Creamy Tuscan garlic chicken in the slow cooker makes an easy low carb dinner the family will love. Just 15 minutes prep for this Crock Pot Tuscan chicken recipe!

1 tbsp Olive oil
6 cloves Garlic ((minced))
1 cup Heavy cream
1/3 cup Chicken broth, reduced sodium
3/4 cup Grated Parmesan cheese
4 large Chicken breast ((6 oz each))
1 tbsp Italian seasoning
Sea salt
Black pepper
1/2 cup Sun-dried tomatoes ((chopped))
2 cup Spinach ((chopped, packed))

Steps:

  • Heat oil in a medium saucepan over medium heat. Add garlic and saute for about a minute, until fragrant.
  • Add the cream and chicken broth. Bring to a gentle simmer, then set heat to low and simmer for about 10 minutes. The sauce will still be thin, but thicken enough to coat the back of a spoon.
  • Meanwhile, place the chicken at the bottom of a slow cooker. Season lightly with Italian seasoning, sea salt, and black pepper. Top with sun-dried tomatoes.
  • When the sauce is ready, keep it at low heat, but not simmering. Whisk in the Parmesan cheese, 1/4 cup at a time, until smooth. Adjust salt to taste if desired.
  • Pour the sauce evenly over the chicken in the slow cooker. Try to get as much sauce as possible on top of the chicken and less on the bottom.
  • Cook for 3-4 hours on High or 6-8 hours on Low.
  • Remove the chicken from the slow cooker and set aside. The sauce in the slow cooker will be thin due to liquid released by the chicken, but the top of the chicken will have a layer of sauce that sticks to it.
  • Turn the slow cooker on High, if it isn't already. Add the chopped spinach and stir for a few minutes, until the spinach wilts.
  • Return the chicken to the slow cooker, and spoon the liquid, spinach and sun-dried tomatoes on top, or just pour them over the chicken to serve.

1 cup quartered marinated artichoke hearts
¾ cup chopped sun-dried tomatoes (preferably in oil)
½ cup chicken stock
3 cups baby spinach leaves
1 cup heavy cream
½ cup grated parmesan cheese
½ teaspoon EACH: salt and pepper

Steps:

  • Add the chicken breasts to your Crock-Pot and sprinkle the salt and pepper over the top. Add the garlic, artichoke hearts, sun-dried tomatoes, and chicken stock and stir the pot.

When it's too hot to cook, throw this dinner in the slow cooker and wait for compliments. This rustic dish uses boneless, skinless chicken thighs, lots of seasonings, and pitted Castelvetrano olives. We really enjoy their brighter taste and color in this dish. The red pepper flakes just add a bit of zing to the sun dried tomatoes and good-for-you spinach in the sauce. Be sure to serve this with a crusty bread, so you can soak up all the tasty, creamy goodness!

2.2 pounds boneless, skinless chicken thighs
2 teaspoons dried Italian herb seasoning
1 teaspoon crushed red pepper flakes
1 teaspoon salt, or to taste
1 teaspoon freshly ground black pepper
1 cup chopped sun-dried tomatoes
½ cup pitted and halved Castelvetrano olives
¼ cup olive oil
1 cup sliced onion
8 cloves garlic, minced
1 ½ cups heavy cream
2 cups torn fresh spinach
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Spray the interior of the slow cooker with cooking spray, or use a plastic liner.
  • Place chicken thighs in the bottom of the slow cooker and sprinkle with Italian seasoning, red pepper flakes, salt, and black pepper.
  • Evenly layer sun-dried tomatoes and sliced olives over the seasoned chicken.
  • Heat olive oil in a saucepan over medium heat. Add onion to the hot oil and cook until onions begin to get tender, 3 to 4 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Using a slotted spoon, transfer onions to the slow cooker and spread evenly over the sun-dried tomatoes.
  • Return the skillet to medium heat and add cream, stirring until all the olive oil is incorporated and the sauce begins to bubble. Pour cream sauce evenly over the onions.
  • Cover slow cooker and cook on High for 3 to 4 hours or Low for 6 to 7 hours if you prefer a longer cook time.
  • Remove cooked chicken and vegetables to a serving platter. Add torn spinach to the sauce and cook until wilted, 3 to 5 minutes. Remove spinach from sauce with a slotted spoon and place on top of the chicken and vegetables.
  • The sauce will be a bit thin. If you like a thicker sauce, pour into a small saucepan over medium heat. Combine 2 tablespoons cornstarch and 2 tablespoons water in a small bowl. Stir until all the lumps are gone, to create a slurry. Add slurry to the sauce and cook over medium-high heat, stirring constantly, until bubbly and thickened, 5 to 7 minutes.
  • Spoon sauce and spinach over the dish and serve warm.

This recipe uses chicken thighs, bone-in, but skinless. You can slow cook the chicken up to one day ahead and refrigerated. To grill the sandwich, a panini press, sandwich grill or a stovetop grill pan with a heavy skillet on top can be used.

1 1/2 teaspoons Italian herb seasoning
1 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
6 skinless chicken thighs, trimmed of visible fat (2 1/2 pounds)
1 tablespoon extra virgin olive oil
1/2 cup dry white wine
4 garlic cloves, flattened with side of knife
4 pieces focaccia bread, halved horizontally (4 4-inch squares , about 1-inch thick, or 8 thick slices white bread)
1 (15 ounce) jar roasted peppers, preferably red and yellow, drained
4 ounces provolone cheese, sliced
olive oil flavored cooking spray

Steps:

  • For slow-cooked chicken, mix Italian seasoning, paprika, salt and pepper in a small cup.
  • Brush chicken with olive oil; rub seasoning mixture all over chicken.
  • Put wine and garlic in a 4 1/2 to 6 quart slow cooker; add chicken thighs in a single layer, bone side down.
  • Cover; cook on low-heat setting for 4 hours, or until fork tender.
  • Remove from cooker; let stand until cool enough to handle (chicken can be cooked up to 1 day ahead and refrigerated).
  • Remove bones; tear chicken into large pieces.
  • For the panini: Assemble sandwiches on focaccia with chicken, roasted peppers and provolone.
  • Spray sandwiches with olive oil cooking spray.
  • Grill sandwiches in a panini press or sandwich grill, or on a stovetop grill pan with a heavy skillet on top.

1 tablespoon basil pesto
1 tablespoon mayonnaise
2 slices bread
2 slices cooked oven roasted chicken
2 slices prosciutto
2 slices mozzarella cheese
2 slices roasted red pepper
1 teaspoon butter

Steps:

  • Spread pesto and mayonnaise on one slice of bread. Layer meats, cheese, and peppers to make a sandwich. Top with second slice of bread.
  • Spread top bread slice with half of butter.
  • Heat a grill pan over medium heat and spray with cooking spray. When pan is hot, place sandwich butter-side down. Top with a brick covered in foil or another pan and press down. Cook for 2 to 3 minutes until golden brown. Butter top bread slice with remaining butter before turning over panini.
  • Grill and press for another minute or two until panini is toasted and cheese is melted.

2 boneless skinless chicken breast halves (4 ounces each)
1 cup reduced-sodium chicken broth
1 cup stewed tomatoes, cut up
1/2 cup tomato sauce
1 small green pepper, chopped
1 tablespoon chopped green onion
1 garlic clove, minced
1-1/2 teaspoons chili powder
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
2 tablespoons all-purpose flour
1/4 cup cold water
Hot cooked pasta

Steps:
