1 tbsp vegetable or rapeseed oil
4 pork shoulder steaks (about 750g), cut into large chunks
1 onion, chopped
1 leek, chopped
1 carrot, chopped
bundle of woody herbs (bouquet garni) - we used 2 bay leaves, 3 sage leaves and 4 thyme sprigs, plus a few thyme leaves to serve
1 chicken stock cube
2 tsp Dijon mustard
1 tbsp cider vinegar
2 tsp cornflour
1 tbsp honey

Steps:

  • Heat your slow cooker. Drizzle the oil in a wide frying pan over a high heat. Season the pork, then add to the hot pan. Avoid overcrowding the meat - you may want to do this in batches. Cook until deep brown all over, then transfer to the slow cooker. Add the onion and leeks to the frying pan and cook for a few mins, until they soften. Add a splash of water and scrape any tasty bits from the bottom, then tip everything into the slow cooker. Add the carrot, herbs, stock cube, mustard and vinegar, season, then add enough water to just cover the ingredients. Stir, then set your slow cooker on low for 6-8 hrs, or high for 5-6 hrs.
  • In a saucepan, mix the cornflour and honey with 1-2 tsp of liquid from the slow cooker, until you have a smooth paste. Add 100ml more liquid, bring to a simmer until thickened, then stir back into the casserole. Serve with mash or dumplings, scattered with thyme leaves.

I'm finding a lot of really great recipes in my mother's nice little 80 page pocket sized Crock-Pot Cook Book -- which appears to have come with the appliance she bought in the 70's. Not like the dozen recipes you get now-a-days. This one sounds really good... I have not tried it, but I think I may in the not distant future....

6 to 8 pork chops
to taste salt and pepper
2 medium sweet potatoes, peeled and sliced, (can use white potatoes if prefer)
1 large onion, sliced
1 large green bell pepper, sliced
1/2 tsp leaf oregano
1/4 tsp whole thyme
1 1 lb-can of tomatoes

Steps:

  • 1. Trim visible fat from the pork chops, season with salt and pepper and brown in skillet to remove excess fat. Drain and place in slow cooker.
  • 2. NOTE: From reading the guidelines in the slow cooker cook book, you do not have to brown the meat before adding to the pot -- a time saver -- but you will need to remove the excess grease from the pot, later, after it is cooked.
  • 3. Add remaining ingredients in order listed.
  • 4. Cover and cook on low 8 to 10 hours (High: 3 to 4 hours) Adjust seasonings to taste before serving.
  • 5. Alternatives: You can also cut the pork into 1.5-inch pieces and cube the sweet potatoes if you like
  • 6. Flavor Alternatives: You may substitute below for above spices: 1/2 Cup unsweetened orange juice 2 shallots, green ends chopped 1 tsp cumin seed 1 1/2 Tbsp fresh lime juice 2 tbsp fresh coriander, chopped

This recipe has been designed to be cooked in a slow cooker, although instructions are also given for cooking in the oven or stove top.

1/2 cup plain flour
1 1/2 kg pork shoulder, diced
1 tablespoon olive oil
1 large brown onion, cut into thin wedges
2 garlic cloves, crushed
1 cup port wine or 1 cup prune juice
1/2 cup water
375 g pitted prunes
2 tablespoons thyme leaves

Steps:

  • Place flour in a shallow dish. Season with salt and pepper. Lightly coat pork in flour.
  • Heat oil in a large, deep frying pan over medium-high heat. Add pork, in small batches, and cook for 3 to 4 minutes or until browned. Transfer to a plate, cover and set aside.
  • Add onion and garlic to pan. Cook, stirring occasionally, for 3 minutes or until soft. Spoon into slow cooker. Add port, water, prunes, thyme and pork. Stir to combine. Cover and cook for 3 to 4 hours or until meat is tender and sauce is thick.
  • Notes & tips.
  • Leg, loin or diced pork are all suitable cuts for this casserole.
  • You can cook this recipe in a casserole dish. Preheat oven to 150°C and cook, tightly covered, for 4 hours. Alternatively, cook for 3 to 4 hours over a medium-low heat in a saucepan. Check regularly to ensure casserole doesn't stick.

2 slices bacon, chopped
1 lb boneless country-style pork ribs, cut into 3/4-inch pieces
1/2 cup finely chopped onion
1 cup shredded carrots
1 can (14.5 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 teaspoon dried thyme leaves
1/2 teaspoon pepper
2 cans (15 to 16 oz each) great northern beans, drained
1/2 lb cooked kielbasa, cut into 1/2-inch pieces

Steps:

  • In 10-inch skillet, cook bacon, pork pieces and onion over medium-high heat 8 to 10 minutes, stirring occasionally, until pork begins to brown.
  • Spray 3 1/2- to 4-quart slow cooker with cooking spray. In cooker, place pork mixture. Stir in remaining ingredients except beans and kielbasa. Layer beans over top.
  • Cover; cook on Low heat setting 6 to 7 hours.
  • Stir in kielbasa. Increase heat setting to High. Cover; cook 30 minutes longer or until thoroughly heated.
