces smoked cheddar cheese, grated (about 1 cup packed)

Steps:

  • Preheat oven to 350°F. Spray 10-inch glass pie dish with vegetable oil spray. Steam potato rounds until just tender, about 6 minutes. Transfer to rack and cool. Line prepared pie dish with enough potato rounds to cover, overlapping slightly (reserve any remaining potatoes for another use).
  • Heat olive oil in heavy large saucepan over medium-high heat. Add onion, red bell pepper and thyme and sauté 5 minutes. Add Canadian bacon; sauté until heated through, about 1 minute. Spoon bacon mixture over potatoes in pie dish.
  • Whisk eggs, salt and pepper in large bowl to blend. Mix in cheese. Pour egg mixture over bacon mixture in dish. Bake quiche until set in center, about 35 minutes. Cool 20 minutes. Cut into wedges. Serve warm or at room temperature.

1/4 teaspoon kosher salt

8 medium endives (about 1 3/4 pounds), cut on the bias into 1/2"-thick slices, cores thinly sliced
1 head of celery, leaves removed and reserved, stalks very thinly sliced on the bias
1/2 pound aged sharp cheddar, shaved on the slicing blade of a box grater
3/4 cup coarsely chopped salted, smoked almonds, divided
Flaky sea salt
Freshly ground black pepper
1/2 cup (1") chives

Steps:

  • Combine 1 Tbsp. vinegar and 3 cups cold water in a medium bowl. Add apple slices and let soak.
  • Meanwhile, whisk mustard, kosher salt, and remaining 1/4 cup vinegar in a medium bowl, then whisk in oil in a slow, steady stream.
  • Drain and pat apple slices dry. Combine apple slices, endives, celery stalks, cheese, and half of the almonds in a large bowl.
  • Drizzle dressing over salad. Gently toss until salad is evenly dressed, then season with sea salt and pepper. Top with chives, celery leaves, and remaining almonds.

Steps:

  • Heat charcoal or gas grill to medium. Combine ground pork, onion and hot sauce; mix well with hands. Shape into 4 (8-oz.) burgers; season with salt and pepper on both sides.
  • Grill burgers until internal temperature reaches 165 degrees F., turning after 8 minutes. Place 2 slices cheese on top of each burger to melt.
  • Lightly toast brioche buns on grill, being careful not to burn. Place pork burgers on buns; top each with 4 half strips of bacon.

Steps:

  • Bring a large pot of salted water to a boil.

Steps:

  • In a large skillet, heat butter over medium heat. Add onion, red pepper, and garlic. Cook and stir 6 to 8 minutes or until just browned.
  • In a very large bowl, combine onion mixture, bread cubes, sausage, 2 1/2 cups cheese, and parsley. Transfer mixture to a greased 3-quart rectangular baking dish.

3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
2 teaspoons fresh ground black pepper
1/2 cup chilled unsalted butter, cut into small cubes
1 1/2 cups grated cheddar cheese
4 green onions, thinly sliced
10 slices apple-smoked bacon, cooked and chopped into 1 inch pieces (any type of bacon may be substituted~)
3/4-1 1/2 cup buttermilk
1 large egg
2 tablespoons water

Steps:

  • Preheat oven to 400°F.
  • Using a mixer fitted with a paddle attachment, combine flour, baking powder, salt and pepper in a large bowl on low speed.
  • With the mixer running, gradually add the cubes of butter until the mixture is crumbly and studded with flour-butter bits about the size of small peas.
  • Add the grated cheese; mix just until blended.
  • ~~(Or, in a large bowl, stir together flour, baking powder, salt and pepper. Gradually cut butter in with a pastry blender or two knives until the mixture resembles small peas. Stir in cheese).
  • Add the green onions, bacon and 3/4 cup buttermilk to the flour and cheese mixture.
  • Mix by hand just until the ingredients are incorporated.
  • If the dough is too dry to hold together,use the remaining buttermilk,adding one tablespoon at a time, until dough is pliable and can be formed into a ball.
  • Stir as lightly and as little as possible to ensure a light-textured scone.
  • Remove dough from bowl and place on a lightly floured flat surface.
  • Pat the dough into a ball.
  • Using a well-floured rolling pin, flatten the dough into a circle about 8 inches wide and 1/2 inch thick.
  • Cut the dough into 8 to 10 wedges, depending on the size scone you prefer.
  • Whisk the egg and water in a small mixing bowl.
  • Brush each wedge with the egg wash.
  • Place scones on an ungreased baking sheet; bake 18-20 minutes,or until golden brown and no longer sticky in the middle.
  • Serve warm.

