SLOW-COOKER POSOLE
Traditional Mexican Posole is served with shredded cabbage, lime wedges, avocado, onion, cilantro, and, of course, warm tortillas. Many Mexican markets have posole meat already chopped up for you. You can add another can of hominy if your slow-cooker is large. I prefer hot enchilada sauce with salsa, but the regular kind will do.

Steps:
- Heat the canola oil in a skillet over high heat. Add the pork; cook and stir just until meat is browned on all sides, about 5 minutes.
- Place the meat in a 4 quart slow cooker. Pour the enchilada sauce over the meat. Top with the hominy, onion, chilies, garlic, cayenne pepper, and oregano. Pour in enough water to fill the slow cooker.
- Cover, and cook on High for 6 to 7 hours. Stir in the cilantro and salt. Cook on Low for 30 minutes more.

- Place the chipotle chile and water into a blender, and puree until smooth. Pour into a slow cooker, and add the pork, chicken, hominy, green chilies, onion, garlic, and chicken broth. Season with oregano, cumin, pepper, and the bay leaf.
- Cover, and cook on Low 6 to 7 hours until the meats are tender. Remove the bay leaf before serving.

SLOW COOKER TURKEY POSOLE
This is my version of a posole dish we used to serve at a Mexican restaurant I worked at. It is requested on a fairly regular basis here at the homestead and never disappoints!

Steps:
- Melt butter in a large skillet over medium heat. Saute turkey, onions, and garlic in the butter until turkey is no longer pink, 8 to 10 minutes.
- While turkey is cooking, combine chile peppers, cumin, oregano, salt, and cayenne in a slow cooker set to Low. Stir in hominy and 1 can black-eyed peas. Mash the other can of black-eyed peas with a fork and stir into the slow cooker along with the chicken broth. Stir in sauteed turkey and onions.
- Cook on Low until flavors combine, about 4 hours. Add cilantro just before serving.

- Spray 5- to 6-quart slow cooker with cooking spray. Sprinkle pork with 1 teaspoon of the cumin, the salt and pepper. In 12-inch skillet, heat oil over medium-high heat. Add half of the pork; cook about 6 minutes, stirring occasionally, until browned on all sides. Remove pork with slotted spoon; place in slow cooker. Repeat with remaining pork. Add broth to skillet; cook 1 minute, scraping to loosen brown particles. Pour into slow cooker.
- Place tomatillos in food processor. Cover; process until smooth. Add to slow cooker. Stir in onions, garlic, green chiles, sugar and remaining 1 teaspoon cumin. Cover; cook on Low heat setting 6 hours. Stir hominy into slow cooker. Cover; cook 1 hour longer. Garnish individual servings with sour cream, cilantro, jalapeños and radishes.

- Drain hominy, combine hominy, rotel tomatoes, enchilada sauce, diced carrots, diced onion to a 4 quart slow cooker
- Mince garlic, add to cooker, add cumin.
- Remove skin from chicken thighs.
- add to slow cooker.
- Cover and cook 3-4 hours until chicken is cooked through and vegetables are tender; skim and discard any fat from the surface.
- Remove chicken; pull meat off bones and chop into smaller pieces if needed.
- Stir back into the slow cooker.
- Add chopped cilantro.
- Ladle into soup bowl.
- Serve with lime wedges, thinly sliced radishes in soup, red pepper flakes and a dollop of sour cream, if desired.
PUEBLO DRY RED POSOLE STEW (SLOW COOKER/CROCK POT FRIENDLY)
Posole (hominy) probably originated as an Indian dish, and is very popular in Mexico and parts of the southwest. This one-dish meal is good for lunch, dinner or pot lucks. Posole can be dry and plated or served as a thick stew in a bowl. It is either white (often as a stew with green chilies -- see my recipe for Pueblo White Posole), or red (best made with fresh, powdered mild to hot New Mexican red chili powder). Fresh or frozen posole is best, if you can find it, but drained, canned hominy is very good, too. Serve with salad and warmed flour or corn tortillas.

- If using fresh or frozen hominy, boil until it pops, then reduce heat and cook until done. Reserve the water it boils inches (If using canned white or yellow hominy, reserve the juice).
- In a large frying pan, heat the oil over a medium flame.
- Add onion and cook until translucent.
- Make a 'well' in the center of the onion mixture and add the chili powder.
- Stir to dissolve the chili and mix thoroughly with the onions.
- Add the pork slices.
- Add the garlic and cumin.
- At last, add the cooked posole and 3- 4 cups liquid.
- Mix, and simmer slowly uncovered until liquid is reduced.

- Melt butter over medium heat and add onion, garlic, jalapeno, and spices. Saute until veggies are soft.
- Add vegetables in a slow cooker with pork, green chilies, salsa and hominy. Add reserved juices from the carnitas and stock to cover. Cover slow cooker and set on Low for 7 hours or High for 3 1/2 hours. Add tabasco to your taste and serve with desired garnishes.
- If you prefer to do this stovetop, saute veggies as directed and combine everything in a large heavy pot. Bring the soup to a boil, lower heat to a simmer and cover. Simmer for 2 hours until flavors are well combined.

Steps:
- Put 1 cup of vegetable broth and all ingredients except for the hominy and the zucchini into a blender and blend until smooth. Taste for seasoning and spiciness - it should be a bit spicier than you want. Add additional poblanos or jalapenos, if necessary.
- Add to the slow cooker with the remaining broth and the hominy.
- Cook on low for 4 hours.
- Add the zucchini and cook for 30 minutes longer.
- Serve in bowls with your favorite garnishes.
