Sweet and Savory Slow Cooker Pork Chops with Sauerkraut image

Taking a standard pork chop and sauerkraut recipe, I wing it a little by raiding the pantry and adding some on-hand ingredients, which yields a yummy pork chop dinner with a little extra kick.

1 (27 ounce) can sauerkraut with juice
½ cup ketchup
½ cup soy sauce
¼ cup brown sugar
1 tablespoon Worcestershire sauce
4 pork chops

Steps:

  • Mix sauerkraut and juice, ketchup, soy sauce, brown sugar, and Worcestershire sauce together in a slow cooker to form a sauce. Add pork chops; stir to cover chops with the sauerkraut sauce.
  • Cook on Low until pork is no longer pink in the center, about 4 hours. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

This pork and sauerkraut recipe is super easy. My husband went crazy over this. He ended up having 2 man-sized servings! Serve with crusty bread (French or Italian will do) and horseradish or spicy brown mustard.

2 pounds boneless pork chops
2 large potatoes, cut into big chunks
1 (14 ounce) can sauerkraut, drained
1 cup dried cranberries
½ cup shredded carrot
1 (12 fluid ounce) can or bottle root beer
2 tablespoons prepared horseradish

Steps:

  • Place pork chops, potatoes, sauerkraut, cranberries, carrot, root beer, and horseradish in a slow cooker, in that order. Cook on Low until pork chops are very tender, 6 to 8 hours.

1 tablespoon canola oil
6 pork chops (thick cut)
1 tablespoon flour
1 teaspoon salt
1/2 teaspoon pepper
1 pinch cayenne pepper
1 teaspoon dry mustard
2 cups sauerkraut (drained and rinsed under cold water)
1 granny smith apple, peeled, cored, and grated
1/2 cup condensed chicken broth

Steps:

  • In a skillet, heat oil over med-high heat and add pork chops in batches to brown on both sides, then add to slow cooker.
  • Sprinkle with flour, salt, pepper, cayenne, and dry mustard.
  • In a bowl, combine sauerkraut and grated apple, then spread over he top of the pork and add chicken stock.
  • Cover and cook on low for about 5 hours or high for about 2 1/2 hours.

DRESSING:
4 pork chops
1 (32-ounce) container sauerkraut, drained
2 tablespoons brown sugar
1 tablespoon caraway seeds
1/2 cup chicken stock, divided
1/2 teaspoon salt
2 dollops butter

Steps:

  • In a bowl, combine everything but pork chops and a 1/4 cup of chicken stock to make the dressing. Layer in a crock pot starting with a layer of dressing, then chops, then dressing, chops, and finish with dressing. Add chicken stock on top with a couple of dollops of butter. Cook on low for 4 to 6 hours. Gently stir the mixture in the last hour of cooking just to make sure the flavors have melded.