2 cups baby spinach
8 slices bacon, cooked and crumbled
2 Granny Smith apples, cored and thinly sliced

Steps:

  • Sprinkle 1 tortilla with some cheese, a small handful of baby spinach, bacon and sliced apples. Press another tortilla on top to make a quesadilla. Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil; spray with cooking spray.
  • In medium bowl, mix cheese sauce and cheese. Stir in stir-fry vegetables and potatoes. Arrange 4 sausage pieces and 1 cup potato mixture on center of each foil sheet. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.

3 yellow tomatoes, seeded and chopped
1/4 medium red onion, finely chopped
1 jalapeno pepper, seeded and chopped
2 tablespoons chopped fresh mint leaves, a handful
1 tablespoon chopped fresh cilantro leaves, a palm full
Coarse salt
2 cups sour cream or reduced fat sour cream
1 lime, juiced and zested
1/4 cup cilantro leaves, 2 handfuls
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 cup frozen corn kernels
Coarse salt and black pepper
1/2 pound smoked white cheddar cheese (preferred brand Cabot Vermont Smoked Cheddar)
1/2 pound jalapeno pepper Jack cheese
4 (12-inch) flour tortillas

Steps:

  • Combine chopped tomatoes, onions, jalapeno, mint and cilantro in a small bowl and season generously with salt. Toss salsa and set aside. Combine sour cream, lime zest and juice and cilantro leaves in food processor and process until smooth and light green. Transfer to a small serving bowl. Sour cream can be used to top soup or quesadilla or both.
  • Heat a large skillet over high heat. Add oil and corn and quickly toss to warm. Season corn with salt and pepper and transfer onto a plate. Shred your cheeses, wipe out your pan and return it to the stove top over medium high heat. Add a flour tortilla to the skillet. Cook 30 seconds, then flip tortilla. Cover half the surface of the tortilla generously with smoked cheddar, pepper Jack and 1/4 corn. Fold tortillas over and press down gently with a spatula. Turn tortilla a few times to melt cheese. Remove quesadilla from the skillet and cut into wedges. Top with salsa and sour cream.

4 boneless chicken breast halves with skin and tenderloin attached
1/4 cup Scotch whisky
2 tablespoons (packed) golden brown sugar
2 tablespoons (1/4 stick) unsalted butter
Green Apple Slaw
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 tablespoon pure maple syrup
1 tablespoon Scotch whisky
1 1/2 teaspoons chopped fresh sage
1 very large Granny Smith apple, halved, cored, cut into matchstick-size strips (about 2 1/2 cups)
1/4 cup paper-thin slices red onion
2 green onions, chopped
Nonstick vegetable oil spray

Steps:

