Our family loves this refreshing fruit-filled salad, but it's pretty enough to serve company, too. The salad combines pineapple, bananas, grapes and peaches along with lemonade and orange juice concentrates. It is so good, you'll want seconds. -Brenda Beachy Belvidere, Tennessee

3 medium firm bananas, sliced
1/2 cup thawed lemonade concentrate
6 medium ripe peaches, peeled and cubed
3 cups water
1 can (20 ounces) crushed pineapple, undrained
2 cups sugar
1-1/3 cups seedless red grapes, halved
1 cup thawed orange juice concentrate

Steps:

  • In a large bowl, stir the bananas and lemonade concentrate until coated. Stir in the remaining ingredients. Cover and freeze for 8 hours or until firm. , Remove from the freezer 1 to 1-1/4 hours before serving so mixture becomes slushy.

RASPBERRY & RED WINE SLUSH WITH PEACH SALAD

This is the perfect light summery pudding, full of intense flavours and low in fat

Number Of Ingredients 5

225g punnet raspberries
400ml light red wine , such as a Beaujolais or Gamay
140g caster sugar
2 ripe peaches , halved, stoned and cut into wedges
handful mint leaves

Steps:

  • Tip the raspberries, wine and sugar into a blender and blitz until smooth (this can also be done in a large jug with a hand blender). Push the liquid through a sieve to get rid of some of the pips, then churn in an ice-cream machine until the texture of soft sorbet.
  • Transfer to a freezable container and freeze for at least 4 hrs. If you don't have an ice-cream machine, freeze the liquid until it starts to become icy, then mash the ice crystals with a fork until slushy. Repeat 3 or 4 times until you have the texture of sorbet.
  • To serve, toss the peaches with the mint and serve alongside bowls of the scooped slush.

This recipe was given to me by a very dear friend. It is absolutely perfect for a hot summer day, but great anytime of the year.

Number Of Ingredients 8

3 cup(s) sugar
3 cup(s) water
1 can(s) (large) frozen orange juice
1 can(s) water (from oj can)
5-6 - bananas, sliced
1 jar(s) maraschino cherries
2 can(s) drained mandarin oranges
1 large can of crushed pineapple

Steps:

  • Broing 3 c. water and 3 c. sugar to a boil. Let boil for 2-3 minutes, and let cool.
  • Add large can frozen oj and 1 can of water. Cup up 5-6 bananas and add cherries, oranges and pineapple.
  • Mix all ingredients thoroughly and freeze overnight. Thaw about 1 hour before serving.