  • For chicken:
  • Stir cheddar cheese, 1 tablespoon maple syrup, cream cheese, and sage in small bowl to blend. Place 1 chicken breast, skin side down, on work surface. Using small sharp knife, cut 1 1/2-inch-deep by 2-inch-long horizontal pocket in chicken. Pack in 1/4 of stuffing. Press tenderloin into pocket opening to seal in stuffing. Repeat with remaining chicken and stuffing. Arrange chicken on small baking sheet. Combine 1/4 cup maple syrup, whisky, brown sugar, and butter in small saucepan. Whisk over medium heat until sauce comes to simmer and is blended. (Chicken and basting sauce can be made 1 day ahead. Cover separately and refrigerate.)
  • For green apple slaw:
  • Whisk first 5 ingredients in medium bowl to blend. Mix in apple, red onion, and green onions. Season slaw to taste with salt and pepper. Refrigerate at least 1 hour and up to 4 hours, tossing occasionally.
  • Spray grill rack with nonstick spray and prepare barbecue (medium-high heat). Rewarm basting sauce; transfer half to bowl and reserve. Set pan with remaining sauce at edge of grill to keep warm. Grill chicken, skin side down, until golden, about 3 minutes. Turn chicken over, repositioning over medium to medium-low heat. Grill until cooked through, turning occasionally and basting with sauce in pan during last 5 minutes, about 8 minutes. Transfer chicken to platter. Serve with apple slaw, passing reserved sauce separately.

Oktoberfest Beer and Smoked Cheddar Soup with Fullblood Wagyu Beef Bratwurst image

16 ounces Beer and Chicken Stock Mixture:Lager-Style Beer
1 quart Chicken Stock
8 ounces Soup: Double 8 Cattle Company Fullblood Wagyu Beef Bacon (small diced)
2 tablespoons Grapeseed Oil
2 ounces 2 OZ Butter
1 Yellow Onion (small diced)
2 STALK Celery (small diced)
4 Garlic Cloves (minced)
2 teaspoons Kosher Salt
3 SPRIG Thyme
1/2 cup All Purpose Flour
2 cups Heavy Cream
2 teaspoons Grain Mustard
8 ounces Smoked Cheddar Cheese (grated, chef used Tillamook cheese)
1 Baguette: Baguette (cut into thin slices)
1 Olive Oil (for brushing on baguette)

Steps:

  • PREPARING THE BEER AND CHICKEN STOCK MIXTURE: In a medium-size saucepan, heat the beer and chicken stock. Allow it to come to a simmer on medium-high heat. Once the liquid is to a simmer, add in the Fullblood Wagyu beef bratwurst.Cook for 10 minutes. Once cooked, remove the bratwurst from the saucepan. Reserve the bratwurst. In addition, reserve the beer and chicken stock mixture for soup
  • PREPARING THE SOUP: In a large saucepot, heat the grapeseed oil over medium heat. Then, add the Fullblood Wagyu beef bacon. Cook the bacon for 6-8 minutes until the fat is rendered and the bacon is crisp. Add the diced celery and onion to the saucepot. Cook until onion is translucent and the celery is soft. Add in the butter, and allow it to melt. Sprinkle in the flour, and cook for 5 minutes while stirring constantly. Once the flour in toasted, slowly start mixing in the beer and chicken stock mixture (that you previously prepared). Add one cup at a time while stirring constantly with a wooden spoon. Cook until it thickens slightly, and then add another cup of the beer and chicken stock mixture.Once you have added all of the beer and chicken stock mixture, reduce the heat to medium-low. Add in the kosher salt, minced garlic, and thyme sprigs. Let the soup cook on medium-low heat for 25 minutes while stirring occasionally.
  • PREPARING THE BAGUETTE: Preheat the oven to 375°F.Cut the baguette into slices, and place them on a cookie sheet. Brush the slices of baguette with olive oil. Sprinkle kosher salt and freshly ground black pepper on the baguette slices. Bake the sliced bread for 10-12 minutes or until it is toasted
  • PREPARING THE FULLBLOOD WAGYU BEEF BRATWURST: Heat a cast iron skillet on medium-high heat. Add in 2 tablespoons grapeseed oil to coat the bottom of the pan. 10 cups cubed French or ciabatta bread (about 12 oz)
2 tablespoons butter
1 package (8 oz) sliced fresh mushrooms (about 3 cups)
9 eggs
2 cups (1 pint) half-and-half
1/2 teaspoon crushed red pepper flakes
2 cups shredded smoked Cheddar cheese (8 oz)
1 lb thick-sliced bacon, cooked, drained and coarsely chopped
1 green bell pepper, coarsely chopped
1/4 cup chopped fresh Italian (flat-leaf) parsley

Steps:

  • Heat oven to 300°F. On large cookie sheet, spread bread cubes. Bake 20 to 30 minutes or until dry.
  • Line sides of 4- to 5-quart slow cooker with foil that has been folded into thirds; spray with cooking spray. (See tip.)
  • In 10-inch skillet, melt butter. Add mushrooms; cook 5 minutes, stirring occasionally, just until tender.
  • In large bowl, beat eggs, half-and-half and pepper flakes with whisk. Reserve 3/4 cup cheese; set aside. Stir in remaining cheese, the bacon, bell pepper and 2 tablespoons of the parsley. Fold in bread cubes; stir to coat. Spoon mixture into slow cooker.
  • Cover; cook on Low heat setting 4 to 5 hours or on High heat setting 2 to 3 hours or until temperature reaches 160°F in center and egg mixture is set.
  • Sprinkle reserved cheese and remaining 2 tablespoons parsley over top. Cover; cook about 10 minutes longer or until cheese is melted. Remove foil before serving by loosening edges with table knife.

2 ounces applewood smoked bacon, cooked
1 ounce butter

Steps:

  • Take 2 small casserole dishes and place scallops and butter in them, divide equally. Place in 450 degree oven for 8-10 min or until scallops have slightly blistered. 1 pinch salt

1/2 cup smoked chicken, shredded (used some we smoked after brining 24 hrs in Basic All Purpose Brine for Meats, Chicken, and Turkey)
1/2 cup sharp cheddar cheese, grated
1/4 cup pecans, toasted (optional)

  • Mix Bisquick, buttermilk, egg yolks, salt and sugar with beaters until well mixed.
  • In a separate bowl, beat egg whites with clean beaters until stiff.
  • Fold egg whites into batter.
  • Pour about 1/3 cup batter onto a preheated belgian waffle iron and top with 2 T smoked chicken and 2 T cheddar (add pecans if using) and bake.
  • You can hold the baked waffles in a 200* oven while finishing the remainder of the waffles.

1/4 tsp crushed red pepper
1 tsp salt
one medium green bell pepper, sliced into strips
one medium red bell pepper, slilced into strips

2 cups tomatoes, coarsely chopped
2 pkgs schwab's jalapeno cheddar smoked sausage, sliced, or your choice
one 17.6 oz. pkg, tri-color bowtie pasta
6 slices bacon, fried and crumbled
parmesan cheese (optional)

Steps:

  • 1. In a skillet, warm oil, garlic, red pepper and salt. Add peppers, onions, tomatoes, and saute. Add jalapeno cheddar smoked sausage. Cook until meat is hot. Meanwhile, prepare pasta according to directions on package. Add vegetable and sausage mixture to pasta and toss. Serve topped with bacon and parmesan cheese.

3/4 cup buckwheat flour (available at health food stores )
1 teaspoon baking powder
1 teaspoon mustard powder
2/3 cup skim milk
1 1/2 tablespoons snipped chives, plus more for garnish
2 ounces sharp cheddar cheese, shredded (1/2 cup)
salt & freshly ground black pepper
2 large egg whites
4 ounces sliced smoked salmon, cut into thin strips
1/4 cup nonfat sour cream

Steps:

  • In a medium bowl, whisk the buckwheat flour, baking powder and dry mustard. Whisk in the milk until smooth. Add the 1 1/2 tablespoons of chives and the cheddar and season the batter with salt and pepper.
  • In another bowl, beat the egg whites with a pinch of salt until firm peaks form. Whisk one-fourth of the whites into the batter. Fold in the remaining whites.
  • Heat a griddle over moderate heat until very hot and spray with vegetable oil spray. Spoon 1-tablespoon mounds of batter onto the griddle and cook until bubbles form around the edges of the blini, about 2 minutes. Flip and cook the blini for about 30 seconds longer.
  • Transfer the blini to a platter and top with the smoked salmon and a dollop of sour cream. Garnish the blini with chives and serve right away.
